LITTLE NUT CUPS

I learned this recipe from a childhood friend whose mother made these for family parties and get-togethers. They are a great Christmas or special occasion cookie. My Mother makes hers with walnuts, I prefer pecans for a mini pecan pie taste.

1 cup butter, softened
2 (3 ounce) packages cream cheese
½ cup white sugar
2 cups all-purpose flour
2 teaspoons butter, melted
2 eggs
½ teaspoon vanilla extract
2 cups chopped pecans
1 ½ cups brown sugar
½ cup honey

Steps:

  • In a medium bowl, mix together the butter, cream cheese and sugar until smooth. Stir in the flour and mix thoroughly. The dough should be somewhat firm. Roll into 36 small balls, place them on a plate and refrigerate for one hour.
  • Make the filling in a medium bowl. Beat the eggs, melted butter, vanilla and brown sugar until smooth and well blended. Stir in the nuts. Preheat oven to 375 degrees F (190 degrees C). Press the chilled dough balls into the bottom and up the sides of tart pans or mini muffin cups. Fill each shell with filling almost to the top. Use a squeeze top honey container if you have one, to drip about 1/2 teaspoon of honey onto the top of each cup.
  • Bake for 15 to 20 minutes in the preheated oven, until crust is lightly browned. Allow to cool in the tins completely before removing.

This Nut Cups recipe is from my Great Aunt Millie. Alot of my families recipes were passed down from generation to generation. Several years ago, I revised my grandmothers recipes and added more of my own and my families and put them into a cookbook for safe keeping. This is just one of the many dessert recipes that has been handed down. I hope you enjoy them.

1/4 lb margarine
1 (3 ounce) package soft cream cheese
1 cup flour, sifted
3/4 cup chopped pecans
1 egg
3/4 cup brown sugar
1 tablespoon melted butter
1 teaspoon vanilla extract
1 dash salt

Steps:

  • Blend margarine and soft cream cheese until creamy.
  • Add 1 cup sifted flour.
  • Divide mixture into 16 balls and press into tiny muffins tins.
  • Mix filling ingredients together.
  • Fill nut cups with the filling mixture.
  • Bake at 350 degrees Fahrenheit for 15 minutes.
  • Reduce heat to 250 degrees Fahrenheit and bake for 10 minutes or until done.
  • Let stand a few minutes before removing from tins.

This is a family recipe of an old dear friend of mine. She was kind enough to share her recipe. These nut cups are delicious! So good with a cup of tea or coffee! Enjoy!

3 oz cream cheese

NUT FILLING
1 Tbsp melted butter
3/4 c brown sugar
1 beaten egg
1 c chopped nuts (walnuts or pecans)

Steps:

  • 1. With your hands, work the first three ingredients together until well mixed. Make 24, walnut size balls. Press into mini muffin pans.
  • 2. Now for the filling. Mix the filling ingredients together. Fill each cup with 1 teaspoon of filling.
  • 3. Bake at 350 degrees for 20 to 25 minutes. Let cool in pans for a bit, remove, and enjoy!

1 cup pitted dates
1 cup creamy cashew butter or peanut butter
1/2 cup baking cocoa
1/4 cup coconut oil, melted
2 teaspoons honey
Chopped almonds, optional

Steps:

  • Pulse almonds and dates in a food processor until mixture starts to hold together when pressed. Spoon nut mixture into 12 paper-lined muffin cups; press into bottom. Gently spread cashew butter over nut mixture. In a small bowl, whisk together cocoa, coconut oil and honey; pour over nut butter. If desired, top with chopped almonds. Refrigerate, covered, until chocolate is set, about 1 hour.

