PALAčINKE RECIPE (CROATIAN PANCAKES)

Palačinke...hmmm. Everyone loves pancakes and crepes, and whether they are sweet or savory, they are always a winner! Croatian pancakes are a big favorite in our house. Here is an easy Croatian palačinke recipe for you to enjoy!

Number Of Ingredients 7

1 cup of all-purpose flour, sifted
2-3 whisked eggs (I use 2 medium or 3 small)
2 cups of whole milk
1/2 teaspoon salt
3 tablespoons sparkling water (club soda)
2 teaspoons rum, dark (optional)
Butter or oil non-salted butter for frying (you could also use shortening if you prefer)

Steps:

  • Sift the flour, and slowly mix in the milk and whisked eggs
  • Add the salt and rum if you are using it, then continue to mix with a hand mixer until the batter has no more lumps (if you need a little more flour or milk, add it very little-by-little), and finally add the sparkling water
  • In a non-stick pan, over medium-high heat, melt a little butter or oil, ensuring that the butter/oil covers the whole surface of the pan
  • Add 1/2 a cup of the mixture (I actually use a soup ladle to make it super easy) to the pre-warmed pan and swirl the batter around in the pan until it fully coats the pan (but is thin, the key here is for it to be a thin layer)
  • When the underside is light brown, flip over the palačinke and cook the other side (approx two mins on each side on a low-med heat). You may need to cook 1 or 2 to find the right heat for your stovetop
  • Place each one on a plate, and continue until you finish the batter
  • Then add your desired filling, roll them up, and enjoy!

NORTH CROATIAN MUSHROOM PANCAKES (CREPES)



North Croatian Mushroom Pancakes (Crepes) image

This is typical Northern Croatian supper. It is possible to mix mushrooms, especially with wild mushrooms. I did not give pancake recipe, everyone knows how to make them, and these pancakes are ordinary, simple THIN pancakes. This is the recipe using 12 to 15 pancakes.

1 tablespoon oil
50 g butter
100 g onions
300 g mushrooms (cultivated, white)
20 g flour
1/4 teaspoon nutmeg
1 garlic clove
25 g parsley
400 g sour cream
1 egg (yolk)
100 ml stock (meat)
salt
pepper

Steps:

  • Melt butter in a pot and sauté finely sliced onion until soft.
  • Add sliced mushrooms and sauté it in half closed pot. Season with pepper, salt, nutmeg and very finely minced garlic.
  • Add meat stock and cook until stock evaporates.
  • Put mushrooms aside to cool a bit.
  • Add mixed 200g sour cream, parsley leaves and yolk into mushrooms.
  • Stuff pancakes and form them into cigars.
  • Put pancakes into buttered casserole pot only one layer. Cover with rest of sour cream and bake it on 200°C about 35 minutes. Serve hot.

CROATIAN CHEESE PANCAKES



Croatian Cheese Pancakes image

This is typical Northern Croatian desert. It can be frozen if you see you have it too much. Do not freeze after you bake them. As a desert I can recommend two pancakes. This recipe is for 18 small or 10 large pancakes.

1/2 liter whole milk (3,2%fat)
1 cup flour
2 eggs
2 g salt
500 g fresh cow cheese
150 g sour cream
50 g sugar (white)
20 g raisins
20 g vanilla sugar (2 packages)
2 eggs (divide yolks and white)
300 g sour cream
10 g butter

Steps:

  • Make pancakes: mix milk, sugar, eggs and salt. If the mixture is too diluted add flour. Make pancakes and leave it until cool.
  • Stuffing: mix well cheese, sour cream, yolks, sugar, and vanilla sugar.
  • Soak raisins in plum brandy or rum until swell up (usually 2 hours). From egg white make "snow" and add into stuffing, and add raisins.
  • Fill the pancakes and roll them making sure that stuffing won't get out.
  • Put pancakes in baking pan you've cover bottom with butter, pour over 300 g sour cream and put them into oven on 200°C for 20 minutes.
  • If you bake frozen pancakes make it 25 minutes. Take them out, wait 2-5 minutes to cool and eat.

