I modified Beatrice's Excellent Oatmeal cookies very slightly. I came up with something that my boyfriend went CRAZY over! I've never seen him enjoy cookies to that extent! He said I blew his mother's recipe away.

1 cup butter, softened
1 cup packed light brown sugar
½ cup white sugar
2 eggs
2 teaspoons vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oats
1 cup chopped walnuts
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
  • Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

1 cup butter
¾ cup packed brown sugar
¼ cup white sugar
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon salt
1 teaspoon baking soda
¼ cup boiling water
2 cups quick cooking oats
½ cup raisins
1 ½ cups semisweet chocolate chips

Steps:

  • Beat butter or margarine, sugars and vanilla until light and fluffy. Add flour and salt, mix well.
  • Dissolve baking soda in boiling water and add to mixture. Stir in rolled oats, raisins and chocolate chips.
  • Drop by teaspoonful onto ungreased cookie sheet. Bake at 350 degrees F (175 degrees C) for 10-12 minutes. Don't over cook. (There are no eggs in this recipe, I didn't forget to type it down).

Adapted from a 2003 recipe I found in the Houston Chronicle. Can be vegan if you use vegan chocolate chips and margarine instead of butter.

1 cup unsalted butter (2 sticks)
1 cup unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1/4 teaspoon salt
2 tablespoons ground flax seeds
6 tablespoons warm water
1 cup brown sugar, firmly packed
1/4 cup granulated sugar
3 tablespoons maple syrup
1 teaspoon vanilla extract
3 cups quick-cooking rolled oats
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • In a saucepan, melt butter over low heat. Remove from heat and reserve. In a small bowl, sift or stir together flour, baking soda, cinnamon, nutmeg, allspice and salt. Set aside.
  • In a large bowl, whisk the ground flax seeds with warm water till it forms an egglike mixture. Alternatively, you can microwave the flax-water mixture for 15-30 seconds to achieve the same effect, then add the mixture to a large bowl.
  • Using a wooden spoon, mix in the sugars. Add melted butter to flax mixture and stir until mixture is smooth.
  • Stir in maple syrup and vanilla, then stir in flour mixture. Finally, stir in rolled oats and chocolate chips. Dough will be thick.
  • Scoop up tablespoon-size dollops of cookie dough and place on a nonstick baking sheet, spacing dollops about 2 inches apart. Bake until golden brown, about 10 minutes.
  • Remove from oven and let sit for a minute or two on baking sheet to firm up. Then, using a spatula, transfer to a wire rack and let cool completely. Repeat with remaining cookie dough.
  • Store cookies in an airtight container at room temperature up to four days, or freeze in freezer bags or an airtight container for up to two months.
  • TIP: To prevent the cookies from spreading too much, refrigerate the dough for 10-15 minutes before scooping it onto the baking sheets. Also, while one batch is baking, you can arrange the next on another sheet and refrigerate it till the first batch is done.

1 cup gluten-free old-fashioned oats
1/2 cup gluten-free oat flour
1/2 cup brown rice flour
2 tablespoons tapioca flour
1 teaspoon gluten-free baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 egg
1 teaspoon pure vanilla
1 cup miniature semisweet chocolate chips
1/2 cup chopped walnuts

Steps:

  • In small bowl, mix oats, flours, baking powder, baking soda and salt with whisk; set aside. In large bowl, beat butter, brown sugar and granulated sugar with electric mixer on medium speed until fluffy. Beat in egg and vanilla. Gradually add oat mixture, beating on low speed just until combined. Stir in chocolate chips and nuts.
  • Shape dough into 16x1 1/2x1 1/2-inch log; wrap in plastic wrap. Refrigerate 1 hour or until firm.
  • Heat oven to 350°F. Unwrap dough. Using serrated knife, cut dough into 1/2-inch slices. Place 2 inches apart on ungreased cookie sheet.
  • Bake 9 to 11 minutes or just until edges are golden. Cool 2 minutes; remove from cookie sheet to cooling rack.
