1 cup butter, softened
2/3 cup sugar
1/2 teaspoon almond extract
2 cups all-purpose flour
1/2 cup seedless raspberry jam
GLAZE:
1/3 cup confectioners' sugar
1/2 teaspoon almond extract
1 teaspoon water

Steps:

  • In a large bowl, cream butter, sugar and extract until light and fluffy, 5-7 minutes. Add flour and mix well. Chill for 1 hour., Preheat oven to 350°. Roll into 1-in. balls. Place 2 in. apart on greased baking sheets. Using the end of a wooden spoon handle, make an indentation in the center of each; fill each with 1/4 teaspoon jam. Bake until the edges are lightly browned, 13-16 minutes. Remove to wire racks to cool completely., For glaze, in a small bowl, combine confectioners' sugar, extract and water. Drizzle over cookies.

Raspberry-filled, fragile, buttery pecan-crusted cookies. They remind me of a miniature pie in flavor and looks. They are a delicious cookie any time of the year, but especially perfect for the holiday season. Other fillings can be used; any jelly, jam, candied fruit or tinted powdered sugar icing. Our family favorite is raspberry jam.

½ cup butter at room temperature
½ cup vegetable shortening (such as Crisco®)
½ cup brown sugar
2 eggs, separated
1 teaspoon vanilla extract
2 cups all-purpose flour, sifted
½ teaspoon salt
1 ½ cups finely chopped pecans
1 (8 ounce) jar raspberry jam, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat butter, vegetable shortening, and brown sugar together in a bowl until smooth and creamy; beat in egg yolks and vanilla extract. Retain egg whites for a later step. Stir flour into butter mixture 1 cup at a time; mix in salt.
  • Beat egg whites in a separate bowl; transfer pecans to a shallow bowl. Pinch off and roll dough into 1-inch balls, dip each in beaten egg white, and roll in pecans. Place cookies on an ungreased baking sheet. Use your thumb to form an indention into the top of each cookie and spoon a small amount of raspberry jam into the hollow.
  • Bake cookies in the preheated oven until very lightly browned, 10 to 12 minutes.

⅔ cup white sugar
½ teaspoon almond extract
2 cups all-purpose flour
½ cup seedless raspberry jam
½ cup confectioners' sugar
¾ teaspoon almond extract
1 teaspoon milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together butter and white sugar until smooth. Mix in 1/2 teaspoon almond extract. Mix in flour until dough comes together. Roll dough into 1 1/2 inch balls, and place on ungreased cookie sheets. Make a small hole in the center of each ball, using your thumb and finger, and fill the hole with preserves.

3/4 pound (3 sticks) unsalted butter, at room temperature
1 cup sugar
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1/4 teaspoon kosher salt
1 egg beaten with 1 tablespoon water, for egg wash
7 ounces sweetened flaked coconut
Raspberry and/or apricot jam

Steps:

  • Preheat the oven to 350 degrees F.
  • In an electric mixer fitted with the paddle attachment, cream together the butter and sugar until they are just combined and then add the vanilla. Separately, sift together the flour and salt. With the mixer on low speed, add the flour mixture to the creamed butter and sugar. Mix until the dough starts to come together. Dump on a floured board and roll together into a flat disk. Wrap in plastic and chill for 30 minutes.
  • Roll the dough into 1 1/4-inch balls. (If you have a scale they should each weigh 1 ounce.) Dip each ball into the egg wash and then roll it in coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is a golden brown. Cool and serve.

