VEGAN OATMEAL RAISIN COOKIES
I made these for a friend of mine and she loved them! The cookies have a crisp edge and soft, chewy center. Delicious vegan comfort cookies made with soy milk!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Beat shortening, brown sugar, white sugar, and vanilla extract together in a large bowl until smooth. Mix in soy milk until well combined.
- Mix flour, cinnamon, baking soda, salt, and nutmeg together in a separate bowl. Pour over the sugar mixture and mix well. Fold in oats, walnuts, and raisins; cookie dough will be thick.
- Scoop out tablespoon-sized balls of dough and drop onto cookie sheets. Press down slightly to flatten cookies.
- Bake in the preheated oven until edges are golden, 12 to 15 minutes. Cool on the cookie sheets for 2 minutes before removing to cooling racks.

VEGAN CINNAMON OATMEAL RAISIN COOKIES
I adapted this from a recipe I found on Google. They're the best oatmeal raisin cookies I've ever made, vegan or not.

Steps:
- Preheat oven to 350°F.
- Combine margarine and the sugars and beat until creamy.
- Add in vanilla, rice milk, and apple sauce and beat some more until it's all distributed evenly and creamy and yummy.
- In a separate bowl, combine the flour, baking soda, baking powder, salt, and cinnamon until they're all mixed together evenly.
- Add the dry ingredients and the wet ingredients and mix together until all is well.
- Add the oats and raisins and mix 'em inches
- Evenly place clumps of cookie dough on an ungreased cookie sheet (I use parchment paper. It's amazing and I don't even have to wash the cookie sheets after. I got it at Walmart.)
- Put in the oven and back for about 8-10 minutes, until they no longer look raw, even in the middles.
- Eat!

- Preheat oven to 350° F.
- In a small bowl, whisk together the flax and water. Let sit for 2 minutes.
- In a separate bowl, whisk together the oats, flour, cinnamon, baking soda and salt.
- In the bowl of a standing mixer, or with an electric mixer, cream together the butter and sugar until light and fluffy, about 3 minutes. Add the flax mixture and vanilla extract and stir until combined.
- Gradually add the flour mixture until just combined. Add the raisins and stir to thoroughly combine.
- Using a 2 tablespoon measure, place cookie dough onto Silpat or parchment-lined baking sheet. Bake for 15-20 minutes, or until golden brown.

- PREHEAT OVEN to 350 degrees fahrenheit and lightly grease two baking sheets.
- In a large bowl, combine the oil, brown rice syrup, soy milk, brown sugar, and vanilla, and beat until smooth.
- Sift in the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt, and combine to beat just until a dough begins to form.
- Fold in the oats and raisins.

- In a large bowl use a fork to vigorously mix together the non-dairy milk and flax seeds. Add in the sugar and oil and mix for about 2 minutes until it reaches a caramel colour. Mix in vanilla extract.
- Sift in flour, spices, baking soda and salt. Fold in oatmeal and raisins.
- Drop dough in generous tbs onto a paper-lined (or greased) baking sheet, about 2 inches apart. Flatten the tops a bit.

- Start by blending ½ cup raisins, coconut oil and applesauce in a food processor. If the raisins are old and hard, chop them up a bit by hand first to help get the process going. Add in the coconut, oats, flax seed and salt, pulsing until the mixture forms a bowl. If it is still too wet, add some more coconut or oats. If it is too dry, add additional applesauce or coconut oil. Quantities will really vary depending on where you live and what the climate is like. Once the "cookie dough" has reached a consistency you like, fold in the remaining ¼ cup of raisins, Form the mixture into cookies and refrigerate until firm. If not eaten immediately, store the cookies covered in the fridge, otherwise they will get too soft at room temperature.

When using ground flax seed to replace eggs in a baking recipe, the ratio is always 1 TBSP flax seed to 3 TBSP water. Ground flax seed has a bit of a nutty flavor and it is best used in recipes like pancakes, waffles, muffins, breads and oatmeal cookies, and as an added bonus, flax seeds are the most concentrated source of omega-3 fatty acids.

- Preheat oven to 350 degrees.
- Spray cookie sheets with non stick spray.
- In a blender, or using a wisk, whip together the flax seed and water until thick and creamy.
- Cream together margarine, sugars, vanilla and flax seed mixture until well blended.
- I another bowl mix flour, oat bran, baking soda, baking powder, salt, cinnamon and nutmeg.
- Add to the wet ingredients, and mix until well blended and smooth.
