I had a butter yellow cake mix I needed to use and a small amount of oats taking up space in my pantry. So, I decided to make these oatmeal cookies. They turned out wonderful. I'm going to freeze them for when I need a quick treat for a pot luck or as a sweet snack. They're mighty tasty and I would imagine they'd be good with...

1 - 15.25 oz betty crocker supreme butter recipe yellow cake mix
1 1/2 c old fashioned oats
3/4 c flour
2 tsp cinnamon
1/2 c packed brown sugar
2 eggs
1 c butter, melted
1 tsp vanilla
1 c raisins
1/2 c each - chopped walnuts and chopped pecans

Steps:

  • 1. Preheat oven to 375 degree F. In a bowl, mix together the cake mix, oats, flour and cinnamon. Set aside. Measure our 1 cup of raisins and pour hot water over them and let set while mixing batter. Drain well.
  • 2. In another bowl, whisk together the eggs, brown sugar and pour into the cake mixture. Pour in the melted butter and stir until thoroughly blended. Stir in the raisins and nuts.
  • 3. Spray baking sheet with bakers joy or grease and drop batter by tablespoonfuls on prepared sheet, about 2 inches apart. Bake for 12 - 15 minutes or until golden on the bottom. I always take mine out before too dark. Finish cooling on racks.Enjoy!

These are "The Best!" Oatmeal cookies i have ever tasted...(at least thats what everyone says :)) I double the batch and divide up the dough and freeze it. I bake the cookies in small batches so they dont get stale and just pull a batch of dough out of the freezer when needed.

1 c (2 sticks) softened butter
2 c sugar
2 eggs
1 Tbsp honey
2 tsp vanilla
2 c flour
1 1/2 tsp baking soda
1/2 tsp salt
2 c quick oats
1 c raisins
1 c chopped nuts (pecan or walnut)
2 tsp cinnamon
ICING
2 c powdered sugar
4 Tbsp milk

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Cream: Butter, Sugar.
  • 3. Add: Eggs,Honey,Vanilla to cream mixture.
  • 4. In seperate Bowl Combine:Flour,Baking Soda,Cinnamon,Salt.
  • 5. Gradually add Flour mixture to Cream mixture.
  • 6. Stir in Oats,Raisins and Nuts.
  • 7. Drop by tsp OR TBLS onto cookie sheet (i use parchment paper to line cookie sheet) Bake anywhere from 7-10 min depending on if used tsp or TBLS.
  • 8. Drizzle icing onto cookies while still a bit warm. Sprinkle Kosher or course ground salt on warm icing if desired (its really good! :) )

2 sticks margarine
1 cup sugar
3 cups oatmeal
1 cup brown sugar
2 cups flour
1 cup raisins
1 cup chopped pecans
2 eggs
1 tsp vanilla
1 tsp nutmeg
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 tsp cloves

Steps:

  • Cream margarine, mix in both sugars. Beat in eggs and vanilla. Blend in the remainder of ingredients. Place on greased cookie sheet about two inches apart. Bake @ 375° for 8 min.
