SUNNY'S NUNYA BUSINESS MEATLOAF

Number Of Ingredients 7

2 pounds ground chuck (80 percent beef, 20 percent fat)
1 1/2 cups Italian-style breadcrumbs
One 14.5-ounce can diced tomatoes
One 11-gram packet French onion mushroom soup/dip mix
1/4 cup finely grated (like sand baby!) Parmesan
Kosher salt and freshly ground black pepper, if needed
1 egg, whisked

Steps:

  • Preheat the oven to 350 degrees F.
  • Break up the beef and drop loosely in a large bowl. Sprinkle the breadcrumbs evenly over the beef.
  • In a medium bowl, add the tomatoes, soup mix and Parmesan. Mix and mash up any large chunks of tomatoes using a potato masher. Taste and season with salt and pepper if necessary (the mix packet contains lots of seasoning, so you probably won't need to). Add the egg and stir.
  • Pour all but 1/2 cup of the flavor base (tomato mixture) over the top of the beef. Using your less dominant hand with your fingers spread out like a pitchfork, gently mix and fold everything together, turning the bowl with your free hand, until just combined. Don't over-mix!
  • Form the mixture into the shape of a loaf on a parchment-lined baking sheet or press gently into a meatloaf pan. Top the loaf with the remaining flavor base. Cook until the internal temperature is 155 degrees F, 50 to 65 minutes. Remove and gently cover with aluminum foil for 10 minutes to allow the ambient heat to bring it to 160 degrees F before slicing and serving.

5 pounds ground beef
4 eggs
1 large package stuffing mix
1 tablespoon grated garlic
1 cup chopped onion
One 20-ounce can tomato juice
2 tablespoons freshly ground black pepper
2 tablespoons salt
1 cup ketchup

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix all ingredients except ketchup together in a large bowl until just combined. With your hands, form 20 individual football-shaped loaves. Place loaves in a large cake pan or baking sheet. Spread a layer of ketchup, as thick as desired, over each loaf. Bake for 45 minutes to 1 hour, until fully cooked through.

3 tablespoons butter
1/2 cup finely chopped onion
1/2 cup scallion
1/2 cup finely chopped carrot
1/4 cup finely chopped celery
1/4 cup chopped green pepper
1/4 cup chopped red pepper
2 teaspoons minced garlic
3 eggs, well beaten
1/2 cup ketchup
1/2 cup milk
1 teaspoon ground cumin
1/2 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
salt & pepper, to taste
2 lbs ground turkey
12 ounces turkey sausage
3/4 cup fine fresh breadcrumb, toasted

Steps:

  • Melt butter in a heavy skillet. Add onions, scallions, carrots, celery, bell peppers and garlic. Cook, stirring often, until the moisture from the veggies has evaporated, about 10 minutes. Set aside to cool; then cover and refrigerate until chilled, at least one hour.
  • In a mixing bowl, beat together the eggs, ketchup, milk, cumin, nutmeg, cayenne, salt and pepper. Add the ground turkey, sausage and bread crumbs. Then add the chilled vegetables and mix thoroughly with your hands, kneading for 5 minutes.
  • Form the mixture into a loaf, approximately 12 x 5 x 2 1/2 inches, on a baking sheet. Bake until cooked through (or 160 degrees F on a meat thermometer), about 1 hour. Let rest 20 minutres before slicing.

½ cup water
¼ cup white sugar
1 tablespoon brown sugar
1 tablespoon red wine vinegar
1 tablespoon prepared yellow mustard
1 teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon paprika
2 pounds ground beef
2 teaspoons minced onion
12 hamburger buns, split

Steps:

  • Whisk together the ketchup, water, white sugar, brown sugar, vinegar, mustard, salt, pepper, and paprika in a large saucepan. Bring to a simmer over medium-high heat; reduce heat to medium-low and simmer 15 minutes.

2 slices firm white sandwich bread
1 large egg
2 pounds ground beef chuck
2 cups canned tomato sauce
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 cup water
1/4 cup cider vinegar
1/4 cup packed light brown sugar
1/4 cup yellow (ball-park) mustard

Steps:

  • Preheat oven to 350°F.
  • Finely chop onion. Cut enough bread into 1/2-inch cubes to measure 1 1/4 cups. In a large bowl lightly beat egg. Add chuck, onion, bread cubes, 1 cup tomato sauce, salt, and pepper and lightly blend with hands until just combined. In a roasting pan form mixture into a roughly 9- by 5-inch loaf and bake in middle of oven 10 minutes.
  • While meatloaf is baking, in a small saucepan whisk together water, vinegar, brown sugar, mustard, and remaining cup tomato sauce and bring to a boil over moderate heat.
  • After meatloaf has baked 10 minutes, spoon enough sauce over meatloaf to coat it. Continue to bake meatloaf, spooning more sauce over it after 30 minutes, 1 hour and 10 minutes more, or until a thermometer inserted in center registers 160°F. Let meatloaf stand in pan on a rack 10 minutes. Return sauce remaining in saucepan to a boil and simmer 1 minute.
  • Serve meatloaf with sauce on the side.

1 cup whole milk

1 tablespoon worcestershire sauce
½ teaspoon dried thyme
1 tablespoon kosher salt

Steps:

  • Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. ¾ cup minced onion
½ cup finely chopped bell pepper
½ cup milk