3/4 cup whole almonds with skins
1 cup all-purpose flour
1/2 teaspoon salt
6 ounces fine-quality bittersweet chocolate (not unsweetened)
1/2 stick (1/4 cup) unsalted butter
1/2 cup sugar
2 large eggs
For caramel filling
3/4 cup sugar
1/4 cup light corn syrup
2 tablespoons heavy cream
1/2 teaspoon vanilla
1/4 teaspoon salt

Steps:

  • Make shells:
  • Preheat oven to 350°F.
  • In a shallow baking pan toast almonds in one layer in middle of oven until fragrant, about 12 minutes, and cool. In a food processor finely grind 1/2 cup almonds with flour and salt. Reserve remaining almonds for topping brownie cups. Finely chop chocolate. In a small saucepan melt butter and remove pan from heat. Add chocolate and stir until smooth. In a bowl stir together chocolate mixture, almond mixture, sugar, and eggs until combined well. Chill dough until just firm, about 30 minutes.
  • Roll level tablespoons dough into balls and lightly press balls into thirty-two 1/8-cup mini-muffin cups (1 3/4 inches across top and 3/4 inch deep). With thumb make a 1/3-inch-deep indentation in center of each ball. Chill shells 1 hour.
  • Make filling:
  • In a dry 3-quart heavy saucepan cook sugar over moderately low heat, stirring slowly with a fork (to help sugar melt evenly), until melted and pale golden. Cook caramel, without stirring, gently swirling pan, until deep golden. Remove pan from heat and carefully pour corn syrup and cream down side of pan (mixture will vigorously steam and caramel will harden). Simmer mixture, stirring, until caramel is dissolved and stir in vanilla and salt. Transfer caramel filling to a glass measure and cool 10 minutes.
  • Carefully pour warm filling into each shell until it is level with top of shell (do not overfill or filling will overflow during baking). Chill brownie cups, loosely covered, at least 2 hours and up to 1 day.
  • Preheat oven to 350°F.
  • Bake brownie cups in middle of oven 10 minutes, or until caramel just starts to bubble. Transfer pans to a rack and top brownie cups with reserved almonds. Cool brownie cups completely in pans. With a sharp thin knife loosen brownie cups and lift out of pans. Brownie cups keep in an airtight container at cool room temperature 5 days.

3 tablespoons honey
1 tablespoon cornstarch
1 cup half-and-half (or light cream)
2 beaten egg yolks
1 cup ground walnuts (or pecans)
4 teaspoons granulated sugar
4 sheets frozen phyllo dough, thawed according to package directions (17 x 12 inches)
3 tablespoons butter or 3 tablespoons margarine, melted
1 ounce mexican chocolate, cut up (or semisweet)
1 tablespoon butter or 1 tablespoon margarine
3/4 cup sifted powdered sugar
1/2 teaspoon vanilla
2 -3 teaspoons hot water
cocoa powder
1/2 cup whipping cream
1/2 teaspoon vanilla
grated semisweet chocolate (optional)
cinnamon

Steps:

  • In a small heavy saucepan stir together honey and cornstarch. Add half and half or light cream. Cook and stir over medium heat until mixture is thickened and bubbly. Cook and stir for 2 more minutes . Remove from heat. Gradually stir some of the hot mixture into the egg yolks. Return all to saucepan. Bring to a gentle boil; reduce heat. Cook and stir for 2 minutes longer. Move to a small bowl. Cover surface with clear plastic wrap. Chill.
  • In a bowl combine ground walnuts and granulated sugar. Set aside. Unfold phyllo. Place one sheet of phyllo on work surface; brush with some of the 3 tablespoons melted margarine or butter. Sprinkle evenly with one-third of the nut mixture. Repeat brushing, sprinkling, and layering 2 times. Cover with remaining sheet of phyllo; brush top with melted margarine or butter. Trim edges. Cut phyllo stack crosswise in fourths, and then lengthwise in thirds, to form twelve 4-inch squares.
  • Gently press phyllo squares into twelve greased 2-1/2-inch muffin cups, allowing edges to extend upward.
  • Bake in a 350*F. oven for 10-15 minutes or until golden. Cool completely on a wire rack. Carefully remove cups from pan. (If desired, cups may be baked ahead of time, then placed in a rigid plastic container and frozen up to 1 week. To thaw: let stand at room temperature 20-30 minutes.)
  • To serve:
  • In a small, heavy saucepan melt the 1 ounce chocolate and the 1 tablespoon margarine or butter over low heat, stirring until smooth, Remove from heat. Stir in the powdered sugar and the first 1/2 teaspoon vanilla. Add hot water, 1 teaspoon at a time, until it reaches drizzling consistency. Lightly drizzle melted chocolate on dessert plates. Sift cocoa powder over chocolate. (Chocolate can also be drizzled over edges and insides of cups.)
  • In a small, chilled mixing bowl, beat the whipping cream and remaining 1/2 teaspoon vanilla with an electric mixer on medium speed until soft peaks form; fold in chilled egg yolk mixture. Spoon cream into each phyllo cup. Top each with grated chocolate, if desired.Sprinkle with cinnamon if desired. Serve immediately. Makes 12 servings.

