This recipe is simple to make and has all the essentials - chopped nuts, chocolate chips, high quality Gold Medal™ flour, and whole-grain oats. We love the ease of making oatmeal cookie bars because they have the chewy texture and flavor of an oatmeal cookie, but they take only 10 minutes to prep and use only one pan in the oven. Add extra indulgence by drizzling a little melted chocolate over these once they are cool and before you cut out the bars.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.

- Brush a 13 x 9 inch baking dish with oil, then line with parchment paper or foil, pressing paper down firmly so it stays. Leave a slight overhang of paper.
- In mixing bowl cream the margarine or butter until light. Add the sugars and beat until smooth. Add the egg and vanilla and mix in well.
- In a separate bowl mix the flour, baking powder, cinnamon, allspice and ginger. Mix into the batter, then stir in the oatmeal and raisins.
- Press dough evenly into the lined baking pan. (This is the messy part.) The dough will be a bit sticky and there will seem to be almost not enough to fill the pan.
- Bake in a pre-heated 350 degree oven for 15 to 18 minutes, until golden. Bake a bit less for chewier bars, a bit more for crispy bars.
- Let cool for 3 or 4 minutes, then lift gently out of the pan. Cool a couple more minutes, cut into squares, then cool fully.

- 1. Line an 8x8-inch baking dish with aluminum foil. Once lined, spray the inside of the foil lined baking dish with a no-stick cooking spray; set dish aside.
- 2. In a medium size bowl, add the flour, soda and salt. Stir ingredients with a spoon to mix. Now add the brown sugar, oats, and butter. Mix ingredients with a pastry blender, to form a crumbly mixture. (I used a fork to mix the ingredients together thoroughly. It did take at least 5 minutes to blend everything together.)
- 3. Add 2 cups of the oatmeal crumb mixture into the baking pan. Press the crumb mixture down firmly with your hand.
- 4. Spread the preserves to within 1/4 inch from the edge of the pan.
- 5. Sprinkle remaining oatmeal crumb mixture over the preserves. Press the crumb mixture some-what firmly on top the preserves.
- 6. Place pan in a preheated 350 degree oven, and bake bars for 40 minutes.
- 7. Once the bars are baked, allow to cool to room temperature. (I then refrigerate the bars for a couple hours, so they can firm up a bit.)
- 8. Use aluminum foil to lift bar mixture from the pan. Cut bars into 12 squares.
- 9. *Note: I made these bars twice, once using raspberry preserves, and the other using home-cooked strawberry jam, but I found I much preferred the bars with the raspberry preserves. I think these bars would taste great using apricot preserves, or another kind of tart-tasting jam or preserves.

- Preheat oven to 350 degrees.
- In large bowl add baking mix, oats, baking powder, chocolate chips, and the tablesppon of pumpkin pie spice. Stir until combined.
- In a medium bowl whisk together pumpkin, teaspoon of pumpkin pie spice, egg, milk, and sugar until smooth.
- Stir in pecans.
- Add wet ingredients to dry and stir until combined.
- Spoon minture into greased 9 X 13inch pan and bake for 25 mins or until toothpick inserted in the middle comes out clean.
- Allow "cake" to cool slightly and transfer from pan to wire rack to continue cooling.
- When cool slice width wise into 1/2 inch strips and then in half length wise.
- Place evenly on cookie sheet(s) and bake for an additonal 10-15 minutes
- Remove from oven and let cool slightly. Dust with powdered sugar.
- Allow the cookies to cool completely and enjoy!

- Check cherries for pits. Drain. Put cherries into a blender (one bag at a time) and blend until somewhat blended but still chunky. Put into a colander or strainer to drain.

- Put sweet potatoes in a microwave safe dish and add some water to the bottom. Cover with saran wrap.
- Microwave on high for about 7 minutes or until knife inserts easily. Let cool.
