This show-stopping, rich, moist, decadent chocolate cake is not for the faint of heart. It wins almost every time I have entered it in a cooking contest. This cake recipe translates well to cupcakes, as well.

2 cups all-purpose flour
2 cups white sugar
¾ cup unsweetened cocoa powder
2 teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
1 teaspoon instant espresso powder
1 cup milk
½ cup vegetable oil
2 eggs
2 teaspoons vanilla extract
1 cup boiling water
8 ounces bittersweet chocolate, finely chopped
¾ cup heavy whipping cream
1 tablespoon shortening
1 cup unsalted butter, at room temperature
2 cups confectioners' sugar
⅔ cup chocolate-hazelnut spread (such as Nutella®)
1 teaspoon vanilla extract
1 pinch kosher salt
2 tablespoons heavy whipping cream
4 ounces bittersweet chocolate, chopped
¼ cup heavy whipping cream
½ tablespoon shortening

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line the bottoms of three 8-inch cake pans with parchment paper and spray with baking spray.
  • Combine flour, sugar, cocoa, baking powder, baking soda, salt, and espresso powder in a large bowl and whisk until well combined. Add milk, vegetable oil, eggs, and 2 teaspoons vanilla extract to flour mixture and mix together using an electric mixer on medium speed until well combined. Reduce speed and carefully pour boiling water into cake batter. Beat on high speed for about 1 minute to add air to the batter. Distribute cake batter evenly between the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Remove from the oven and cool on a wire rack for 10 minutes. Run a table knife around the edges to loosen. Invert cakes carefully onto serving plates or cooling racks. Let cool completely. Trim tops of cakes to level, if necessary.
  • Place 8 ounces chopped chocolate in the heatproof bowl of a stand mixer and set aside. Whisk together 3/4 cup cream and 1 tablespoon shortening in a small saucepan and bring to a boil over medium heat. Remove from heat and pour boiling mixture over chocolate and whisk until melted and smooth. Cool to room temperature. Beat using an electric mixer on high speed until chocolate mixture is lighter in color and fluffy in texture, about 1 minute. Immediately proceed to assemble the cake before the the whipped chocolate fudge filling hardens, which makes it difficult to spread.
  • To assemble the cake, place 1 cooled cake layer with the trimmed side up on a cake pan or serving plate. Spread 1/2 the whipped chocolate fudge filling evenly on top. Add the next layer and spread remaining chocolate fudge filling on top. Top with third layer, trimmed side down.
  • To prepare the buttercream frosting, use a stand mixer affixed with the paddle attachment. Beat together butter and confectioners' sugar on low speed until well blended. Add chocolate-hazelnut spread and increase the speed to medium. Beat for 2 minutes. Add 1 teaspoon vanilla extract and kosher salt and whip for an additional 30 seconds. Add 2 tablespoons heavy whipping cream and beat until the frosting lightens slightly in color and texture, about 1 more minute.
  • Frost entire cake with buttercream frosting and chill for at least 1 hour.
  • For the chocolate drippys, place 4 ounces chopped chocolate in the heatproof bowl of a stand mixer and set aside. Whisk together 1/4 cup cream and 1/2 tablespoon shortening in a small saucepan and bring to a boil over medium heat. Pour boiling cream mixture over chocolate and whisk until melted and smooth. Let cool slightly, then pour mixture into a clean squeeze bottle. Let set until it has the consistency of thin ranch dressing. Squeeze on top of the frosted cake and allow to drip down the sides. Chill until chocolate is set. Decorate the top of the cake with assorted confections of your choice and serve at room temperature.

200g caster sugar
200g unsalted butter, softened
3 large eggs
200g self - raising flour
2 tbsp milk (optional)
250g nutella
250g nutella
sprinkles, hazelnuts and other sweets (optional)

Steps:

  • preheat your oven to gas mark 5/190 degrees / 375 F
  • and line your cake tin(s)
  • using a large bowl and wooden spoon cream the sugar and butter together until light and fluffy.
  • add the eggs in and beat until smooth. sift the flower and fold it into the mixture, if it feels dry add a little milk.
  • add the nutella and mix well.
  • put the mixture into your lined tin and use the back of a spoon to level the mixture out.
  • place your tin in the oven and check after 20 minutes, if cooked turn the cakes out onto a cooling rack,peel off the greaseproof paper, turn over and leave to cool before decorating!
  • melt 250g of nutell in the microwave for 5 seconds on high, pour over the cake and add sweets or nut to make it extra special!

