I'm not puddiing (get it)? todays' bread puddings down, fine and dandy if that's what you like. This is my momma's recipe, no sauces or glazes. No brioche or baguettes. Just plain stale bread she turned into heaven with raisins, apples, sugar and spices. I like the corner pieces, they have some crunch to em', you will too.

2 loaves of stale bread, white or wheat
1 box sunmaid raisins
4 appples peeled, cored and diced
2 can(s) sweetned condensed milk
3 large eggs
1 1/2 tsp cinnamon
1 1/2 tsp nutmeg
1 1/2 tsp vanilla extract
2 stick butter or margarine
1 1/2 sugar, white or brown, if brown packed
2 c sweet milk

Steps:

  • 1. Heat oven to 400 degrees, butter your baking dish, and gather your ingredients. In a large bowl, tear bread into pieces. Add apples and raisins , nutmeg, cinnamon and sugars.
  • 2. Mix together sweetened condensed milk, eggs , sweet milk and vanilla. Pour into bowl and mix well allowing bread to soak up the milk. Pour into buttered dish, and place on center rack in middle of oven for 1 hour or until toothpick inserted in middle comes out clean.
  • 3. Remove and allow to cool before cutting before cutting into squares and storing in a cool place. Taste even better the next day. Simply good.
  • 4. The mixture should not be soupy. If it is add extra bread+ 1 cup of sugar.

6 slices day-old whole wheat bread
½ cup raisins
1 large apple, peeled and chopped
2 tablespoons butter, melted
4 eggs, beaten
2 cups low-fat milk
½ cup white sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Break bread into small pieces into an 8-inch square baking dish. Mix in raisins and apple. Drizzle with melted butter.
  • Combine eggs, milk, sugar, cinnamon, and vanilla extract in a mixing bowl. Beat until well mixed. Pour over bread and lightly push down with a fork until bread is covered and soaking up egg mixture.
  • Bring a kettle of water to a boil. Place bread pudding baking dish into a large roasting pan. Carefully pour boiling water around pan.
  • Bake in preheated oven until a knife inserted into the middle of pudding comes out mostly clean, about 45 minutes.

2 (12-ounce) cans evaporated milk
1 cup water
6 eggs, beaten
8 ounces crushed pineapple
1 large apple, grated
1 cup raisins
1 1/2 cups sugar
5 tablespoons vanilla extract
1/4 pound butter, softened
1 loaf stale po' boy bread or 5 cups cubed stale white bread

Steps:

  • Preheat the oven to 350 degrees F.
  • In a bowl, break bread and moisten with evaporated milk and water. Pour eggs over mixture and mix well. Add pineapple, apple, raisins, sugar, and vanilla and mix well. Cut butter into pieces and add to mixture, mixing all ingredients well, Pour into a greased 9 by 13-inch baking dish. Bake for 30 to 40 minutes or until golden brown and cooked through.

500g white or wholemeal bread
500g/1lb 2oz mixed dried fruit
85g mixed peel
1½ tbsp mixed spice
600ml milk
2 large eggs, beaten
140g light muscovado sugar
zest 1 lemon (optional)
100g butter, melted
2 tbsp demerara sugar

Steps:

  • Tear 500g white or wholemeal bread into a large mixing bowl and add 500g mixed dried fruit, 85g mixed peel and 1 ½ tbsp mixed spice.
  • Pour in 600ml milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread.
  • Add 2 beaten large eggs, 140g light muscovado sugar and zest of 1 lemon, if using. Stir well, then set aside for 15 mins to soak.
  • Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base).
  • Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara.
  • Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

8 large eggs
1 ¼ cups white sugar
1 cup heavy cream
2 tablespoons raisins
½ teaspoon ground cinnamon
¼ teaspoon vanilla extract
1 loaf white bread, torn into large chunks
1 stick butter
½ cup confectioners' sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 10x12-inch baking pan.
  • Combine half-and-half, eggs, sugar, heavy cream, raisins, cinnamon, and vanilla extract in a bowl; mix well.
  • Arrange bread pieces on the bottom of the prepared pan. Pour cream mixture over bread. Allow to soak 10 to 15 minutes.
  • Place the baking pan into a larger pan; fill the larger pan with water halfway up the sides of the smaller pan.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, 60 to 75 minutes.
