½ cup butter, softened
1 (3 ounce) package cream cheese, softened
1 cup all-purpose flour
1 egg
¾ cup packed brown sugar
1 tablespoon butter, melted
1 teaspoon vanilla extract
3 tablespoons chopped walnuts
3 tablespoons chopped fresh cranberries

Steps:

  • In a medium bowl, stir together the butter and cream cheese. Mix in the flour until well blended. Cover and refrigerate for 1 hour.
  • While the dough chills, make the filling. In a medium bowl, whisk together the egg, brown sugar, melted butter and vanilla. Stir in the cranberries and walnuts.
  • Preheat the oven to 325 degrees F (160 degrees C). Roll the dough into 1 inch balls. Press the balls into the cups of mini muffin pans so that the dough covers the bottom and sides. Fill each one with a generous teaspoon of the filling.
  • Bake for 25 to 30 minutes in the preheated oven, until the edges of the tarts are lightly browned.

1/2 cup butter, softened
1 cup sugar
1 large egg, room temperature
4 teaspoons grated orange zest
1/4 cup orange juice
2 tablespoons evaporated milk or 2% milk
3 cups all-purpose flour
3 teaspoons baking powder
1/4 teaspoon salt
FILLING:
1 can (14 ounces) whole-berry cranberry sauce
1/2 cup sugar
2 tablespoons orange juice
1 cup chopped walnuts
4 ounces white baking chocolate, melted

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg until blended. Beat in orange zest, orange juice and milk. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture., Divide dough into 3 portions. On a lightly floured surface, shape each into a 10-in.-long roll. Wrap securely; refrigerate overnight or until firm., For filling, in a small saucepan, combine cranberry sauce, sugar and orange juice. Bring to a boil, stirring constantly; cook and stir 2 minutes. Remove from heat; cool completely. Stir in walnuts., Preheat oven to 375°. Unwrap each portion of dough and cut crosswise into 16 slices. Press onto bottoms and up the sides of greased mini-muffin cups. Fill each with 2 teaspoons cranberry mixture., Bake 8-10 minutes or until edges are light golden. Cool in pans 10 minutes. 375g pack sweet pastry
200g dark chocolate , broken into pieces
2 tbsp double cream
1 tbsp Disaronno or brandy (optional)
2 large eggs , plus 1 yolk
50g caster sugar
85g macadamia nut , chopped
icing sugar , to decorate

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Roll out the pastry to the thickness of a £1 coin and line 4 tartlet cases (about 10 x 3cm). Trim the excess off by rolling a rolling pin over the top of the cases to make a neat edge. Firm up in the freezer for 30 mins. Line with greaseproof paper and baking beans, then cook on a baking sheet for 15 mins. Remove the beans and paper, then cook for 3-5 mins more until the pastry is pale golden and biscuity.
  • While the pastry is cooking, melt the chocolate, cream and alcohol, if using, in a heatproof bowl over a pan of barely simmering water. Meanwhile, whisk the eggs, yolk and sugar until light and frothy. Briefly whisk the melted chocolate into the eggs and fold through most of the chopped macadamia nuts.
  • Divide the chocolate mixture between the cases and scatter with the remaining nuts. Uncooked tarts can now be frozen. Bake for 12 mins or 20 mins from frozen. The tops of the tarts will soufflé up and they should still be soft in the middle. Serve sprinkled with icing sugar.

1/2 cup butter, softened
3 ounces cream cheese, softened
1 cup all-purpose flour
FILLING:
1-1/2 cups packed brown sugar
2 tablespoons butter, melted
2 large eggs, lightly beaten
2 teaspoons vanilla extract
2/3 cup finely chopped cranberries
1/3 cup chopped pecans

Steps:

  • In a small bowl, beat butter and cream cheese until creamy; gradually add flour and mix well. Cover and refrigerate for 1 hour or until easy to handle. , Cut dough into 12 portions. Press onto the bottom and all the way up the sides of greased muffin cups. In a large bowl, combine the brown sugar, butter, eggs and vanilla. Stir in the cranberries and pecans. Spoon into prepared crusts., Bake at 350° for 25-30 minutes or until edges are golden brown. Cool for 5 minutes before removing from pan to a wire rack to cool completely. Store in the refrigerator.

