WWII OATMEAL MOLASSES COOKIES

This was my Grandmother's recipe from the 1940's. These cookies use molasses in place of brown sugar, which was one of the items rationed during the war (and harder to get than white sugar, they tell me). To me they're better than regular oatmeal cookies!

2 cups all-purpose flour
2 cups oatmeal
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup sugar
¾ cup shortening
2 eggs, beaten
5 tablespoons light molasses
2 teaspoons vanilla extract
½ cup chopped walnuts
½ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, stir together the flour, oatmeal, baking soda, baking powder, and salt.
  • In another large bowl, beat the sugar with the shortening until smooth and creamy; mix in beaten eggs, molasses, and vanilla. Gradually mix in the dry ingredients. Stir in walnuts and raisins. Drop by teaspoonfuls onto ungreased baking sheets.
  • Bake for 10 to 12 minutes, or until slightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt

1 cup raisins
1/2 cup butter, softened
1 1/4 cups sugar
2 eggs, well beaten
6 tablespoons molasses

Steps:

  • Combine first eight ingredients in a bowl and mix well. In a separate bowl cream together the remaining four ingredients and mix with dry mix. Drop by teasoonfuls on cookie sheet and bake at 325 degrees for 12-15 minutes.

1 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon

1 1/4 cups granulated sugar
1/2 cup unrefined coconut oil
6 tablespoons molasses (not blackstrap molasses)
2 large eggs
1/2 to 3/4 cup golden raisins
1/2 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • In a large bowl, whisk together the oats, flour, baking powder, baking soda, cinnamon and salt.
  • In a stand mixer, mix the sugar and coconut oil until combined. Add the molasses and eggs and mix until combined. Add the dry ingredients and mix until just combined. Fold in the raisins and walnuts.
  • Using a 2-tablespoon or 1-ounce scoop, portion the dough onto the baking sheets, 1/2 to 1 inch apart. If you like chewier cookies, leave the dough as is. If you like crispier cookies, press down with a spoon to flatten. Bake until the edges are brown, about 15 minutes. Cool before serving.

1 cup McCann's® Quick Cooking Rolled Irish Oats
2 teaspoons Spice Islands® Ground Ginger
1 teaspoon Spice Islands ® Ground Saigon Cinnamon
1 teaspoon Clabber Girl® Baking Soda
¼ teaspoon Spice Islands® Ground Nutmeg
¼ teaspoon salt
¾ cup unsalted butter, at room temperature
¾ cup brown sugar, firmly packed
½ cup Grandma's® Molasses
1 egg
1 teaspoon Spice Islands® Pure Vanilla Extract
1 cup white chocolate chips
¼ cup granulated sugar

Steps:

  • Mix flour, oats, ginger, cinnamon, baking soda, nutmeg, and salt in large bowl.
  • Using a stand mixer with the paddle attachment (or a large bowl with electric mixer), cream together the butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy, about 3 minutes.
  • Add molasses, egg, and vanilla and beat on medium speed until fully incorporated. Using a spatula, scrape down the sides to release some of the dough.
  • Gradually add flour mixture, one cup at a time, on low speed until well mixed.
  • Fold in the white chocolate chips and evenly distribute as best you can.
  • Press dough into a thick flat disk. Wrap in plastic wrap. Refrigerate 4 hours or overnight.
  • Preheat oven to 350 degrees F. Shape dough into 1-inch balls. Roll in granulated sugar. Place 2 inches apart on baking sheets lined with parchment paper.
  • Bake 8 to 10 minutes or until edges of cookies just begin to brown. Remove to wire racks; cool completely.

I love oatmeal raisin cookies and stumbled across several recipes with Oatmeal.craisins,and white chocolate.I've changed around abit and came up with this one,by adding whole wheat stone ground flour, cinnamon and molasses,made a totally different and delicious cookie. I've been reading here and there about eggs when added to baked goods need to be at room temp... so I decided to soak the cranberries with the eggs,vanilla and molasses to see what happens.The cranberries did absorb some of the vanilla and molasses flavoring and seemed more moist instead of dried up hard chewies.... and no brown sugar in this one as I've already added enough molasses for flavoring.. I only the small amount of pecans as the cookie had a lot going on already.. and just wanted to use them up...but I'm glad.. it was just enough these turned out to be a lightly soft cookie with a little crispy edge..not to crispy or to soft

- 3 well beaten eggs
- 1 to 1 and 1/2 cup dried cranberries
- 1 tsp. vanilla
- 2 t grandma's molasses
- 1 stick soft butter
- 1 stick soft margarine
- 1 and 1/2 cup sugar
- 1 cup 100% stone ground whole wheat flour
- 1 and 1/2 cups ap flour
- ½ tsp salt
- 1 tsp ground cinnamon
- 2 tsp. baking soda
- 2 cups oatmeal
- 1 cup white chocolate chips
- 1/4 cup coarse ground pecans (optional)

Steps:

  • Combine the beaten eggs,along with the molasses and vanilla... add the dried cranberries, covered with plastic wrap and leave on counter for 1 hour
  • Cream together butter/marg and sugar
  • Add flour, salt, cinnamon and soda to the creamed sugar mixture.
  • Mix well
  • Add the egg,cranberry mix to the flour mix.. keep mixing will be a little stiff
  • Add the oatmeal.. will be really siff by now.. just mix until combined
  • Fold in white choco chips
  • let the bowl of cookie dough sit for about 10 min to soften up the oatmeal and allow the molasses to blend in..
  • 1 Tablespoon of dough 2 inches apart onto cookie sheet ... these will spread a bit.. I made 12 to a cookie sheet and this one make 4 dozen perfectly
  • Bake at 350 for 10 minute or 12 min for a slightly crispier cookie

I looked through a dozen recipes on this site for molasses cookies and then came up with my own that fit what ingredients I had while still maintaining a healthier approach to cookies.

1/4 teaspoon baking soda
1/8 cup brewed tea
1/3 cup blackstrap molasses
1/8 cup margarine
1/8 cup applesauce
1 tablespoon maple syrup
1 tablespoon smooth natural-style peanut butter
1 egg white
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon
1/8 teaspoon allspice
4 tablespoons chocolate protein powder
3/4 cup oatmeal

Steps:

  • Dissolve baking powder and baking soda in brewed tea, set aside.

1 egg, beaten well
1 c granulated sugar
1/2 c brown sugar
1 stick butter, melted
1 stick margarine, melted
2 Tbsp molasses
1/4 c milk
1 3/4 c oatmeal, uncooked
3/4 c raisins
1/2 c pecans, finely chopped

Steps:

  • 1. Preheat oven to 325. Line several cookie sheets with foil and spray with Pam.
  • 2. Stir together the flour, baking soda, salt and cinnamon and set aside. Melt butter & margarine together.
  • 3. Beat egg well and add, in this order, both sugars, butter & margarine, molasses, milk and oatmeal.
  • 4. Now add to that, in this order, the flour mixture, raisins and nuts and mix well.
  • 5. Drop by teaspoonsful onto greased cookie sheets & bake at 325 for 10-15 minutes.
