ESPRESSO, HAZELNUT & CHOCOLATE SHORTBREAD

Espresso, hazelnut & chocolate shortbread image

These biscuits are the perfect blend of rich coffee, dark chocolate and toasted nuts. Simple to make, they're ideal if you're sharing a cuppa with friends

Provided by Diana Henry

Categories     Snack, Treat

Time 1h20m

Yield makes 20

Number Of Ingredients 8

2 tbsp instant espresso powder
250g butter , softened at room temperature
85g caster sugar
225g plain flour , plus extra for dusting
75g rice flour
75g unblanched hazelnuts , halved
150g 70% dark chocolate , broken into chunks
75g blanched hazelnuts , toasted and very roughly chopped (leave some pieces quite large)

Steps:

  • Mix the espresso powder with 1 tsp hot water to form a paste (you'll think it isn't enough water but it is - don't add more otherwise it'll be too watery). Set aside.
  • Beat the butter and sugar until soft and blended, then beat in the coffee mixture. Don't overbeat the mixture as you don't want to incorporate too much air. (If the coffee isn't completely incorporated, don't worry - it will be once you add the flours).
  • Sift together the flours and add them to the butter in three lots, mixing in with a wooden spoon and, eventually, your hands. Bring together into a ball, then transfer to a lightly floured surface and quickly knead in the hazelnuts. Don't overdo this - you don't want the butter to get too warm. Press the dough into a circle, wrap it in cling film and put in the fridge for about 40 mins.
  • Roll out the dough on a lightly floured surface to 0.75cm thick. Cut out circles about 6cm across with a biscuit cutter and put the circles on a non-stick baking sheet (or two baking sheets, depending on their size). Re-roll the dough as you need to, but try not to do this too often. Put the baking sheets in the coldest part of the fridge and leave them for about 45 mins. Heat oven to 160C/140C fan/gas 3.
  • Bake the shortbread for 20 mins, or until the top is just firm when you press it with your index finger. Take out of the oven and leave on the baking sheets to cool for a while (it is very fragile when hot), then transfer to a wire rack to cool completely.
  • Melt the chocolate in a bowl set over a pan of simmering water, then remove the bowl and leave to cool a little and rm up somewhat. Dip each piece of shortbread halfway in the melted chocolate, then put on a sheet of baking parchment. Sprinkle the toasted hazelnuts on the chocolate half and leave to set completely. Will keep for 4 days in an airtight tin.

SAVORY MIXED-NUT SHORTBREAD

Savory Mixed-Nut Shortbread image

Inspired by the cocktail nuts served at Union Square Cafe in New York City - butter-rich, toasty warm and fragrant with rosemary and cayenne - this no-mixer press-in cookie is a joy to make. You simply melt butter with rosemary and black pepper, stir that into dry ingredients, and then press the dough into a pan. Salted nuts and more fresh rosemary go on top before the whole thing is baked and broken into ragged pieces. Persnickety cookie, this is not. Enjoy on a cheese board, with cocktails or after dinner with tea and dark chocolate. Or pack these in a cellophane bag and tie it with a bow to share as a gift. (The cookies will keep in an airtight container at room temperature for up to a week.)

Time 45m

Yield One 9-by-13 pan (About 8 servings)

Number Of Ingredients 7

1 cup/227 grams salted butter
1 rosemary sprig, plus 2 tablespoons leaves
3/4 teaspoon freshly ground black pepper
2 1/2 cups/300 grams all-purpose flour
2/3 cup/132 grams granulated sugar, plus more for sprinkling
1/4 teaspoon ground cayenne
1 1/2 cups/115 grams mixed, salted nuts (avoid peanuts if possible), lightly crushed with a heavy skillet or mallet

Steps:

  • Heat the oven to 325 degrees. In a medium saucepan, combine the butter, rosemary sprig and 1/4 teaspoon black pepper. Cook over medium, swirling occasionally, until the butter is just melted. (You can also do this in a bowl in the microwave, stirring between 30-second bursts). Set aside to cool slightly. (Take a whiff of the butter; it smells like rosemary!)
  • In an ungreased 9-by-13-by-2-inch pan, use a fork to stir together the flour, sugar and cayenne until combined. Remove and discard the rosemary sprig from the butter. Pour the melted butter into the dry ingredients. Stir with a fork to combine, then use your hands to mix until no dry spots remain.
  • Press the dough evenly into the pan. Prick all over with a fork. Sprinkle the nuts and rosemary leaves on top, shake into a single layer, then press firmly into the dough until the nuts' sides are surrounded by dough. (This is important, otherwise the nuts won't adhere.) Sprinkle evenly with 1 teaspoon sugar and the remaining 1/2 teaspoon black pepper.
  • Bake until golden brown (including in the center) and the edges start to pull away from the sides, 35 to 40 minutes.
  • Let cool completely, then gently break up with your hands into jagged pieces. Nuts along the edge may fall out. (Those are yours to eat.) The shortbread will keep in an airtight container at room temperature for up to a week.

NUTTY CHOCOLATE SHORTBREAD

NUTTY CHOCOLATE SHORTBREAD image

Categories     Cookies     Chocolate     Dessert     Bake     Christmas     Quick & Easy

Yield 24 small squares

Number Of Ingredients 8

For the Shortbread:
3/4 cup powdered sugar
3/4 cup unsalted butter
1 3/4 cup flour
1/4 cup cornstarch
For the Topping:
3/4 cup chocolate chips
1/2 cup salted mixed nuts

Steps:

  • First pre-heat oven to 350 degrees. Sift together flour and cornstarch and keep in separate bowl. Sift the powdered sugar, just to make it fluffy, then mix with the semi melted (soft, room temp is best) butter (you can just use a spatula or spoon to mix). Then combine dry and wet, so there's four ingredients mixing at this point: the butter and sugar, and the flour and cornstarch. It will create a kind of doughy consistency which is what you want. Butter an 8x8 or equivalent baking pan and spread mixture into it. Bake at 350 for about 12 minutes, making sure the top is just a tad golden. In the mean while, you can smash up the nuts very finely chopped or smashed and melt the chocolate. You can mix the two together for the topping. When the shortbread is ready, score the top with a fork so the chocolate topping will stick better. Then after its cooled about 15 minutes, spread the chocolate nutty mixture over the top and let cool for another 20 minutes or so. But you want to cut the pieces relatively soon otherwise the shortbread hardens and the pieces break instead of coming apart nicely and evenly.
