CARAMEL APPLE COOKIES

It looks like a caramel apple but it's really a chocolate chip cookie. You can coat the caramel with your favorite type of nut, sprinkles or mini chips. I am often asked to bring these to parties.-Tammy Daniels, Batavia, Ohio

Number Of Ingredients 12

1/2 cup butter, softened
1/4 cup confectioners' sugar
1/4 cup packed brown sugar
1/4 teaspoon salt
1 large egg, room temperature
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup miniature semisweet chocolate chips
48 round toothpicks
1 package (11 ounces) Kraft caramel bits
2 tablespoons water
1 cup finely chopped pecans, peanuts or M&M minis

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugars and salt until light and fluffy. Beat in egg and vanilla. Gradually add flour and mix well. Stir in chips., Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Bake until set, 10-12 minutes. Immediately insert a round toothpick in center of each cookie. Remove to wire racks to cool completely., In a small saucepan, combine caramels and water. Cook and stir over medium-low heat until smooth. Holding a cookie by the toothpick, dip cookie in caramel mixture, turning to coat. Allow excess to drip off. Immediately dip the bottom and sides in pecans., Place on waxed paper. Repeat with remaining cookies, caramel mixture and pecans. Let stand until set.

1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground nutmeg
½ cup shortening
¾ cup white sugar
2 eggs
1 cup rolled oats
1 cup diced apple without peel
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the shortening and sugar. Beat in the eggs until well blended. Combine the flour, baking powder, cinnamon, nutmeg, and salt; stir into the sugar mixture until well blended. Fold in the walnuts, oats and apples. Drop dough by spoonfuls about 2 inches onto ungreased cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven. Let cool on wire racks.

1 cup packed brown sugar
2 eggs
1/4 cup unsweetened apple juice
1/4 teaspoon lemon extract
1-1/2 cups all-purpose flour
1 cup quick-cooking oats
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1-1/2 cups chopped peeled tart apple
1 cup raisins
1/2 cup chopped walnut

Steps:

  • In a large bowl, cream butter and brown sugar until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Add apple juice and lemon extract. Combine the flour, oats, cinnamon, baking soda, salt, nutmeg and cloves. Gradually add to creamed mixture and mix well. Whether you're having a dinner party, last-minute guests, or just want a spur-of-the-moment treat, always having homemade cookies on hand--instead of a box of store-bought cookies that will be stale within a week--is just about the coziest thing ever.

1/2 cup whole-wheat flour
1 1/2 cups all-purpose flour
1/3 cup old-fashioned oats
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
1/2 cup (1 stick) unsalted butter, softened
2/3 cup honey or agave nectar
1 large egg
1 teaspoon pure vanilla extract
1 apple, peeled, cored, and diced into small cubes (about 1 cup)
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine the flours, oats, baking soda, baking powder, salt, and cinnamon.
  • Using a stand mixer or hand mixer, beat the butter and honey on medium speed for 1 minute, or until creamy. Add the egg and vanilla and beat on medium speed until smooth, about 1 minute.
  • Slowly add the dry ingredients to the wet, mixing to incorporate as you go. Stir the apple and walnuts into the batter.
