Number Of Ingredients 11

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup old-fashioned oats
1 cup sweetened shredded coconut

Steps:

  • In a large bowl, beat shortening and sugars until blended. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture. Stir in oats and coconut., Divide dough into 4 portions. On a lightly floured surface, shape each into a 6-in.-long log. Wrap in waxed paper; freeze 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/2-in. slices, reshaping as needed. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 5 minutes. Remove to wire racks to cool., Freeze option: Place wrapped logs in a freezer container; return to freezer. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Prepare and bake as directed.

1 cup old-fashioned rolled oats
1/2 cup all-purpose flour
1/2 cup packed dark brown sugar
1/2 cup chocolate chips (milk or semisweet)
1/2 cup sweetened flaked coconut
1/4 teaspoon baking powder
1/4 teaspoon salt
5 tablespoons unsalted butter, melted and cooled
1 large egg
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • Line a 9-inch square metal baking pan with a 12- to 14-inch-long sheet of foil, letting excess hang over sides, and butter foil in pan.
  • Toss together oats, flour, brown sugar, chips, coconut, baking powder, and salt in a large bowl. Beat together butter, egg, and vanilla with a fork in another bowl, then stir into oat mixture until incorporated. Spoon batter into baking pan, patting evenly.
  • Bake in middle of oven until set, about 25 minutes. Remove from pan by lifting ends of foil. Cool on a rack, then cut into 16 squares.

Good cookies! Oatmeal cocoAnut Slices as found in Canadian Cook Book. Love these cookies. Love! I add chocolate chips because chocolate. Make them months before Christmas with a variety of mix-ins , roll and freeze then they are ready to be freshly baked over the Christmas season.

1 cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
1/2 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 cups rolled oats
1 1/2 cups flaked coconut
1/2 cup chopped nuts (optional)

Steps:

  • Cream butter and sugar.
  • Add egg, vanilla. Mix.
  • Add soda, salt, . Mix.
  • Add oats, coconut, nuts.
  • I add chocolate chips or baking gum drops.
  • Make into 3 rolls, roughly 2 inch (5 cm) diametre. Wrap in plastic, refrigerate 1 hour.
  • Slice into 1/4 inch slices,.
  • 375 f. About 10 minutes or so.
