AMISH BAKED OATMEAL

Number Of Ingredients 13

1 stick (8 tablespoons) unsalted butter, melted, plus for greasing the pan
2 cups quick oats
3/4 cup granulated sugar
3/4 cup whole milk
1 vanilla bean, scraped (see Cook's Note)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon baking powder
1 egg
Heavy cream
Brown sugar
Berries

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-12-inch baking pan with butter.
  • Combine the oats and sugar in a medium bowl, then pour in the milk.
  • Add the vanilla seeds, cinnamon, nutmeg, salt and baking powder.
  • Next comes the melted butter and the egg.
  • Then just stir it all together into a big delicious oaty mess of wonder.
  • Plop the mixture into the prepared pan and spread it out.
  • Bake for 30 minutes, until set.
  • Cut into squares while still warm. Serve with cream, brown sugar and berries.

This recipe was given to me by a friend many years ago. Her favorite is bone-in chicken, while mine is boneless, skinless breast. Try it both ways and see which you prefer. My family, friends, relatives...well everyone I know tries to wrest an invitation to dinner when they know this chicken is on the menu. It smells wonderful...

8 boneless, skinless chicken breasts (5-6oz each)
1 c old fashioned oats
1/2 c parmesan cheese (in shaker jar)
1 tsp dried thyme
1 stick salted butter
1 tsp freshly minced garlic

Steps:

  • 1. Melt butter over low heat; add garlic and stir.
  • 2. In a pie plate, mix oatmeal, Parmesan and thyme. When mixture runs out, mix more as needed; doubling the ingredients does not seem to work as well.
  • 3. Rinse and dry chicken breasts; trim any visible fat.
  • 4. Dip chicken in butter to coat; then press into the oatmeal mixture until coated. Repeat with remaining breasts.
  • 5. Place coated breasts in a prepared casserole dish or baking pan; allow to rest for 10 minutes.
  • 6. Drizzle remaining butter evenly over the breasts and bake at 350F for 20-25 minutes.
  • 7. Serve hot, with spinach mashed potatoes and steamed vegetable medley or orange-glazed carrots.

1 cup brown sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
2 eggs
½ cup melted butter
2 teaspoons vanilla extract
¾ cup dried cranberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9x13 inch baking dish.

4 (6-ounce) skinless, boneless chicken breast halves
1 cup buttermilk
1 large egg
1/2 teaspoon salt
1/2 teaspoon pepper
2/3 cup flour
1/2 cup ground oats
2 tablespoons oil

Steps:

  • Preheat oven to 425°. Place chicken breast halves in a zip-top plastic bag. Combine buttermilk and egg. Add egg mixture to bag, and seal. Marinate in refrigerator for 4 hours. Remove chicken from bag; discard marinade. Sprinkle chicken with salt and pepper. Combine flour and ground oats. Dredge the chicken in flour mixture. Heat oil in a large ovenproof skillet over medium-high heat. Add chicken; sauté for 4 minutes. Turn chicken over. Bake at 425° for 10 minutes or until done.

Number Of Ingredients 8

3 pieces chicken breasts, de-boned and halved
2 tablespoons lemon juice
1/2 teaspoon salt
100 g quick-cooking oatmeal
1/2 teaspoon red chili powder
1/2 teaspoon black pepper
1 tablespoon water
2 egg whites

Steps:

  • Marinate the chicken pieces with lemon juice and 1/4 tsp salt.
  • Preheat oven to 200°C.
  • In a bowl, combine together oatmeal, chili powder, black pepper powder and the remaining salt.
  • In another bowl, lightly whip an egg white with 1 tbsp water.
  • Drain chicken well, dip into egg white and then into the oatmeal mixture to coat each piece evenly.
  • Place on a well-greased tray.
  • Bake for 20 minutes on one side.
  • Turn onto the other side and bake for 15 minutes on the other side until the chicken pieces are well browned.
  • Serve hot with tomato or chili sauce.
