2 tablespoons finely chopped onion
2 tablespoons olive oil
3 tablespoons all-purpose flour
1 teaspoon poultry seasoning
1/2 teaspoon pepper
1-1/2 cups chicken broth
1/2 cup unsweetened almond milk
1 cup finely diced cooked chicken
1/2 teaspoon salt
Minced fresh parsley, optional

Steps:

  • In a large saucepan, cook onion in oil over medium heat until tender. Whisk in flour, poultry seasoning and pepper until smooth; gradually whisk in broth and almond milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Add chicken and cook until heated through. If desired, sprinkle with parsley.

4 tablespoons unsalted butter
1 medium sweet onion, such as Vidalia, halved and sliced (1 1/2 cups)
Kosher salt
2 tablespoons unbleached all-purpose flour
1/4 teaspoon cayenne pepper
1/2 teaspoon ground turmeric
3 cups fresh corn kernels, plus milk scraped from cobs (from 3 to 4 ears)
2 cups low-sodium chicken or vegetable broth

Steps:

  • In a large saucepan, melt butter over medium heat. Add onion and 1 teaspoon salt; cook, stirring occasionally, until softened, 5 to 7 minutes. Add flour, cayenne, and turmeric; cook 1 minute more. Add corn kernels and milk, broth, and 2 cups water. Bring to a boil, then reduce heat to medium-low and simmer until corn is tender, 8 to 10 minutes. Remove from heat; let cool slightly. Transfer mixture to a blender, working in batches if necessary, and purée until very smooth, 2 to 3 minutes. (Strain through a fine-mesh sieve, if desired, for the silkiest texture.) Refrigerate until cold, at least 4 hours or, in an airtight container, up to 3 days. Season with salt; serve.

1 (12 ounce) can corn

  • Saute onions.

Make the chicken base for this recipe and freeze it so that you can cook this creamy chicken and sweetcorn soup in just 20 minutes during a busy week

1 tbsp olive oil
1 celery stick
1 leek , finely sliced
300ml strong chicken stock
250g sweetcorn (use fresh or frozen), half of it crushed lightly with a fork
200g greens (such as spinach or kale), finely sliced
small bunch chives , finely snipped
25g butter
25g plain flour
250ml milk
1 tsp olive oil
2-3 (depending on size) skinless chicken thigh fillets, cut into cubes
1 skinless chicken breast, cut into cubes
⅓ onion , very finely chopped (optional)

Steps:

  • For the base, melt the butter in a saucepan, stir in the flour and cook for a few mins, stirring all the time. Now, using a whisk or spatula, carefully stir in the milk, a little at a time, making sure the sauce stays smooth. Bring the mixture to a simmer and cook for a couple of mins until it thickens - it will be very thick. Turn the heat right down and keep cooking for 5 mins, stirring often.
  • Meanwhile, heat the oil in a non-stick frying pan and fry all of the chicken in batches until it starts to colour lightly at the edges. Scoop out each batch of chicken and put it on a plate. Add the onion to the pan if you are using it, and cook over a low heat until soft. Add the chicken and any juices and the onion to the white sauce, fold it in and cook the mixture for a further 15 mins or until the chicken is cooked through. If you're making the base ahead of time, you can leave it to cool at this stage then freeze in an airtight container for up to a month. (Defrost fully before using in the next step.)
  • Heat oil in a pan, add the celery and leek, then fry them gently until completely soft. Stir in the chicken base and stock and bring the mixture to a simmer.
  • Add the sweetcorn and cook for 5 mins, then stir in the greens and cook for 1 min. Sprinkle over the chives and serve.

3/4 cup almond milk
1/3 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon parsley
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon oregano
1/8 teaspoon basil
1/4 cup cooked mushroom (optional)
1/4 cup cooked celery (optional)

Steps:

  • Combine the chicken broth with 1/2 cup of the almond milk in a large saucepan. Bring to a low boil.
  • Whisk the flour and seasonings into the remaining cup milk until smooth. The mixture will be thick.
  • Pour the milk/flour/seasoning mixture into the broth mixture in the saucepan and reduce heat to low. Stir/whisk continuously as it simmers to avoid lumps.
  • Continue whisking 5-10 minutes until the mixture is smooth and thick.
  • For cream of mushroom, add 1/4 cup cooked mushrooms after the mixture is taken off the stove, before it thickens.For cream of celery, add 1/4 cup diced, cooked celery pieces after the mixture is taken off the stove, before it thickens.
