150 g butter
2 tablespoons golden syrup
3/4 cup brown sugar
1/2 cup coconut
2 cups rolled oats
1/2 cup flour

Steps:

  • Melt butter, syrup and brown sugar in a saucepan large enough to mix all the ingredients.
  • Mix in coconut,oats and flour until combined.
  • Using a measuring spoon, roll tablespoonsful into balls.
  • Place on a greased oven tray allowing room for spreading.
  • Flatten with a spoon.
  • Bake at 180C degrees for 10 minutes or until lightly browned.
  • Cool on a rack.

375g butter
10ml (2 tsp) bicarbonate of soda
30ml (2 tbsp) milk
45ml (3 tbsp) golden syrup
230g Tiger Oats (the big flakes)
340g cake flour, sifted
200g desiccated coconut
275g sugar
pinch salt

Steps:

  • Preheat the oven to 180°C. Grease and line the base of a 40cm x 30cm roasting tray.
  • Melt the butter in a large pot over medium heat.
  • Add the bicarbonate of soda to the milk, mix well and allow to dissolve.
  • Add the syrup and bicarb-milk to the butter and mix to combine - it will foam slightly.
  • Mix all of the dry ingredients together. Add to the wet ingredients and stir. Work it through with your fingers until well mixed. Press the mixture firmly into the baking tray and bake in the oven until golden brown, about 30 minutes. Keep an eye on them, so that they don't burn.
  • Allow to cool slightly before cutting into 4cm squares while still a little soft. Gently remove from the baking tray when completely cool and enjoy.

My neighbor gave me this recipe for a healthy alternative snack for my kids. They love them and have no idea there healthy. These are also good with choc. chips and coconut. Not as good for you though, but tasty!

5 tablespoons honey
3/4 cup margarine or 3/4 cup butter
1 1/2 teaspoons baking soda
3 cups oats (old fashioned or quick)
3/4 cup flour
3/4 cup raw wheat germ
1/2 cup brown sugar
5 tablespoons ground flax seeds
3/4 cup raisins
3/4 cup sunflower seeds

Steps:

  • Preheat oven to 350°F.
  • Melt margarine and honey slowly on stove.
  • When melted add baking soda and stir with a whisk.
  • Combine oats, flour, wheat germ, brown sugar and ground flax.
  • Add butter mixture to oat mixture, stir until moist.
  • Add raisins and sunflower seeds.
  • Press into a 9x13 pan.
  • Bake for about 12 minutes.
  • Cut into squares while still warm, but don't remove them or they may fall apart.
  • Remove when cooled.

These cookies are similar to Anzac biscuits, but are not as hard. They are very quick to make, and go down well with a cup of tea.

1 tablespoon golden syrup
⅞ cup butter
1 teaspoon baking soda
1 cup flaked coconut
1 cup all-purpose flour
1 cup white sugar
2 cups rolled oats

Steps:

  • Boil butter or margarine and syrup together. Add soda. You should end up with a frothy mixture after soda is added. Stir in coconut, flour, sugar, and oats, and stir well. Press mixture lightly into a large baking tray.
  • Bake at 350 degrees F (175 degrees C) for 15 minutes. Cool, and cut into bars.

1 cup all-purpose flour
1/2 cup granulated sugar, plus more for dusting
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup light brown sugar, packed
1/2 cup vegetable shortening
1 egg
1/4 teaspoon vanilla (add a little more if desired)
3/4 cup quick-cooking rolled oats
1/4 cup chopped walnuts, optional

Steps:

  • Preheat the oven to 375; use ungreased cookie sheets.
  • In a bowl, sift together the flour, granulated sugar, baking powder, soda and salt; set aside.
  • In another bowl, combine the brown sugar, shortening, egg and vanilla; beat well.
  • Stir the flour mixture into the shortening mixture, blend well.
  • Stir in the rolled oats and walnuts, if desired.
  • Form the dough into small balls about the size of a quarter, or a little smaller.
  • Dip the tops of the cookies in a little additional granulated sugar; place on the ungreased cookie sheets, sugared side up, about 2" apart.
  • Bake for 10 to 12 minutes.