300g dark or milk chocolate , chopped
125g butter , softened and chopped
250g icing sugar
140g nut butter (I used smooth peanut butter, hazelnut butter and pistachio nut butter - but you can use just peanut butter if you prefer)
25g nuts (I used peanuts, hazelnuts and pistachios)
flaky sea salt (optional)
about 24 foil petit four cases
2 mini muffin tins
3 piping bags
gold leaf and a paintbrush, to decorate (optional - see tip)

Steps:

  • Tip half the chocolate into a bowl set over a pan of simmering water. Once melted, remove from the heat and stir in the rest of the chocolate. Put the petit four cases into the holes of the mini muffin tins. Put 1 tsp of the melted chocolate in each one, then pick up a petit four case in your hand and swirl it gently to get the chocolate to coat the sides. Repeat with all the cases, leaving about a third of the chocolate in the bowl. Pop the tins in the fridge to firm up while you make the fillings.
  • Put the butter in a large bowl with the icing sugar. Beat well with electric beaters or a wooden spoon until light and creamy. Divide the mixture into three bowls, then stir the peanut butter into one, hazelnut butter into the second and pistachio butter into the third (if using). Transfer the fillings to three piping bags.
  • Take the chocolate cups out of the fridge and fill with the nut mixtures. If your reserved chocolate has hardened, melt again as before. Once melted, carefully spoon it over the top of each cup to seal in the nut butters.
  • Top each cup with with a whole nut (or a nut coated in gold leaf, a pinch of coarse sea salt - or any combination). Chill for at least 2 hrs. Will keep in the fridge for 1 week (see tip).

There are few treats more decadent than rich and creamy chocolate nut butter cups. Instead of reaching for the store-bought kind, it's simple to make these delicious delights at home, using Ghirardelli® 72% Cacao Dark Chocolate Chips.

1 cup Ghirardelli 72% Cacao Dark Chocolate Chips, divided
⅓ cup creamy natural peanut butter
¼ teaspoon vanilla extract
Pinch of salt, plus extra for topping
2 tablespoons Sugars, powdered

Steps:

  • Line a muffin tin with paper liners.
  • In a medium microwave safe bowl, melt 3/4 cup of Ghirardelli 72% Cacao Dark Chocolate Chips, by heating in microwave at 30 second increments and stirring in between, until completely melted.
  • Add remaining 1/4 cup of Ghirardelli 72% Cacao Dark Chocolate Chips to melted chocolate and stir. Set this aside to cool slightly while preparing the filling.
  • In a small bowl, mix together peanut butter, vanilla extract, salt, and powdered sugar or sweetener of choice. Set aside.
  • If the Ghirardelli 72% Cacao Dark Chocolate Chips haven't fully melted, return to microwave and heat in 5 second increments, stirring in between, until smooth. Be careful not to overheat.
  • Spoon about 2 teaspoons' worth of melted chocolate into the bottom of the paper liner. Gently tilt and swirl chocolate to coat the bottom and 3/4 inch up the sides of the paper liner. Repeat with remaining paper liners and place in fridge until chocolate is set, about 5 minutes.
  • Add about 2 teaspoons of peanut butter filling into the cavity of each chocolate cup, spread to form an even layer.

