GRANDMA'S SANDWICH LOAF

My grandmother used to make this for special events and Holidays! It's super easy and super delicious!!

Number Of Ingredients 8

5 pound(s) chicken (boned)
2 1/2 cup(s) miracle whip or if you prefer mayonaise
1 1/2 cup(s) celery about 2 1/2 medium stalks chopped in medium pieces
1 pinch(es) salt and pepper
2 large loaves of white bread whatever kind preferred ( i use regular white bread)
2 can(s) cranberry sauce
4 package(s) cream cheese, room temperature
2 tablespoon(s) milk

Steps:

  • In large bowl mix all ingredients together till thoroughly covered with Miracle whip or Mayo.
  • spread Chicken salad onto the white bread, then add a layer of bread with cranberry sauce. Repeat this process 1 more time and cover with 1 more slice of white bread.
  • After you have lined a long serving dish with four sections side by side, then you will take your cream cheese (using a mixer) whip all 4 pkgs together in a bowl.Add the 2 tbsp milk to help the blening process. Then frost your loaf and garnish with parsley or whatever you prefer to dress it up a bit. Chill until ready to serve about 2 hours

1 large egg, beaten
1/4 cup dry bread crumbs
3 bacon strips, cut into 1/4-inch pieces
1 small onion, chopped
2 ounces cubed cheddar cheese
1/2 teaspoon seasoned salt
1/2 teaspoon pepper
1-1/2 pounds lean ground beef
1/2 pound bulk pork sausage

Steps:

  • In a large bowl, combine egg, bread crumbs, bacon, onion, cheese, seasoned salt and pepper. Add beef and sausage; mix well. In a shallow baking pan, shape mixture into an 8x4-in. oval. , Bake at 350° for 1-1/4 hours or until no pink remains and a thermometer reads 160°; drain.

This sandwich is a little tangy from the tomatoes, a little spicy from the chipotle chilies,and just plain delicious.

1 (6 ounce) can tomato paste
3 -5 tablespoons chopped canned chipotle chiles
1 tablespoon mild molasses
12 slices sourdough bread, 3/4 inch thick
18 ounces sharp cheddar cheese, thinly sliced
4 plum tomatoes, sliced
1 small red onion, thinly sliced
1 cup fresh cilantro leaves
6 tablespoons butter, room temperature

Steps:

  • Blend tomato paste, chilies and molasses in processor until smooth.
  • Spread 1 tablespoon chipotle mixture over 1 side of each bread slice.
  • Arrange 6 slices of bread, chipotle side up, on work surface.
  • Divide half of cheese among bread slices.
  • Top with tomatoes, then onion, cilantro, and remaining cheese.
  • Top sandwiches with remaining bread, chipotle side down.
  • Spread butter on outside of sandwich tops and bottoms.
  • Heat a large griddle over medium heat.
  • Place sandwiches on griddle, cook until bread is golden and cheese is melted, about 5 minutes on each side.
  • Keep your heat on medium to low or the bread will burn.
  • Eat the sandwiches warm from the griddle.