2 cups all-purpose flour
1 teaspoon cinnamon
3/4 cup unsalted butter, softened
1/2 teaspoon salt
1 teaspoon vanilla extract
1/3 cup Truvia® Baking Blend
4 cups raspberries (fresh or frozen)
1/3 cup Truvia® Baking Blend
2 teaspoons lemon juice
1/3 cup cornstarch

Steps:

  • Preheat oven to 325 degrees F.
  • Place oats, flour, cinnamon, butter, salt, vanilla and Truvia® Baking Blend in mixing bowl, mix on low speed for 1 minute.
  • Scrape sides of bowl, mix on medium speed for 2 minutes.
  • Place 2/3 of oat mixture into greased 13-by-9-inch baking pan; set aside remaining 1/3 of mixture for topping.
  • Press oat mixture into bottom of pan to form crust.
  • For filling: blend raspberries, Truvia® Baking Blend, lemon juice and cornstarch until uniform. Spread over pressed oat mixture.
  • For topping, add remaining oatmeal mixture.
  • Bake at 325 degrees F for 35 to 40 minutes until golden brown.

1 1/2 Cups Quick Cooking Oatmeal
1 1/2 Cups Flour
1/2 Cup finely chopped Nuts of your choice
2/3 Cup Seedless Raspberry Jam

Steps:

  • Preheat the oven 350.
  • Line you baking sheets with parchment paper or spray with non-stick cooking spray.
  • In a mixing bowl, cream the butter, brown sugar, egg and vanilla.
  • Stir in the oatmeal and flour.
  • Place the chopped nuts in a shallow dish.
  • Put the chopped nut in a shallow dish like a pie plate.
  • Scoop out dough with a #40 scoop and roll the balls of dough through the nuts until the cookie dough is completely coated in nuts.
  • Place the balls on the prepared baking sheets.
  • Using your thumb or the back of a 1 tsp measuring spoon, make an indent in each cookie.
  • Fill each indent with jam.
  • Bake at 350 degrees for 12-15 minutes.

2 ½ cups quick cooking oats
¾ cup margarine, melted
1 cup raspberry jam
1 tablespoon water

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, mix together oats, cake mix, and melted margarine so that it makes nice clumps and there is no dry mix left. Confectioners' sugar for dusting

2 large baking sheets; parchment paper; small pestle

Steps:

  • Position a rack in the upper third of the oven and a second rack in the lower third then preheat to 350°F. Line 2 baking sheets with parchment paper.
  • In a large bowl, sift together the flour, baking soda, and salt.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and sugar and beat on medium speed, scraping the bowl occasionally, until light and fluffy, about 2 minutes. Add the egg and vanilla and beat until fully incorporated, about 1 minute. With the mixer on low, add the flour mixture, and stir until just combined. Shape the dough into a disc, wrap it in plastic, and chill at least 1 hour and up to 24 hours.
  • Roll the dough into 1-inch balls and arrange on baking sheets, leaving about 3 inches between cookies. Using your thumb or the round end of a small pestle, make a well in the center of each cookie. Using a teaspoon, fill each well with jam, being careful not to overfill the wells. Bake, switching the cookies between the upper and lower racks about halfway through baking, until golden, about 15 minutes. Cool the cookies on baking sheets for 10 minutes before transferring to a wire rack to cool completely. Dust with confectioners' sugar. Continue baking cookies on cooled baking sheets. DO AHEAD: The cookies can be baked ahead and stored, in an airtight container at room temperature, up to 3 days.

1/3 cup brown sugar, packed
1 egg
1/2 cup corn syrup (light or dark)
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups Robin Hood oats
1/3 cup sunflower seeds
1 cup chocolate chips (optional)
3/4 cup strawberry jam (I prefer Smuckers Squeeze No Sugar Added Strawberry Spread)

Steps:

  • Preheat oven to 350°F Line w baking sheets with parchment paper.
  • Beat first 4 ingredients together in mixing bowl. Add remaining ingredients and mix to combine.
  • Drop by tablespoonful onto prepared baking sheets. Using the tip of a wooden spoon or a small thumb, gently make an indentation in the cookie, making sure that the sides and bottom remain intact. Squeeze about 1/2 teaspoons of the spread into each cookie.
  • Bake in preheated oven 11-13 minutes, or until cookie is brown and jam is set.
  • Cool 10 minutes, then transfer to racks.