3/4 cup shelled pistachios
1/2 cup sugar
1 teaspoon ground cinnamon
4 sheets phyllo dough, (14 inches x 9 inches)
1/4 cup butter, melted
SAUCE:
3/4 cup butter, cubed
3/4 cup packed brown sugar
3 medium firm bananas, sliced
1/4 teaspoon ground cinnamon
3 to 4 cups vanilla ice cream

Steps:

  • In a food processor, process pistachios and sugar until very finely chopped. Transfer to a bowl; stir in cinnamon. Cut each sheet of phyllo dough into six 4-in. squares (discard trimmings). Stack squares and cover with plastic wrap. , One at a time, brush each square with melted butter and sprinkle with a heaping tablespoonful of pistachio mixture. Stack three squares, turning each one at an angle so the corners are not aligned. Press each stack onto the bottom and up the sides of a greased 8-oz. custard cup. Bake at 350° for 15-20 minutes or until golden brown. Cool for 5 minutes before removing to a wire rack to cool completely., For sauce, melt butter and brown sugar in a saucepan. Bring to a boil; reduce heat. Gently stir in bananas and cinnamon; heat through. Fill phyllo cups with ice cream; top with banana sauce. Serve immediately.

These are an old fashioned tart like baked 'cup' with a delightful nut filling and a touch of jam on the bottom. An old favorite that I haven't made for some time - memory fails as to how many tart cups it makes so at this time the servings a guesstimate. . (will be making them soon and come back to add just how many tarts I get) Not having a cook to question for this recipe I use three beaten egg whites for my filling.

3/4 cup butter, plus
3 tablespoons butter
2 3/4 cups pre sifted all-purpose flour
2/3 cup confectioners' sugar (powdered icing sugar)
4 egg yolks
1 teaspoon vanilla
3 eggs (separated)
2/3 cup confectioners' sugar (powdered icing sugar)
1 teaspoon vanilla
4 ounces walnuts (ground)
1/2 cup jam

Steps:

  • In bowl mix together to make dough - butter, flour, confectioners sugar, egg yolks and vanilla; on floured board roll out dough 1/4 inch thick.
  • Cut out circles to fit into individual tart pans.
  • Bake in a 400 degree oven for 10 minutes or until nicely golden; cool.
  • Prepare filling - separate eggs beat egg yolks with sugar and vanilla for five minutes.
  • Beat egg whites (stiff) - fold the stiffly beaten whites and walnuts in small portions alternately and mix slightly
  • Spread some jam on the bottom of each cup and fill with the filling mixture.
  • Bake another 15 minutes ( I bake this part at a lower temperature - but ovens do vary) They are baked much like tarts.

1 snack-size cup (4 ounces) pineapple tidbits, drained

  • In a food processor, chop the cranberries. Transfer to a small bowl; stir in sugar. Cover and refrigerate for 6 hours or overnight; drain. Stir in the grapes, pineapple and walnuts. Fold in whipped topping.

Filling:
2 cups chopped pecans
2 eggs, beaten
1 1/2 cups brown sugar
pinch of salt
1 teaspoon vanilla extract
2 tablespoons melted butter

Pastry:
2 (3-ounce) packages cream cheese, softened
2 sticks butter or margarine, softened
2 cups all-purpose flour
powdered sugar (optional)

Steps:

  • Filling: Combine all ingredients thoroughly. Set aside. Pastry: Combine cream cheese and butter; gradually add flour, mixing with hands. Divide dough into 4 equal parts. Each quarter of the dough will be enough for 12 mini-muffin cups. Divide each quarter into 12 balls and place one ball in each mini-muffin cup. Press with thumb or finger into bottom and around sides to form cup. Fill each with 1 teaspoon nut Filling. Bake at 350° for 15-20 minutes. When cool, you may sprinkle with powdered sugar, if desired. Makes 48 cookies that melt in your mouth. They keep well.