12 tablespoons unsalted butter, softened, plus more for the pan
1 1/2 cups all-purpose flour, plus more for the pan
1 1/2 cups unhusked hazelnuts, toasted
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
Pinch kosher salt
1 cup sugar
1 teaspoon vanilla extract
3 large eggs
1/2 cup hazelnut paste
1 1/2 cups Nutella
1/2 cup mascarpone cheese or cream cheese
1 cup heavy cream, chilled

Steps:

  • For the hazelnut cake: Preheat the oven to 325 degrees F. Butter and flour a 9-inch round or square baking pan.
  • Pulse the hazelnuts until coarsely chopped in a food processor. Reserve. Combine the flour, cocoa powder, baking powder and salt together in a medium bowl.
  • Combine the butter, sugar and vanilla in a large mixing bowl, and then beat until the mixture is light and fluffy, using an electric mixer. Beat in the eggs one at a time. Add the hazelnut paste and beat until incorporated and there are no lumps. Gradually add in the flour mixture, stopping the beater when it is just combined.
  • Fold 1 cup of the chopped hazelnuts into the batter, reserving the rest for garnish.
  • Transfer the batter to the pan and bake until a toothpick comes out clean when inserted into the middle of the cake, 45 to 50 minutes. Let the cake cool 10 minutes, then remove from the pan and let cool completely.
  • For the nutella mousse: Mix the Nutella and mascarpone in a large bowl to combine. Beat the heavy cream in another large bowl, using a hand mixer, until just under soft peaks. Add in the Nutella mixture in 2 additions, and beat until you don't see any streaks. Place the mousse in a pastry bag fitted with a medium star tip. Refrigerate until ready to serve.
  • To serve and assemble the cake: Cut the cake into 3-inch squares or rounds and cut each in half equatorially. Pipe the mousse on both the bottom and top halves of each of the cakes, and then give each cake a light sprinkey-dink of the chopped hazelnuts.

Four-Layer Chocolate Birthday Cake With Milk Chocolate Ganache And Nutella Buttercream image

1/2 cup unsalted butter, room temperature, plus more for pan
2 cups all-purpose flour, plus more for pan
6 ounces bittersweet chocolate, chopped
3 large eggs, room temperature
1 cup buttermilk, room temperature
2 teaspoons vanilla extract
1 3/4 teaspoons kosher salt
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
2 1/2 cups (packed) light brown sugar
1/4 cups vegetable oil

Steps:

  • Preheat oven to 350˚. Butter two 9"-diameter cake pans and line bottoms with parchment paper rounds. Butter parchment and dust with flour, tapping out excess.
  • Heat chocolate, coffee, and ⅔ cup cocoa powder in a medium heatproof bowl set over a medium saucepan of barely simmering water (water should not touch bottom of bowl), stirring until chocolate melts and mixture is smooth. Let cool, then whisk eggs, buttermilk, and vanilla into chocolate mixture.
  • Using an electric mixer on low speed, mix salt, baking powder, baking soda, and 2 cups flour in a large bowl just to combine. Add brown sugar, oil, ½ cup butter, and ½ cup reserved chocolate mixture and beat on medium speed until flour is evenly distributed and mixture is smooth, about 2 minutes. Add remaining chocolate mixture in 2 additions, scraping down sides and bottom of bowl as needed and beating until smooth after each addition. Scrape batter into prepared pan and smooth top.
  • Bake cake until top is firm to the touch and a tester inserted into the center comes out clean, 30-40 minutes. Transfer cake pan to a wire rack and let cake cool in pan 10 minutes before turning out onto a wire rack. Let cool completely.
  • Using a serrated knife and moving it back and forth in long, even strokes, carefully halve cakes lengthwise.
  • Place 1 cake layer, cut side up, on a platter. Using a rubber spatula, spread one-third of ganache over cake, spreading to edges. Place another cake layer, cut side down, on top and spread another third of ganache over cake. Repeat process once more with another cake layer and remaining ganache; top with remaining cake layer (leave top bare). Chill cake 1-8 hour.
  • Spread buttercream all over top and sides of chilled cake, making decorative swirls and swooshes. Decorate with sprinkles, if desired.

5-MINUTE MICROWAVE NUTELLA® CAKE



5-Minute Microwave Nutella® Cake image

As a poor starving college student, this recipe is one of my favorites. It is quick, cheap, and 1-portion size. I actually make about 6 servings of the dry ingredients ahead of time, then add the liquid later. The dry is about 11 tablespoons. A whipping cream or ice cream topping completes this heavenly dessert. Can substitute peanut butter for hazelnut spread, but cut the portion to 1 1/2 tablespoon. You can increase cocoa powder and hazelnut spread to 3 tablespoons each and substitute almond extract for vanilla if desired.