MUSHROOM CROQUETTES

1/4 cup extra-virgin olive oil
3 cups diced mixed mushroom caps
Kosher salt and freshly ground pepper
1 stalk celery, finely diced
1 shallot, minced
1 1/4 cups plus 6 tablespoons all-purpose flour
2 tablespoons unsalted butter
Pinch of freshly grated nutmeg
1 1/2 cups low-sodium chicken broth
1 cup milk
4 slices white sandwich bread, torn
3 large eggs
Vegetable oil, for frying
Dijon mustard, for serving

Steps:

  • Heat the olive oil in a large skillet over high heat. Add the mushrooms and cook until golden, about 4 minutes. Reduce the heat to medium; add 1/2 teaspoon salt, pepper to taste, the celery and shallot and cook until the vegetables are tender, about 4 minutes. Add 6 tablespoons flour, the butter and nutmeg and cook, stirring, until the flour is toasted, 1 to 2 minutes. Slowly whisk in the broth and cook, stirring, until the mixture is the consistency of gravy, about 4 minutes. Slowly stir in the milk and simmer, stirring, until very thick, 6 to 10 more minutes. Remove from the heat, transfer to a bowl and let cool to room temperature. Cover and refrigerate until firm, at least 2 hours.
  • Line a baking sheet with parchment paper. Pulse the bread in a food processor to make fine crumbs; transfer to a shallow dish. Put the remaining 1 1/4 cups flour in another shallow dish; beat the eggs in a third dish. Drop tablespoonfuls of the chilled mushroom mixture into the flour and toss to coat, then shape into 1 1/4-inch-long croquettes. Dip in the eggs, then roll in the breadcrumbs and transfer to the prepared baking sheet. Cover with plastic wrap; refrigerate until firm, 30 minutes.
  • Heat 1/2 inch vegetable oil in a deep saucepan until a deep-fry thermometer registers 360 degrees F. Working in batches, add the croquettes and fry until golden, 2 to 3 minutes per side. Remove with a slotted spoon and drain on paper towels; season with salt. Serve with mustard.

3 large eggs
1 cup milk
1/3 cup club soda (not flat)
1 cup all-purpose flour
1/2 teaspoon salt
1 1/2 tablespoons butter (roughly, for frying)
1 1/2 tablespoons oil (roughly, for frying)

Steps:

  • Gather the ingredients.
  • In a medium bowl, beat together the eggs and milk until well combined. Mix in the club soda.
  • Add the flour and salt and stir with a whisk until only a few lumps of flour remain.
  • Cover with plastic wrap and let sit at room temperature for 30 minutes. As the flour is absorbed by the wet ingredients, the batter will smooth out.
  • Once rested, stir the batter until smooth (though a few lumps are ok) to prepare for cooking the crepes .
  • Heat an 8-inch nonstick crepe pan or skillet. Add 1 of the teaspoon butter and 1 teaspoon of the oil.
  • Add about 1/4 cup of batter to the pan, tilting and swirling so it covers most of the bottom of the pan.
  • Cook about 2 to 3 minutes or until the bottom is lightly browned. Flip over and brown the second side. Remove to a platter.
  • Continue with the cooking process, adding the remaining butter and oil as necessary-probably every third crepe. Stack the cooked crepes to keep warm. Serve and enjoy.

CROATIAN MUSHROOM SOUP



Croatian Mushroom Soup image

This is Northern Croatia recipe. We usually use wild mushrooms ("vrganj") fresh or dried. Most similar to "vrganj" is crimini. You can use any kind of eatable mushroom.

200 g wild mushrooms (in Croatia "vrganj")
1 tablespoon lard (preferably, but oil can do)
100 g bacon
1 medium onion, finely minced
1 medium potato
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon marjoram
1/2 teaspoon paprika
1/2 tablespoon flour
5 g parsley
100 g sour cream

Steps:

  • If you use dried mushroom soak in water them before use about 10-15 minute.
  • On a melted lard sauté onion and bacon until it is soft. Add flour and sauté until the flour is brown, add very little paprika and after 30 sec. add cold water and stir to prevent coagulation.
  • Add all the mushroom you have, salt, pepper and potato sliced in small cubes. Add water (cca 1 liter) and cook 1,5 hour (if water evaporate add some more).
  • At the end add sour cream and parsley. REMEMBER all mushrooms are eatable, some of them only once!
