Sheet Cake That Tastes Like Brownies image

This old-fashioned cake sends you straight to chocolate heaven. It's seriously one of the best chocolate cakes we've made. The cake is tender and melts in your mouth. The fudge-like frosting is full of pecans. Adding the frosting while the cake warms means the frosting soaks into the top layer of the cake.

CAKE
2 c all-purpose flour
2 c granulated sugar
1 stick butter
1/2 c Crisco (can substitute with 1 stick of butter)
1 c water
4 Tbsp cocoa, unsweetened
2 beaten eggs
1 tsp baking soda
1/2 c buttermilk
1 tsp vanilla extract
FROSTING
1 stick butter
4 or 3 Tbsp cocoa, unsweetened
6 Tbsp milk
1 tsp vanilla extract
4 c confectioners' sugar
1 c chopped pecans or walnuts

Steps:

  • 1. Preheat an oven to 400°F. Grease a 11x15 sheet cake pan (be sure it has raised edges).
  • 2. In a large bowl, stir together the flour and granulated sugar.
  • 3. In a saucepan, combine the butter, Crisco, water, and cocoa powder. Stir while bringing to a boil.
  • 4. Pour over the flour mixture.
  • 5. Mix together.
  • 6. In another bowl, stir together the eggs, baking soda, buttermilk, and vanilla.
  • 7. Add to the flour/cocoa mixture and mix together.
  • 8. Transfer the batter to the prepared sheet cake pan.
  • 9. Bake for 20-30 minutes.
  • 10. Five minutes before the cake is done, make the frosting: In a saucepan, combine the butter, cocoa powder, and milk.
  • 11. Heat and then add the confectioners' sugar, nuts, and vanilla.
  • 12. Pour the frosting over the cake.
  • 13. Allow to cool.

3 ounces unsweetened chocolate
1/3 cup shortening
1 cup sugar
2 eggs, well beaten
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup flour, sifted
1 teaspoon pure vanilla
1 cup chopped walnuts, optional

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8-by-8-by-2-inch pan.
  • Melt the chocolate and shortening together in a small saucepan. Stir the sugar into the well-beaten eggs in a large bowl. Combine the chocolate and the egg mixtures in the bowl.
  • Add the baking powder and salt to flour and sift. Add the flour mixture to the chocolate mixture; add the vanilla and nuts, if using. Stir to combine.
  • Spread the dough evenly in the pan. Bake 25 to 30 minutes. Cool 30 minutes, cut into squares and enjoy.

I've made these frosted brownies for so many years, I don't need a recipe card to follow. When our three grandchildren visit the farm, they're delighted when I serve these-plain or with ice cream.

1 cup butter, cubed
1/4 cup baking cocoa
1 cup water
2 cups sugar
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
2 large eggs, beaten
1 teaspoon vanilla extract
3 to 4 drops red food coloring, optional
FROSTING:
1/2 cup butter, cubed
1/4 cup baking cocoa
1/4 cup buttermilk
3-3/4 cups confectioners' sugar
1 teaspoon vanilla extract
Dash salt
3/4 cup chopped almonds, optional

Steps:

  • In a saucepan, bring butter, cocoa and water just to a boil. Cool. Meanwhile, in a large bowl, combine the sugar, flour and baking soda and salt. Pour over dry ingredients; mix well. , Add buttermilk, eggs, vanilla, and food coloring if desired. Mix until well combined. Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 20 minutes. , For frosting, melt butter, cocoa and buttermilk in a saucepan. Stir in the sugar, vanilla and salt. Spread over warm cake. Top with nuts if desired.

1/2 cup butter or 1/2 cup margarine
1/4 cup cocoa
2 eggs
1 cup granulated sugar
3/4 cup flour
1/2 cup walnuts (optional)
1 pinch salt

Steps:

  • Preheat oven to 350°F
  • Melt butter in microwave.
  • Add the cocoa and stir.
  • In medium bowl beat eggs until frothy.
  • Add sugar, flour, and salt (also nuts if you are using them).
  • Pour cocoa mixture over egg mixture and stir all together.
  • Put into a greased 8 x 8 pan. Bake for 30 minutes.
  • For a doubled recipe use a 9 x 13 pan.
  • Icing, recipe below.
  • Icing for Best Ever Brownies:
  • 1 1/3 cup icing sugar.
  • 1/3 cup cocoa.
  • 3 tbsp butter or margarine.
  • 1 tbsp & 2 tsp hot water
  • Beat all ingredients together, add more liquid if necessary.
  • Spread over brownies.

1/2 cup butter
1/2 cup butter flavor shortening
1/3 cup cocoa
1 cup water
2 cups sugar
2 cups flour
1/2 cup buttermilk
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1/4 cup cocoa
6 tablespoons buttermilk
2 1/2 cups powdered sugar
1 teaspoon vanilla
3/4 cup chopped nuts (optional)

Steps:

  • CAKE.
  • Preheat oven to 375F; grease and flour a 9x13 pan.
  • In a large microwave-safe bowl, combine butter, shortening, cocoa and water. Heat in microwave to boiling, stirring occasionally.
  • Meanwhile, in mixing bowl, combine sugar and flour.
  • Pour hot mixture over sugar and flour and mix to combine.
  • Add remaining cake ingredients and beat until well blended.
  • Pour into pan and bake for 35-45 minutes or until done (toothpick inserted comes out clean and when shaken, cake seems set).
  • Pour icing on cake immediately after taking it out of oven.
  • ICING.
  • In medium microwave-safe bowl, combine butter, cocoa and buttermilk in bowl and heat in microwave until boiling, stirring to occasionally.
  • Pour hot mixture into mixing bowl and add powdered sugar and vanilla. Beat until smooth.
  • Pour over hot cake right after removing from oven.
  • If using nuts, sprinkle over icing while still soft.
  • NOTE: If you prefer a thinner "brownie height" cake, bake in an 11 x 15 pan at 400°F for 20-25 minutes or until done.