2 teaspoons coconut oil, melted, plus more for pan
2 cups pecans, walnuts, or almonds
5 tablespoons agave syrup (nectar), divided
2 tablespoons whole wheat flour
1 teaspoon ground ginger
1/2 teaspoon fine sea salt
1 pound fresh strawberries, hulled, sliced
1 teaspoon fresh lemon juice
1 vanilla bean, split length wise
Ingredient info: Agave syrup and coconut oil are available at natural foods stores and some supermarkets.
Special Equipment
A 12-cup muffin pan

Steps:

  • Lightly brush muffin cups with coconut oil. Set aside. Pulse nuts in a food processor until coarsely ground. Add 3 tablespoons agave syrup, flour, ginger, salt, and 2 teaspoons coconut oil. Process until coarse dough forms. Gather into a ball. Press 1 heaping tablespoon dough firmly onto bottom and up sides of each muffin cup. Chill for 1 hour.
  • Preheat oven to 350°F. Bake crusts until firm and golden around edges, 8-10 minutes. Let cool in pan on a wire rack for at least 10 minutes before removing. DO AHEAD: Can be made 1 day ahead. Let cool completely; store airtight at room temperature.
  • Place strawberries, lemon juice, and remaining 2 tablespoons agave syrup in a medium bowl; scrape in vanilla seeds (save bean for another use). Stir well, crushing a few berries to release their juices.
  • Using a spatula or butter knife, remove tart shells from pan and fill with strawberry mixture. Serve immediately.

1 sheet frozen puff pasty, thawed
All-purpose flour (for surface)
4 tablespoons peanut or other nut butter
4 tablespoons apple butter
1 pound firm baking apples (about 2 large), peeled, cored, sliced into 1/2-inch wedges
1/4 cup chopped salted, roasted peanuts or other nut
2 tablespoons unsalted butter, cut into pieces
Sugar (for sprinkling)
1 large egg

Steps:

  • Preheat oven to 425°F. Roll out puff pastry on a lightly floured surface into a long rectangle. Cut in half crosswise (halves should be almost square). Transfer to a parchment-lined rimmed baking sheet; prick with a fork in several places. Using a small offset spatula, spread 2 Tbsp. peanut butter in the center of each half to make a 5" round, then spread 2 Tbsp. apple butter over top of each nut-butter round. Pile up apples in the center of each puff pastry and top with peanuts. Dot fruit with butter and sprinkle with sugar.
  • Beat egg and 1 tsp. water in a small bowl, then brush pastry with egg wash and fold up edges around apples, leaving the center open. Press along the folded edges to lightly seal. Brush outside of pastry with egg wash and sprinkle with more sugar. Let chill in freezer 10 minutes.
  • Bake tarts until puff pastry is golden, 15-20 minutes. Reduce oven temperature to 350°F and continue to bake until pastry is deep golden brown and apples are tender, 20-25 minutes.
  • Do Ahead
  • Tarts can be baked 6 hours ahead. Store uncovered at room temperature.

All-purpose flour, for work surface
Sweet Pastry Dough
3/4 cup (3 ounces) hulled pumpkin seeds
3/4 cup whole unblanched almonds (3 ounces)
3/4 cup whole unsalted macadamia nuts (3 ounces)
3/4 cup blanched hazelnuts (3 ounces)
1 cup plus 2 tablespoons heavy cream
1/4 teaspoon coarse salt
3/4 cup (1 1/2 sticks) unsalted butter
1 vanilla bean
1 cup plus 2 tablespoons water
1 1/2 cups granulated sugar
3 tablespoons light corn syrup

Steps:

