*Kokkteilsosa* in Icelandic, this recipe from *Cool Cuisine* (Traditional Icelandic Cuisine) by Nanna Rognvaldardottir surprised me - mainly due to her intro: "This universal dipping sauce became popular in Iceland in the 1960s & is served w/chips, hamburgers, fried & deep-fried fish, fried chicken & other types of fast food. Some people even put it on their pizza." IMO this sauce is much more unique to Iceland than it is universal to anywhere in the universe! (Time does not include chill time) *Enjoy* !

1 cup mayonnaise
4 tablespoons ketchup
1 tablespoon pineapple juice
1 teaspoon paprika
1/4 teaspoon Tabasco sauce
salt and pepper (to taste)

Steps:

  • Combine 1st 5 ingredients, taste & season w/salt + pepper to taste pref. Refrigerate for 2 hrs to allow flavors to blend.
  • NOTE: May be kept in the refrigerator for up to 2 dys.

*Ysurettir Med Ananas og Karri* in Icelandic, this recipe is a veggie-rich, 1-dish meal found in *Cool Cuisine* (Traditional Icelandic Cuisine) by Nanna Rognvaldardottir. Per her intro, "A festive fish dish dating back to the early 1980s. There are many variations on this theme & the dish is often topped w/cheese." (15 min time was allowed for ingredient prep) *Enjoy* !

800 g haddock fillets (skinned & boned)
salt and pepper
2 tablespoons olive oil
1 leek (cleaned & chopped)
1 garlic clove (minced)
1 red bell pepper (seeded & chopped)
1/2 green bell pepper (seeded & chopped)
125 g shrimp
200 g single cream
225 g pineapple tidbits (DO NOT DRAIN)
1 teaspoon Worcestershire sauce
1 teaspoon curry powder (or to taste)
1 teaspoon paprika
115 g button mushrooms (sliced) (optional)

Steps:

  • Preheat oven to 200C (390F). Lightly brush an oven-proof baking dish w/some of the oil & set aside.
  • Cut haddock into pieces, season w/salt + pepper & set aside.
  • Heat remaining oil in a non-stick frying pan. Saute leek & garlic over med-heat till softened. Add chopped bell peppers + mushrooms (if using) & saute for 2-3 minutes.
  • Add shrimp, single cream, pineapple tidbits, & pineapple juice. Stir in Worcestershire sauce, curry powder & paprika. Taste & add salt & pepper as desired.
  • Simmer for 2 minutes. Add fish pieces & simmer for 1 minute.
  • Remove from heat & pour into the prepared baking dish. Cover loosely w/foil & bake for 15-20 minutes. Serve over rice.

This recipe is from a childrens cook book published by UNICEF. This meal used to be our familys favourite. It is very easy and delicious.

1 tablespoon butter
6 fish fillets or 6 cod fish fillets
1 lemon
salt, pepper to taste
200 g emmenthaler cheese or 200 g tilsiter cheese, grated
1 tablespoon mustard
1 cup cream
1/2 cup breadcrumbs

Steps:

  • Preheat oven at 180° celsius.
  • Butter a baking-dish.
  • Put the fillets into the baking-dish.
  • Season the fillets with salt, pepper and freshly squeezed lemon juice.
  • Cover the fish with ground cheese.
  • Mix mustard with cream and pour it over fish fillets.
  • Cover with breadcrumbs.
  • Bake the fillets for 35 minutes.
  • Serve with rice or noodles.

250 g shrimp (9 oz can or may use frozen baby shrimp)
1 (8 ounce) can crushed pineapple (well-drained)
5 ounces mayonnaise
3 ounces cream cheese (softened)
1/2 teaspoon paprika
1 teaspoon lemon juice
1 dash Tabasco sauce
salt and pepper (to taste)
2 tablespoons chives (freshly-snipped)

Steps:

  • Chop eggs & shrimp as desired.
  • Combine all ingredients & mix well.
  • Refrigerate at least 2 hrs before use.
  • NOTE: Serving sizes will vary & depend upon whether used as a dip/spread or a sandwich filling. I reflected 2 oz appy servings & would expect 8 sandwiches using 3 oz servings.

Per the intro: "Potato salad is served w/many meat dishes, esp steaks, grilled meat & sausages. There is a wide variety of recipes, but this 1 is the most popular." (This recipe begins w/the eggs & potatoes already cooked, so that time is not reflected) *Enjoy* !

1 3/4 lbs potatoes (boiled tender, peeled & cubed)
3 eggs (hard-boiled & chopped)
2 apples (peeled, cored & chopped)
6 -8 gherkins (chopped)
1/4 onion (chopped, larger amt if desired)
3/4 cup mayonnaise
3/4 cup sour cream
1/2 teaspoon curry powder (or up to 1 tsp)
lemon juice (optional as desired)
salt and pepper (to taste)

Steps:

  • Peel & cube potatoes. Chop eggs. Peel, core & chop the apples. Chop gherkins & onion.
  • Mix 1st 7 ingredients (potatoes thru sour cream) in a lrg bowl.
  • Add curry powder, lemon juice (if using), salt + pepper to taste pref & stir well. Refrigerate for at least 6 hrs prior to serving.

When I turned the pg of *Cool Cuisine* (Traditional Icelandic Cuisine) by Nanna Rognvaldardottir & read this recipe, it made me so hungry that I went straight to my kitchen for some food! Per her intro, "This is a luxurious dish! Altho langostines, prawns & other crustaceans now enjoy great popularity in Iceland, this has not always been the case. They were not commonly eaten a few decades ago, but Icelanders discovered these delicacies in a big way in the 1970s & have been making up for their earlier neglect ever since." This recipe has me thinking I should join their mission for our next spec occasion! (Time does not include the 30 min refrigeration time) *Enjoy* !

30 prawns (lrg size in their shells)
5 tablespoons butter
2 garlic cloves (crushed)
salt & freshly ground black pepper
1 large red bell pepper (seeded & chopped)
1 green bell pepper (seeded & chopped)
5 ounces button mushrooms (sliced)
1 teaspoon brandy
2 cups cream

Steps:

  • Split prawns lengthwise w/a sharp knife, without completely separating the halves.
  • Melt 3 tbsp of butter w/the crushed garlic, salt + pepper & brush the prawns w/it. Chill for 30 min under refrigeration.
  • Seed & chop the bell peppers & slice the mushrooms. Melt the remaining 2 tbsp of butter in a lrg non-stick frying pan, saute peppers & mushrooms for a few minutes & remove to a dish.
  • Place prawns in the frying pan (cut side down) & fry for 2-3 min (in batches if necessary). Drizzle the brandy over them & ignite it.
  • When the flame dies down, add the cream + veggies & simmer for 2 minutes. Serve immediately.
  • To Serve: Serve 5 prawns per person w/an equal amt of veggies & sauce over toast points lightly brushed w/garlic-infused olive oil or garlic butter.
