2 tomates Roma (plum) grandes, sin semillas y picados
1/4 taza de cebolla picada
1 chile serrano picado
2 cucharadas de cilantro fresco picado
2 cucharadas de aderezo italiano fuerte KRAFT Zesty Italian Dressing
12 nopalitos (de aprox. 5 pulgs.)
1/2 libra de chorizo, cocido y desmoronado
6 KRAFT Singles

Steps:

  • Mezcla los primeros 5 ingredientes para preparar el pico de gallo; pon a un lado.
  • Entretanto, rocía una sartén grande con aceite en aerosol. Añade los nopalitos en tandas; cocínalos a fuego alto durante 5 min. por lado o hasta que estén ligeramente cocidos y el líquido pegajoso se haya evaporado.
  • Sin sacarlos de la sartén, pon encima de 6 nopalitos chorizo y un Singles; tápalos con los nopalitos restantes. Cocínalos durante 3 min. o hasta que los Singles se hayan derretido. Sírvelos con el pico de gallo.

1 lb chorizo
2 tomatoes
1/4 onion
1 serrano pepper
1 lb cactus (diced and cooked)

Steps:

  • Cook the chorizo.
  • About 5 minutes.
  • Break up with your spatula as it cooks.
  • In the meantime, roast the tomatoes, onion, and serrano pepper on a griddle.
  • Turn as needed. Make sure they are black on all sides.
  • Place the roasted tomatoes, onion, and serrano in a blender.
  • Blend until smooth.
  • Drain any excess fat from the chorizo.
  • Add the cactus and the tomato sauce.
  • Cook for 15 minutes.
  • Taste for salt before serving.

1 (10 ounce) package fresh chorizo (such as Hempler's)
1 cup diced onion
3 cloves minced garlic
2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk, or more as needed
1 (12 ounce) bag shredded Mexican cheese blend
1 (4 ounce) can chopped green chilies

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium heat. Cook and stir chorizo in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion and garlic and cook until transparent, 4 to 5 minutes more.
  • Melt butter in saucepan over medium-high heat until sizzling. Stir in flour and whisk until a paste forms, about 5 minutes. Whisk in milk and continue to cook, whisking, until sauce begins to thicken, about 5 more minutes. Stir in the chorizo mixture, shredded cheese, and green chiles. Continue stirring until smooth and thick.

Queso Fundido with Chorizo image

Vegetable oil, for oiling the baking dish
6 ounces chorizo or spicy Italian sausage, casings removed
1/4 cup chopped onion
1 large clove garlic, minced
2 cups grated Oaxaca or mozzarella cheese
6 flour tortillas or soft tacos, warmed

Steps:

  • Preheat the oven to 425 degrees F. Oil a 3 or 4 cup ovenproof baking dish.
  • In a dry medium skillet, saute the chorizo over medium-high heat until almost crisp. Remove the chorizo to a plate. Add the onions and garlic to the pan juices and cook until soft, about 5 minutes. Return the chorizo to the skillet with the onions and garlic and stir to combine.
  • Put half of the cheese in the baking dish and sprinkle with half of the chorizo mixture. Repeat with the remaining cheese and chorizo mixture. Bake until the cheese is bubbling, about 20 minutes. Serve with flour tortillas for soft tacos.