Water, vegetable oil and whole eggs called for on cake mix box
1 1/4 cups Nutella® hazelnut spread
2 cups heavy whipping cream
3 tablespoons powdered sugar
1 teaspoon vanilla
2 tablespoons Nutella® hazelnut spread
1/4 cup chopped hazelnuts (filberts), toasted, skinned

Steps:

  • Heat oven to 350°F. Spray bottom of 13x9-inch baking dish with cooking spray.
  • In large bowl, beat Cake ingredients with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Pour into baking dish.
  • Bake 29 to 34 minutes or until toothpick inserted in center comes out clean. Remove from oven to cooling rack. Cool 5 minutes. With end of wooden spoon (1/2 inch in diameter), poke holes almost to bottom of cake every 1/2 inch, wiping spoon end occasionally with paper towel to reduce sticking.
  • In small bowl, soften 1 1/4 cups hazelnut chocolate spread set over a pan of boiling water for 1 to 2 minutes, stirring constantly. Evenly pour and gently spread over cake; working back and forth to fill holes. (Some hazelnut chocolate spread will remain on top of cake.) Rap baking dish on counter several times to help hazelnut chocolate spread flow down holes. Cool completely, at least 1 hour.
  • When ready to serve, in chilled large bowl, beat whipping cream, powdered sugar and vanilla with electric mixer on medium-high speed until stiff peaks form. Spread whipped cream evenly on top of cake. Spoon 2 tablespoons hazelnut chocolate spread into small resealable food-storage plastic bag; partially seal bag. Cut off tiny corner of bag; squeeze bag to drizzle over cake. Sprinkle chopped nuts on top. Store loosely covered in refrigerator.

1 (13 ounce) jar nutella
1/4 cup cocoa powder (or more or less...just until its a nice brown color and tastes chocolatey)
2 (13 ounce) bags chocolate chip cookies (DO NOT USE SOFT ONES. MUST USE HARD, CRUNCHY ONES. I used Chips Ahoy, or the store brand equivalent)
1/2 cup milk

Steps:

  • Whip the heavy cream until it starts to become thick (not fully whipped).
  • Add the entire jar of nutella and the cocoa powder to the cream, and beat thoroughly. There should be no lumps, and the cream should be whipped. make sure not to overbeat or the cream will separate.
  • Briefly dip each cookie in the half cup of milk, then put one layer of chocolate chip cookies on the bottom of an 8x8 inch square pan (fill in holes with pieces on each layer of cookies, doesn't have to be flat or attractive -- just needs to cover the layer. Since you're putting round cookies in a square pan, square off the edges by breaking the cookies in half to line the flat sides against the edge of the pan, then just fill in the rest).
  • Layer 1/3 of the cream mixture on top.
  • Repeat cookie and cream layers until you finish with the cream on top (there are three layers of cookies and three layers of cream).
  • Refrigerate overnight or at least 12 hours (it needs time to soften!).
  • This gets better over time, and can be stored for at least a week in the refrigerator - perfect for a large party, to get dessert out of the way far ahead of time!

175g softened butter
175g golden caster sugar
3 eggs
200g self-raising flour
1 tsp baking powder
2 tsp ground cinnamon
4 tbsp milk
4 rounded tbsp Nutella or own-brand chocolate hazelnut spread
50g hazelnuts , roughly chopped

Steps:

  • Preheat the oven to 180C/gas 4/ fan 160C. Butter and line the base of a 20cm round cake tin.
  • Put the butter, sugar, eggs, flour, baking powder, cinnamon and milk into a bowl. Beat with a wooden spoon for 2-3 minutes, or with an electric hand mixer for 1-2 minutes, until light and fluffy.
  • Tip three quarters of the mixture into the tin, spread it level, then spoon the Nutella on in four blobs. Top with the remaining mixture, swirl a few times with a skewer, then smooth to cover the Nutella.
  • Sprinkle with the nuts. Bake for 1 hour to 1 hour 10 minutes, until risen, nicely browned, feels firm to touch and springs back when lightly pressed (cover with foil if it starts to brown too quickly). Cool in the tin for 10 minutes, then turn out, peel off the paper and cool on a wire rack. Wrap tightly in double thick foil to keep fresh for up to a week.

