This is my Minnesota version of a vintage German slaw served at church suppers. The wild rice has a nutty flavor that's perfect with tangy sauerkraut. -Jeanne Holt, Mendota Heights, Minnesota

2/3 cup uncooked wild rice
2 cans (14 ounces each) sauerkraut, rinsed and well drained
1 medium apple, peeled and chopped
3/4 cup chopped celery
3/4 cup shredded carrot (about 1 large carrot)
1/2 cup finely chopped red onion
DRESSING:
1/2 cup sugar
1/3 cup cider vinegar
3 tablespoons canola oil
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons minced fresh parsley
1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
3/4 cup chopped walnuts, toasted

Steps:

  • Cook wild rice according to package directions. Cool completely., In a large bowl, combine sauerkraut, apple, celery, carrot, onion and cooled rice. In a small bowl, whisk the first five dressing ingredients until sugar is dissolved; stir in herbs. Add to sauerkraut mixture; toss to combine., Refrigerate, covered, at least 4 hours to allow flavors to blend. Stir in walnuts just before serving.

3 tablespoons golden rum
2 tablespoons brandy
1 1/2 tablespoons apple cider
1 teaspoon pure maple syrup
1/2 teaspoon fresh lemon juice
ice cube
apple, slices garnish (optional)

Steps:

  • Combine first 5 ingredients in cocktail shaker. Fill with ice, cover and shake vigorously until cold. Strain into 2 coupe glasses. Cut slit in each apple slice and attach to rim of glass.

Northwoods Inn is a steak restaurant here they serve this with their green salad. Its soooo good plus I love cabbage especially when its summer, I like to make this when I have ham also. It just seems the natural choice.

1/2 c vegetable oil
1/2 c red wine vinegar
2 Tbsp red wine vinegar
3 Tbsp sugar
1 tsp season salt
1/4 tsp black pepper
1/4 tsp onion powder
1 medium head red cabbage

Steps:

  • 1. wash cabbage, pat dry, peel off wilted outer leaves if any.
  • 2. slice into thin ribbons.(if you want mine always comes out a little chunkyish). place in large bowl, set aside.
  • 3. Measure out oil, vinegar and spices in separate bowl, stir together to blend, pour over cabbage and toss.Cover and chill. best if marinates overnight

This is the famous Red Cabbage Salad served at the Northwoods Inn. I found this recipe in the Los Angeles Times Newspaper in 1990 - developed by the Times Test Kitchen, in 1990. It's based on the salad from the Clearman's restaurant chain. It's super yummy!! Cooks note: The measurement for the red wine vinegar is 1/2 cup plus 2 Tbsp. (easier to measure than 10 Tbsp.)

10 tablespoons red wine vinegar

1/4 cup rice vinegar
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon freshly ground pepper
2 cloves garlic, finely chopped
3 cups cold cooked wild rice
2 cups cubed cooked chicken
1/2 red bell pepper, diced
1 cup 1-inch pieces snap pea pods
3 medium green onions, sliced (3 tablespoons)
1/2 cup cashews

Steps:

  • In food processor, cover and process all vinaigrette ingredients until smooth.
  • In large bowl, toss vinaigrette and all salad ingredients except cashews until coated. Cover and refrigerate at least 2 hours to blend flavors but no longer than 24 hours.
  • Toss salad and cashews just before serving.

3 large carrots, cut into 1-inch pieces
3 celery ribs, cut into 1-inch pieces
1 large onion, cut into wedges
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
3-1/2 pounds beef stew meat
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1/2 cup dry red wine or beef broth
2 tablespoons quick-cooking tapioca
1 tablespoon Italian seasoning
1 tablespoon paprika
1 tablespoon brown sugar
1 tablespoon beef bouillon granules
1 tablespoon Worcestershire sauce
1/2 pound sliced baby portobello mushrooms
Hot cooked egg noodles

Steps:

  • Place the carrots, celery and onion in a 5-qt. slow cooker. In a bowl or shallow dish, combine the flour, salt and pepper. Add beef, a few pieces at a time, and turn to coat. Place beef over vegetables., In a small bowl, combine the soup, wine, tapioca, Italian seasoning, paprika, brown sugar, bouillon and Worcestershire sauce. Pour over the top., Cover and cook on low until meat and vegetables are tender, 8-10 hours, adding mushrooms during the last hour. Serve with noodles., Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.

This has been a very long quest for me. The knock-offs are close but I could not get over the fact they were all too acidic. Northwoods sells the red cabbage salad marinade and when I got it, the ingedients were in 3 equal parts of white vinegar, a very light oil (water?), and a white powder which tasked like Hidden Valley Ranch seasoning and salad dressing mix. So I followed that and, well, you be the judge.
