TURKEY TEA SANDWICHES



Turkey Tea Sandwiches image

Yield 32 sandwiches; 8 to 10 servings

Number Of Ingredients 7

3/4 pound (12 ounces) cream cheese, room temperature
1/2 cup minced scallions (white and green parts)
Pinch kosher salt
Pinch freshly ground black pepper
1 loaf dense raisin-nut bread, unsliced
8 thin slices fresh or smoked turkey breast
Fresh basil leaves

Steps:

  • For the scallion cream cheese, combine the cream cheese, scallions and the salt and pepper in an electric mixer fitted with a paddle attachment. Do not whip.
  • For the sandwiches, have the store slice the bread lengthwise on a meat slicer into 1/4-inch-thick slices. (If that isn't possible, you can slice it crosswise with a very sharp knife.)
  • Lay out 8 slices of bread and spread them all with a thin layer of scallion cream cheese. Place a single layer of turkey on half the slices, cutting the edges to fit the bread. Place the basil leaves randomly on top of the turkey. Top with the other 4 slices of bread, cream cheese side down. Lay the sandwiches on a baking sheet covered with parchment paper, cover with damp paper towels and wrap the sheet with plastic. Refrigerate until the cream cheese is cold and firm. Place the sandwiches on a cutting board and, with a very sharp knife, cut off the crusts. Cut each large sandwich in half crosswise, and then cut each half diagonally, twice, to make a total of 8 small triangles. (If the bread was cut crosswise, follow the assembly directions, then cut off the crusts and cut diagonally, twice, to make 4 small triangles.) Serve chilled.

4 ounces cream cheese, at room temperature
2 tablespoons apricot preserves
sliced ham
4 ounces cream cheese, at room temperature
3/4 cup crushed pineapple, drained
1/3 cup chopped pecans, toasted
1 1/2 cups shredded or chopped chicken
3/4 cup mayonnaise (or more if needed)
1/2 teaspoon curry powder
1/4 cup dried cranberries
1/3 cup celery, diced
1/3 cup slivered almonds, lightly toasted

Steps:

  • For the chicken sandwiches, Chop chicken very finely (I put it in a food processor and pulsed 3-4 times until minced). In a bowl, combine chicken and mayonnaise, and mix well. Add curry and continue to mix. Fold in remaining ingredients. Spread on bread, top with another slice, remove crusts, and cut into shapes.
  • For the pineapple sandwiches, Combine cream cheese and crushed pineapple until well blended. Add pecans and fold into mixture. Spread on one slice of bread and top with other. Remove crusts and cut into shapes as desired.
  • For ham sandwiches, Combine cream cheese and preserves until well blended. Spread a layer on both slices of bread, place a slice of ham on one side, and top with the other side. Cut off crusts and cut in to shapes as desired.

2 3/4 cups Original Bisquick™ mix
1/2 cup sugar
1 cup milk
2 tablespoons butter or margarine, melted
1 teaspoon vanilla
3 eggs
1 1/2 cups finely chopped walnuts

Steps:

  • Heat oven to 350°F. Spray 9x5-inch loaf pan with cooking spray.
  • In large bowl, beat all ingredients except walnuts with electric mixer on low speed 30 seconds, scraping bowl frequently. Beat on medium speed 3 minutes, scraping bowl occasionally. Stir in walnuts. Spread batter in pan.
  • Bake 50 to 60 minutes or until toothpick inserted in center comes out clean.
  • Cool 10 minutes. Run knife or metal spatula around sides of pan to loosen bread; remove from pan to cooling rack. Cool completely, about 1 hour.

12 ounces cream cheese, softened
1/2 cup finely chopped walnuts, toasted
2 tablespoons minced fresh parsley
1 tablespoon finely chopped green pepper
1 tablespoon finely chopped onion
1 teaspoon lemon juice
1/4 teaspoon ground nutmeg
Dash salt and pepper
24 thin slices white sandwich bread, crusts removed

Steps:

  • In a small bowl, beat the cream cheese, walnuts, parsley, green pepper, onion, lemon juice, nutmeg, salt and pepper until blended. , Spread about 2 tablespoonfuls over each of 12 bread slices; top with remaining bread. Cut each sandwich into three 1-in.-wide strips.

A great tea party needs two things: great friends and great food. These little sammies are so nice to serve. I love using my little silver multi-layer dishes to display everything I'm serving. These are pretty along side other tea sandwiches. Mighty tasty too!

3/4 cup soft butter
1 teaspoon cinnamon or 1 teaspoon nutmeg
20 slices bread, of your choice
1 1/2 cups soft cream cheese
1/2 cup pineapple, finely chopped
1/2 cup finely chopped nuts (for this recipe, I prefer walnuts)

Steps:

  • Combine the butter with cinnamon or nutmeg and spread the mixture over 1 side of each slice of bread.
  • In a small bowl, cream the cream cheese, if necessary, and stir in the pineapple and nuts.
  • Spread the cream cheese mixture evenly over 10 slices of bread and top with the other 10 slices.
  • Remove the crusts and cut.
