This apple spice cake with cream cheese frosting is packed with flavor, filled with cinnamon, and has a delicious caramel undertone thanks to brown sugar. Then topped with fluffy cream cheese frosting - it's the perfect cake for fall!

2 1/4 cup all-purpose flour
2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
2/3 cup vegetable oil
3/4 cup white sugar
3/4 cup packed brown sugar
3 large eggs (room temperature)
2 teaspoon vanilla extract
1 cup apple sauce
1 1/2 cups grated apple
1/3 cup sour cream
1/3 cup unsalted butter (softened to room temperature)
8 oz cream cheese (brick style, full-fat)
3 cup powdered sugar
1-2 tablespoons heavy cream (as needed)
chopped walnuts (optional)

Steps:

  • Preheat the oven to 350F degrees.
  • Grease and flour a 9x13 inch cake pan.
  • In a large bowl whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger & nutmeg.
  • In a large bowl using an electric mixer beat together the oil, sugars, eggs and vanilla. Then stir in the apple sauce, grated apple and sour cream.
  • Slowly beat in the flour mixture, turning off the mixer and scraping down the sides of the bowl as necessary.
  • Pour into the prepared pan and bake for 40-45 minutes or until an inserted toothpick comes out clean.
  • In a large bowl beat together the butter until soft. Then beat in the cream cheese until no lumps remain.
  • Slowly beat in the powdered sugar about 1 cup at a time. Beat in 1-2 tablespoons cream as needed until the desired sweetness is reached.
  • Frost the cooled cake, then top with chopped walnuts.

1 cup all-purpose flour
2 cups wheat flour (or use 3 cups of All Purpose)
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons nutmeg
1 teaspoon allspice
1 1/2 cups sugar
2 large eggs
1/2 cup molasses or 1/2 cup dark corn syrup
1 cup applesauce
1/2 cup raisins (soak in Orange juice)
1 1/2 cups diced fuji apples
1/2 cup orange juice
1/2 cup chopped pecans (optional) or 1/2 cup walnuts (optional)

Steps:

  • Preheat oven to 375* next Grease and flour a Bundt pan.
  • Except for the Sugar, Sift Dry Ingredients together into a large mixing bowl. Add Sugar, beaten Eggs, Applesauce, Molasses, Orange juice, Raisins, Apples and Nuts. Batter should be thick.
  • Pour Batter into the bundt pan and Bake for 45 minutes or until toothpick inserted comes out clean.
  • Let cake cool, remove from pan and sprinkle with powdered sugar or make a glaze.

2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
½ teaspoon salt
1 cup butter, softened
2 cups white sugar
4 eggs
1 teaspoon baking soda
1 tablespoon warm water
1 teaspoon vanilla extract
3 apples - peeled, cored and chopped
½ cup raisins
¼ cup confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 10 inch tube pan. Cover raisins with warm water, let soak for 10 minutes and then drain. Whisk together flour, spices, and salt. Set aside.
  • Cream together butter or margarine and sugar. Mix in eggs and vanilla. Stir together soda and 1 tablespoon warm water, and mix into the sugar mixture. Stir in flour mixture, apples, and strained raisins until well blended. Pour batter into prepared pan.
  • Bake for approximately 1 hour, or until a tester comes out clean. Cool in pan. Once cool, shake pan to loosen cake. Turn onto plate, and dust with confectioners' sugar.

A friend made this delicious cake and I had to have the recipe. I have not made it yet, but plan to in the very near future! It's from Cooking Light 1999...though I'm not sure what is "light" about it. Beware...it's rich and decadent. I guessed on the time to prepare...so if you find it to be very different please let me know and I will update!

2 cups sugar
1/2 cup vegetable oil
3 large eggs
2 cups all-purpose flour
2 teaspoons cinnamon

3 cups diced granny smith apples (peeling is optional)
1/2 cup chopped walnuts or 1/2 cup pecans, toasted

1 (12 1/4 ounce) bottle smucker's fat-free butterscotch ice cream topping (oh...there's the ONLY light ingredient ( )

Steps:

  • Preheat oven to 350.
  • To prepare cake, beat sugar, oil and eggs at medium speed until well blended.
  • Lightly spoon flour into dry measuring cups, level with a knife, pour into a small bowl.
  • Add cinnamon, baking soda, salt and nutmeg to flour and combine.
  • Add flour mixture to sugar mixture, beating just until blended.
  • Fold in apple and walnuts.
  • Pour batter into a 13x9 greased baking pan.
  • Bake at 350 for 55 minutes or until a wooden toothpick in the center comes out clean.
  • Run knife around outside edges and cool.
  • To prepare sauce, combine raisins (if using) and rum in a microwave safe bowl; let stand 5 minutes.
  • Stir in butterscotch topping and microwave on high for 45 seconds or until hot.
  • Serve cake with ice cream and pour sauce over cake.
  • Note: cake will keep for several days in an airtight container, but the crunchy top will soften.

1/2 cup unsweetened applesauce
1/4 cup egg substitute
1 cup all-purpose flour
1 teaspoon ground cinnamon

1 cup sliced peeled tart apple (about 1 medium)
1/2 cup coarsely chopped pecans
TOPPING:

  • In a small bowl, combine the sugar, applesauce and egg substitute. Combine the flour, cinnamon, baking powder, baking soda and salt; add to the applesauce mixture.
