NOODLES AND POT CHEESE
I was so surprised when I did not see this already posted. My granddaughter had it for lunch at my house and later looked at this site and asked why I didn't have it posted. Yeah, why didn't I? **I have not found pot cheese in regular supermarkets, just specialty stores. If you cannot get it, use a cottage cheese that is as dry as possible.

Steps:
- Boil noodles until just tender.
- Drain, do not rinse.
- Return to cooking, off the heat, and add butter.
- Add pot cheese and salt. Mix gently but completely. You can also return noodles to pot and brown them before mix with cheese. If you do this, increase butter by one more tablespoon.

- Cook noodles in boiling salted water for about 8 minutes; drain and rinse with cold water.
- Melt 2 tablespoons of the butter in a pan and add the noodles, place over a slow fire, heat well.
- Mix in the cheese and add the sour cream; serve hot.

This recipe does not use Pot cheese, it actually uses Farmer Cheese. I have been to many supermarkets and can't seem to find the Pot Cheese, so I ended up substituting. The flavor is very rich, but not overpowering. It comes from my Mother-In-Law who grew up with Hungarian parents. The recipe is short and easy, and is great for quick after work meals. My kids both go nuts for it, and my 10 year old takes the cold leftovers to school for her lunch...It's THAT GOOD!!

Steps:
- Cook the bacon until crisp (Not Burnt).
- Save the Bacon fat.
- Place the bacon on a paper towel and set aside.
- When the Bacon is cooled and crisp, Chop it into small pieces.
- Slice the butter into 1tbsp size pieces.
- In a Large Pot cook the pasta as per package instructions.
- Drain the pasta (do not rinse).
- Put the pasta back into the pot.
- Add the butter.
- Add 2 tbsp of Bacon fat.
- Add the Farmer Cheese.
- Add in the bacon, salt and pepper.
- Mix together until the butter is melted and the cheese has become infused with the pasta.
- Serve it up hot, also good cold.

- Cook egg noodles 5 mins or as per instructions on package Drain thoughly. Put noodles into a large frypan, adding butter. Cook on medium heat till noodles are nicely browned on the bottom. Stir as needed during browning. Cooking time is about 10 mins. Serve with butter and cottage cheese.
