LOW FAT OATMEAL PUMPKIN SPICE MUFFINS



Low Fat Oatmeal Pumpkin Spice Muffins image

This is a recipe I adapted from an old favorite, applesauce muffins. They are high in fibre and low in fat.

Number Of Ingredients 12

1 1/4 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup oats
1 1/4 cups pumpkin puree
1/4 cup oil
2 eggs, beaten
1/2 cup milk

Steps:

  • Preheat oven to 350.
  • Oil or spray muffin tins with cooking spray.
  • Sift together the dry ingredients.
  • Add the rest of the ingredients and stir until just moistened.
  • Divide into 12 muffins and bake for 15-20 minutes until cooked in centre.
  • Remove from pan after 5-10 minutes and let cool.
  • place in a airtight container and try not to eat for 24 hours as they will become more moist.

1 cup rolled oats (not instant)
1 cup buttermilk
1 egg
1/2 cup brown sugar, packed
1/2 cup butter, melted and cooled
1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Steps:

  • In a large bowl, combine the oats and the buttermilk and let stand for one hour.
  • Preheat your oven to 400 F and line a muffin tin with 10 paper muffin cups.
  • Stir the egg and sugar into the oat mixture, followed by the butter.
  • Pile all the remaining ingredients together atop the mixture, then stir them into the batter just until combined.
  • Divide the batter evenly among the prepared muffin cups, then bake in the middle of your preheated oven for about 25 minutes or until the muffins are firm and golden brown.

1 cup raisins (optional) or 1 cup chocolate chips (optional)

Steps:

  • In a large bowl, combine the oats, and the buttermilk and let stand for one hour (30 minutes will do if you are in a rush).
  • Preheat your oven to 400 degrees F, and line a muffin tin with 10 paper muffin cups.
  • Stir the egg and sugar into the oat mixture, followed by the butter.
  • Pile all the remaining dry ingredients together atop the mixture, then stir them into the batter until just combined.
  • Carefully fold in any add-ins without overmixing, which causes the muffins to be tough.
  • Divide the batter evenly among the the prepared muffin cups, then bake in the middle of your preheated oven for about 25 minutres, or until the muffins are firm and golden brown.
  • Let cool in the pan a few minutes, then transfer to a rack to cool further.

MULTIGRAIN-OATMEAL-CRAISON SPICE MUFFINS

I was craving an oatmeal muffin with a bit more "kick." I added spices that are typically found in spice cake recipes. I am always trying to find ways to sneak in more nutrition so I also make them with multigrain flour. These muffins are moist and delicious. I adapted this recipe from fellow member Kree. Thank you for all of you that nominated this recipe for PAC. It is an honour. I have increased the spices since I originally posted this recipe. I hope you enjoy!!

3 cups oatmeal
1 1/4 cups white flour
1 1/4 cups multigrain flour
2 teaspoons cinnamon
2 teaspoons allspice
1 teaspoon clove
2 teaspoons baking powder
1 1/2 teaspoons baking soda
2 cups unsweetened applesauce
1 cup milk
1 cup brown sugar
1/2 cup oil
2 tablespoons oil
1 cup craisins
2 eggs

Steps:

  • Preheat oven to 400 degrees.
  • Combine oatmeal, flour, spices, baking powder and baking soda.
  • Add applesauce, milk, brown sugar, oil and egg; mix until moistened.
  • Add Craisons.
  • Put in muffin papers.

1/2 cup(s) oatmeal

1 teaspoon(s) sea salt
1 tablespoon(s) cinnamon
1/2 teaspoon(s) freshly grated nutmeg

1/2 cup(s) sultana (yellow raisins)
WET INGREDIENTS
2 tablespoon(s) vanilla
1 teaspoon(s) molasses
1 tablespoon(s) lemon juice, fresh
1 - egg
1 cup(s) whole milk
MISCELLANEOUS
- sugar for sprinkling

Steps:

  • Preheat oven to 375F.
  • Add all dry ingredients to a mixing bowl and mix well with a fork.
  • Add all wet ingredients. Then mix well.
  • Use cupcake liners or grease muffin pan. Spoon batter 3/4 full.
  • Sprinkle with sugar before placing in oven. Do not stir.
  • Bake until a toothpick comes out clean.
