1 pound Italian sausage links
½ pound lean ground beef
1 tablespoon olive oil
1 onion, chopped
1 clove garlic, chopped
1 (16 ounce) can canned tomatoes
1 (15 ounce) can canned tomato sauce
1 teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1 bay leaf

Steps:

  • Removed casing from sausage links and cut into 1/2 inch slices. In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside.
  • In a large skillet, heat ground beef, olive oil, garlic and onion over medium heat until meat is nicely browned; drain.
  • Pour in tomatoes and tomato sauce; mix in salt, ground black pepper, basil, oregano, bay leaf and cooked sausage. Simmer uncovered for 1 hour, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Mix cooked sauce with hot pasta and remove bay leaf from sauce before serving.

A quick and easy 15-minute weeknight pasta recipe, this spaghetti with red sauce is made with hearty Italian sausage.

12 ounces spaghetti (cooked according to package instructions)
4 links Italian sausage (sweet or spicy)
1 medium onion (diced)
3 cloves garlic (minced)
1 teaspoon oregano
1 teaspoon fennel seeds (optional)
1/2 cup red wine (optional)
16 ounces whole peeled tomatoes
16 ounces tomato sauce (or pureed tomatoes)
salt and pepper (to taste)
parmesan cheese and basil (optional garnish)

Steps:

  • Cook pasta according to package instructions. Tip: Salt the water heavily as this is your only chance to season the pasta.
  • While pasta is cooking, heat a large, deep skillet over medium high heat and spray with cooking spray. Remove sausage from casing and cook in pan until golden brown, using a wooden spoon to break the sausage into bite-sized pieces.
  • When the sausage is cooked, add the onion, garlic, oregano and fennel seeds to the pan, along with a pinch of salt and pepper. Continue cooking until the onions are soft and translucent, about 6-7 minutes.
  • Deglaze the pan with red wine using the wooden spoon to scape up any browned bits from the bottom. Stir in whole peeled tomatoes and tomato sauce then gently break down the whole peeled tomatoes with the wooden spoon. Alternatively, you can use scissors.
  • Bring the sauce to a boil then reduce to low and simmer for 10 minutes. Stir in pasta and garnish with cheese and basil before serving.

Restaurant Style Spaghetti Sauce with Sausage image

It's easy to make restaurant-style Spaghetti Sauce using just a few ingredients. Adding sausage makes the sauce even more flavorful, but if you don't eat meat its okay to leave it out. This is the recipe I used throughout my long restaurant career.

4 cloves fresh garlic (chopped)
120 ounces crushed tomato ((four 28-32 ounce cans) San Marzano if possible)
2 pounds sweet Italian sausage
2 bunches fresh basil (finely chopped)
1 medium onion (diced)
1/2 cup olive oil
1 tbsp sea salt (or more to taste)
1/2 tsp black pepper (or more to taste)
1 tbsp sugar (optional)

Steps:

  • In a large heated skillet or saucepot add olive oil and sausage. Saute sausage on both sides until it browns.
  • When the sausage has browned add the diced onion and chopped garlic. Continue cooking until the onions are translucent, but do not allow them to burn!
  • Add crushed tomatoes, rinse cans with just a little water and add to the sauce (if crushed tomatoes are not available use whole tomatoes and crush by hand or with an immersion blender).
  • add chopped basil, sea salt and black pepper to taste (don't over season, you can always add more later). If you choose to add sugar now is the time to add it.
  • After your sauce has reached a boil, reduce the heat to simmer and continue to cook for at least two hours. If you've got the time let it simmer for 4-6 hours for an amazingly rich tomato sauce.

1 ½ pounds Italian sausage
4 ounces fresh mushrooms, sliced
½ cup butter
2 cubes chicken bouillon
½ cup sherry
1 ½ pounds zucchini, sliced
½ cup chopped green onion
1 (16 ounce) package spaghetti

Steps:

  • In large skillet, over medium heat, cook sausage and mushrooms in butter, until sausage is brown. Add bouillon cubes and sherry and stir until bouillon is dissolved. Add zucchini and onion and cook, uncovered, until zucchini is crisp-tender.
  • While the sauce is cooking, bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain.
  • Serve pasta sauce over hot spaghetti.

8 ounces uncooked spiral pasta
3/4 pound bulk Italian sausage
4-1/2 teaspoons olive oil
1-1/2 teaspoons butter
3/4 cup chopped sweet red pepper
1/2 cup chopped onion
1/2 cup white wine or chicken broth
2 cups heavy whipping cream
1/2 cup grated Romano cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chopped fresh parsley

Steps:

  • Cook pasta according to package direction. In a large skillet, cook sausage in oil and butter over medium heat for 5 minutes. Add red pepper and onion; cook and stir until vegetables are tender and sausage is no longer pink. add wine or broth; cook for 2 minutes. Add the cream, cheese, salt and pepper. Bring to a boil. reduce heat; cook over low heat for 8-10 minutes, stirring occasionally., Drain pasta. In a large bowl, combine sausage mixture and pasta. Before serving, sprinkle with parsley.

This is my nonna's old standby, when I was growing up, I would live for the weekends that we went to visit her, cause she'd make this everytime...It isnt loaded with ingrediants, and thats what makes it so good. Simple, fresh Italian flavours. It will nver taste the same as hers but its close enough for me!

4 small chicken thighs, bone in
2 Italian sausages
1 tablespoon extra virgin olive oil
1 large carrot, peeled
1/2 large onion
1 clove garlic, chopped
1 bay leaf
1/4 cup dry white wine
1 (28 ounce) can crushed tomatoes, plus
1 (14 ounce) can crushed tomatoes (I actually like using the tomatoes in the tall glass container, italian brand)
salt and pepper
1 pinch ground cloves
parsley
basil (if using fresh, use lotsa basil, and add close to the end)

Steps:

  • Pre-heat oven to 350°F.
  • Put meat on a baking tray and bake, until juices run clear, about 20 minutes Process the carrot and onion together in a food processor, till smooth.
  • Fry garlic in oil in a large saucepan, add the carrot and onion and bay leaf, fry for 5 minutes.
  • Add tomatoes and wine, bring to a boil.
  • Lower heat to simmer and add the cooked meat, leaving whole.
  • Add spices.
  • Let simmer 2hrs on low.
  • Serve over pasta.
  • Top with freshly grated Parm cheese. When the sauce is ready to serve take the meat out and put on a serving dish and pass with the sauce.......the meat will be melt in your mouth good!!