  • Preheat oven to 350 degrees. Place twelve 4-inch tart pans with removeable bottoms on a baking sheet. Set aside.
  • On a lightly floured work surface, roll out dough to a 1/8-inch thickness. Cut out twelve 6-inch circles of dough with a sharp paring knife, using an overturned 6-inch bowl as a guide, if necessary. Press dough into tart pans; trim excess. Dock tart shells by piercing the bottom all over with a fork. Chill in refrigerator until ready to fill; set aside.
  • Spread pumpkin seeds on a rimmed baking sheet; toast, shaking pan halfway through, until lightly browned, 8 to 10 minutes. Spread nuts in separate rows on another rimmed baking sheet; toast, shaking pan until halfway through, until lightly browned, 15 to 20 minutes. Let seeds and nuts stand until cool.
  • Rough chop macadamia nuts. Combine nuts in a medium bowl; set aside. In a different medium bowl, combine heavy cream and salt; set aside.
  • Melt butter in a small saucepan set over medium-high heat. Using a sharp paring knife, split vanilla bean lengthwise. Scrape out pulp and seeds; add scrapings and pod to melted butter. Swirl pan so butter does not burn; butter will bubble as it brown. Continue cooking until bubbles subside and butter is dark brown and fragrant, 3 to 5 minutes. Remove vanilla bean; pour butter over cream mixture, whisking to combine.
  • In a medium saucepan set over medium-high heat, combine water, sugar, and corn syrup; bring to a boil without stirring. Use a pastry brush dipped in water to wash down the sides of the pan, dissolving any sugar granules. Allow caramel to cook, swirling pan to ensure even coloring, until it reaches 268 degrees on a candy thermometer, 10 to 15 minutes. Remove from heat, and immediately stir in seeds, nuts, and cream mixture; mixture may spatter. Return pan to heat; simmer on medium-low, stirring occasionally, until mixture registers 210 degrees and is a pale caramel color, 3 to 5 minutes. Remove from heat; pour into a heatproof bowl and cool until barely warm, 15 to 20 minutes.
  • Fill each tart shell with caramel mixture. Place tarts on a rimmed baking sheet, spaced 1/2-inch apart. Bake, rotating sheets halfway through, until crust is nicely browned, about 25 minutes.

Steps:

  • Make shells by mixing the butter, cream cheese and flour until dough is formed. (You can either mix by hand or use a food processer). Roll dough into balls, approximately 1", and press into ungreased mini muffin tins. Be sure to bring dough up sides of each muffin cup or filling will stick to pan.
  • Make filling by mixing the eggs, brown sugar, vanilla, and walnuts. Place 1 Tbs. of filling into each muffin cup.
  • Bake at 375F for 30 minutes or until golden brown.
  • Cool in pan 10 minutes, then remove tarts and cool completely on wire rack. Dust with powered sugar before serving.

  • Roll out the pastry and use to line 6, 10cm/4in tartlet tins.
  • Divide the pecan nut halfs between the pastry cases.
  • Combine the eggs with the butter and add the golden syrup and vanilla essence
  • Sift over the caster sugar and flour, and carefully blend.
  • Fill the pastry cases with the mixture and leave until the the nuts rise to the surface.
  • Bake for 35 -40 minutes until a skewer comes out clean. Cool for 15 minutes before turning onto a wire rack.

2 Tbsp. sugar

3 whole eggs
1 egg yolk
1 cup sugar
1/3 cup lemon juice
4 oz. (half of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cut into 6 pieces
1 pt. (2 cups) fresh raspberries

Steps:

  • Heat oven to 350°F.
  • Combine nuts, matzo meal, 2 Tbsp. sugar and butter until well blended; press onto bottom and up side of 9-inch tart pan. Bake 15 min. or until lightly browned. Cool completely.
  • Meanwhile, beat whole eggs and egg yolk in medium saucepan with whisk until well blended. Gradually beat in 1 cup sugar until well blended. Stir in lemon juice; cook on low heat 8 min. or until mixture is thick enough to coat back of spoon, stirring constantly. Remove from heat.
  • Add cream cheese, 2 pieces at a time, beating after each addition until cream cheese is completely melted and mixture is well blended. Pour into crust.
  • Refrigerate 4 hours or until firm. Top with raspberries just before serving.
