These candy bars are creamy and crunchy at the same time. This recipe is in Book III of Kitchen Chatter on page 64.

Number Of Ingredients 7

2/3 c margarine or butter , room temperature
1 c brown sugar, firmly packed
1/2 c corn syrup, light (karo brand is best)
1 Tbsp vanilla
4 c quick-cooking oatmeal
3/4 c chocolate chips, mini
2/3 c creamy or nutty peanut butter

Steps:

  • 1. Heat oven to 350^. Cream margarine and brown sugar. Add syrup, vanilla and oatmeal. Beat until mixture is well blended. Spread in 9x13-inch ungreased baking pan. Bake for 15 minutes- NO LONGER! Let cool.
  • 2. Melt chips and peanut butter together in microwave at 30 seconds intervals, stir until smooth and creamy. Spread over cooled mixture. If desisred sprinkle 1/2 cup chopped peanuts on top. Let set up at least one day before serving. Delicious!!

6 cups Special K cereal
6 ounces semisweet chocolate morsels
6 ounces butterscotch chips
1 cup sugar
1 cup light Karo syrup
1 1/3 cups creamy peanut butter

Steps:

  • Spray glass pan with baking spray.
  • Pour the special k into a large bowl.
  • melt morsels together.
  • In medium saucepan combine sugar and karo. Mix well.
  • Once throughly mixed, remove from heat and add peanut butter. Stir until mixture reaches a butterscotch like consistency
  • Pour mixture over special k, mix well.
  • Empty Special K mixture into greased pan.
  • Pour melted morsels over cereal mixture.
  • chill for two hours then serve.

2 cups crunchy peanut butter
6 cups corn flakes
1 (12 ounce) package chocolate chips

Steps:

  • Mix Sugar and corn syrup together in a large pan on stove and bring to a boil.
  • Remove from heat and add peanut butter.
  • Pour cornflakes into a large bowl.
  • Pour hot mixture over top and mix well.
  • Press into a greased 8x8 pan.
  • Melt chocolate chips in microwave.
  • Spread over cornflake mixture.

These are a Christmas staple in my house. I remember standing on a chair and making these with my mother when I was probably 5 or 6. They're easy, yummy, and keep well for an extended period of time. They also freeze well. Prep time is set up time, Cook time is how long it takes to get the mixture in the pan. (I live at high altitude, this will be slightly shorter at lower altitudes)

1 cup white corn syrup
1 cup white sugar
1 1/3 cups creamy peanut butter
6 cups Rice Krispies
1 (6 ounce) package chocolate chips
1 (6 ounce) package caramel-flavored bits

Steps:

  • Bring syrup and sugar to just shy of a rolling boil.
  • Remove from heat and add peanut butter.
  • Stir until well blended.
  • Pour over rice crispies and mix well.
  • Pat into a 9x13 inch pan.
  • Frost with melted chocolate and caramel chips that have been mixed together.
  • Cool and cut.
  • Tips: Put the rice crispies in a large pan (a canner?) that you have greased before adding the peanut butter mixture.
  • Also put some butter on your fingers before patting the mixture into the cake pan.

4 cups quick-cooking oatmeal
1 cup butter
1 cup brown sugar, firmly packed
1/2 cup granulated sugar
1 cup chocolate chips
1 cup peanut butter

Steps:

  • Mix oatmeal, butter and sugars together and pat into a 10 X 15 (or you can use two 9 X 12 pans if necessary) jelly-roll pan.
  • Bake@ 350° for 12 minutes.
  • Melt chocolate chips and peanut butter together, using the microwave or stovetop.
  • Frost hot bars.
  • Cut into bars before completely cooled.

I found this recipe from a friend when I was in college. She said her aunt gave it to her for her hope chest recipe book. I don't think people do "hope chests" anymore, but this recipe won't ever become obsolete because it is yummy! Make sure you don't over bake the crust! I have done it a few times and had to start again because it got too hard and crispy. My sisters have all asked for this recipe. They make it for baby showers and parties.

4 cups quick oats
2/3 cup butter, almost melted (I use margarine and it works just as well)
1/2 cup light corn syrup
1 cup brown sugar, packed
6 ounces milk chocolate chips
1/4 cup creamy peanut butter

Steps:

  • Press dough into greased 9x13 pan. Bake at 350 for 15 minutes. DO NOT OVER BAKE. Remove from oven and cool slightly. Then, melt the chocolate chips and stir in the peanut butter. Spread this on dough after it is slightly cooled. Cut into squares when completely cooled.

There are a few other recipes for this bar on this site, but none are quite like this. My mom came to visit with this recipe that she had clipped from the Washington Post. Really really wonderful. I found them addicting, actually. So much so that I had to send the rest to my husband's work! We used peanut butter made from honey roasted peanuts, though regular works fine too. Cooking time is cooling time.

1 cup sugar
1 cup light corn syrup
1 (18 ounce) jar creamy peanut butter
5 cups Special K cereal
1 (11 ounce) package butterscotch chips
1 (12 ounce) package semi-sweet chocolate chips

Steps:

  • Spray a 9 by 13 inch pan with cooking spray.
  • In a large pan over medium high heat mix the sugar and syrup. Bring to a boil then remove from the heat.
  • Add the peanut butter and stir to combine. Add the cereal and stir well.
  • Pat the mixture into the pan and let it sit until cool to room temperature.
  • Melt the two types of chips together. Cool a bit and then spread over the top of the cereal mix.
  • Cool in the fridge until set. Then set out at room temperature so they are easier to cut. Store in an airtight container.