1 1/4 cups (2 1/2 sticks) unsalted butter, room temperature, cut into pieces

Steps:

  • CAKE: Preheat oven to 350˚F. Butter two 9"-diameter cake pans and line bottoms with parchment paper rounds. Butter parchment and dust with flour, tapping out excess. Heat chocolate, coffee, and ⅔ cup cocoa powder in a medium heatproof bowl set over a medium saucepan of barely simmering water (water should not touch bottom of bowl), stirring until chocolate melts and mixture is smooth. Let cool, then whisk eggs, buttermilk, and vanilla into chocolate mixture. Using an electric mixer on low speed, mix salt, baking powder, baking soda, and 2 cups flour in a large bowl just to combine. Add brown sugar, oil, ½ cup butter, and ½ cup reserved chocolate mixture and beat on medium speed until flour is evenly distributed and mixture is smooth, about 2 minutes. Add remaining chocolate mixture in 2 additions, scraping down sides and bottom of bowl as needed and beating until smooth after each addition. Scrape batter into prepared pan and smooth top. Bake cake until top is firm to the touch and a tester inserted into the center comes out clean, 30 to 40 minutes. Transfer cake pan to a wire rack and let cake cool in pan 10 minutes before turning out onto a wire rack. Let cool completely. Using a serrated knife and moving it back and forth in long, even strokes, carefully halve cakes lengthwise. GANACHE: Place chocolate in a medium bowl. Bring cream and salt to a simmer in a small saucepan over medium-low heat. Pour over chocolate; let sit 10 minutes, then whisk gently until chocolate is melted and mixture is smooth and glossy. Let ganache cool, 30 to 45 minutes. Using an electric mixer on medium speed, beat butter into ganache until mixture is light and fluffy and has turned matte, about 3 minutes. Place 1 cake layer, cut side up, on a platter. Using a rubber spatula, spread one-third of ganache over cake, spreading to edges. Place another cake layer, cut side down, on top and spread another third of ganache over cake. Repeat process once more with another cake layer and remaining ganache; top with remaining cake layer (leave top bare). Chill cake 1 to 8 hours. BUTTERCREAM: While cake is chilling, beat egg yolks, egg, and salt in the bowl of a stand mixer fitted with the whisk attachment until mixture is pale and thick and falls back onto itself in a slowly dissipating ribbon, about 5 minutes. Meanwhile, bring sugar and 3 tablespoons water to a boil in a small saucepan over medium heat, stirring until sugar is dissolved. Clip thermometer to the side of saucepan and boil, swirling pan (do not stir), until thermometer registers 238˚F. Immediately remove from heat. Reduce mixer speed to low and gradually stream hot sugar syrup into eggs aiming for where the egg meets the side of the bowl (this will prevent hot sugar from splattering). Increase speed to high and beat mixture until light and fluffy and sides of bowl are cool to the touch, 5 to 8 minutes. Add butter a piece at a time, beating to thoroughly incorporate before adding the next piece and scraping down sides of bowl often. Add Nutella and vanilla and beat, scraping down sides and bottom of bowl, until mixture is smooth and homogenous. Spread buttercream all over top and sides of chilled cake, making decorative swirls and swooshes. Decorate with sprinkles, if desired. Do Ahead: Cake can be assembled 1 day ahead. Chill uncovered.

1 butter pound cake, loaf pan type (store bought or homemade)
6 ounces cream cheese, softened
1/3 cup powdered sugar
1/2 cup toffee pieces, chopped fine (optional)
3/4 cup nutella (or chocolate icing)

Steps:

  • Cut pound cake in half horizontally (or in 3 even horizontal slices and make it even more fanciful. Just half the filling for each layer). Using an electric mixer, beat cream cheese and powdered sugar together until light and fluffy.
  • Spread cream cheese on bottom piece of cake. Sprinkle with toffee bits (if using) and gently press the pieces into the cream cheese. Spread the other half of the pound cake with Nutella.
  • Place Nutella cake over top of cream cheese side (like a sandwich). Immidiately wrap cake tightly in foil, place back into loaf pan, and refrigerate 2 hrs or overnight.
  • When ready to serve, cut into 6 wide slices then cut the slices in half (making 12 pieces total).

1 tablespoon cocoa powder
¼ teaspoon baking powder
3 ½ tablespoons almond milk, divided
½ teaspoon vanilla extract
3 tablespoons chocolate-hazelnut spread (such as Nutella®)

Steps:

  • Stir all-purpose flour, coconut flour, cocoa powder and baking powder together in a small bowl; add 3 tablespoons almond milk, vanilla extract, Nutella® and 1/2 tablespoon milk, respectively, stirring between each addition until you finally have a smooth batter. Transfer batter to mug.
  • Cook in microwave for 1 minute. Allow to rest for about 5 seconds and continue cooking until a toothpick inserted in the center comes out clean, about 30 seconds more.

  • 1. Preheat the oven to 325°F Lightly grease and flour a 9-by-5 inch loaf pan, tapping out any excess flour. In a glass measuring cup, lightly beat the eggs with the vanilla. In a medium bowl, whisk the 1 1/2 cups of flour with the baking powder and salt.
  • 2. In a large bowl, using a hand held mixer, beat the butter with the sugar at medium-high speed until fluffy, about 3 minutes. With the mixer at medium-low speed, gradually beat in the egg mixture until fully incorporated. Add the flour mixture in 3 batches, beating at low speed between additions until just incorporated. Continue to beat for 30 seconds longer.

1 1/2 cups all-purpose flour, plus more for the pan
1 1/2 cups unhusked hazelnuts, toasted (see page 17)
1 cup sugar
1/2 cup hazelnut paste
1 teaspoon vanilla extract
3 large eggs
1 teaspoon baking powder
Pinch of kosher salt
1/2 cup unsweetened cocoa powder
for the mousse
1 1/2 cups Nutella
1/2 cup mascarpone or cream cheese
1 cup heavy cream, chilled

Steps:

  • FOR THE CAKE
  • Preheat the oven to 325°F.
  • Butter and flour a 9-inch round or square baking pan.
  • In a food processor, pulse the hazelnuts until coarsely chopped. Reserve.
  • In a large mixing bowl, combine the butter, sugar, hazelnut paste, and vanilla. Using an electric mixer, beat until the mixture is light and fluffy.
  • Beat in the eggs one at a time.
  • Add the baking powder, salt, and cocoa and beat to combine.
  • Gradually add the flour, stopping the beater when it is just combined.
  • Fold 1 cup of the chopped hazelnuts into the batter, reserving the rest for garnish.
  • Transfer the cake batter to the prepared pan and bake for 25 to 30 minutes, or until a toothpick comes out clean when inserted into the middle of the cake.

  • FOR THE MOUSSE
  • In a large mixing bowl, combine the Nutella and mascarpone.
  • In another large bowl, beat the heavy cream to soft peaks (see page 234)-you can use an electric beater here or just a whisk and good old-fashioned elbow grease.
  • Add a spoonful of the whipped cream to the Nutella mixture and stir until you don't see any streaks.
  • Using a rubber spatula, fold a third of the remaining whipped cream into the Nutella mixture. To do this, lift the mixture gently from underneath, bring the spatula up, turn it over, and fold the mixture over as you rotate the bowl slowly. You want to do this gently; the point is to keep it fluffy and not squish the air out of the whipped cream. Repeat this process two more times with the remaining whipped cream. You're done when you should have a fluffy, homogeneous mixture.
  • TO ASSEMBLE THE CAKES
  • Cut the cake into 3-inch squares or rounds and cut each of these in half equatorially.
  • Schmear the Nutella mousse on both the bottom and the top half of each of the hazelnut cakes, then give each of the cakes a light sprinkey-dink of the chopped hazelnuts. Place the top half back on the bottom and serve immediately.

3 1/2 cups whole milk
1/2 cup Nutella
12 oz. cool whip
2 (14.4 oz) packages chocolate graham crackers
36 about 36 fresh strawberries, washed, stem removed and sliced length wise
3 Tbsp. butter
3 Tbsp. milk
3 Tbsp. cocoa
2 Tbsp. Nutella
1 cup powdered sugar

Steps:

  • Blend milk and vanilla pudding packets for about 2 minutes. Stir in Nutella until evenly combined. Fold in Cool Whip. In a 9×13 pan, Layer graham crackers to cover entire bottom of pan. You may need to cut and shape the crackers to fit nicely. Poor half of pudding/Nutella/cool whip mixture on top and level. Arrange half of the sliced strawberries to cover entirely over the pudding mixture. Put another layer of graham crackers to cover entire surface. Cut and shape crackers accordingly. Put the second half of pudding/cool whip mixture on top and level. Arrange second half of the sliced strawberries to cover entirely over the pudding mixture. Put the final layer of graham crackers on top with bumpy side down. This will help the top look more smooth when you go to put the frosting on top. Once again, cut and shape crackers accordingly to avoid pits and cracks. FOR THE FROSTING: Microwave butter and milk just enough so that they are melted together. You do not need to boil it. Add cocoa, Nutella and powdered sugar and blend together. This will be a runnier frosting/glaze.
