Easy Super Moist Banana Apple Muffins are delicious, moist, perfect day or night and better yet, a great way to use up ripe fruit!

Number Of Ingredients 10

2 Ripe bananas (smashed)
1 medium apple (peeled, finely chopped)
1/3 c melted butter
1/2 c sugar
1 egg (beaten)
1 1/2 tsp vanilla extract
1 tsp baking soda
1/4 tsp salt
1 1/2 c all purpose flour
1 tsp cinnamon

Steps:

  • Preheat oven to 350°F
  • Add the paper liners into the muffin tins or spray with a non-stick baking spray
  • In a large bowl, use a fork to mash up the bananas then pour the melted butter into the bananas.
  • Add in the sugar, egg and vanilla. Mix well.
  • Stir in baking soda, salt, and cinnamon.
  • Slowly incorporate the flour into the mixture and stir until blended
  • Using a food processor (or by hand) fine chop the apples
  • Stir apples into the mixture
  • Pour the muffin mixture into the tins, filling each paper baking cup about 2/3's of the way up.
  • Bakes 25 - 30 minutes
  • Cool on rack before storing.

3/4 cup mashed banana
2 tablespoons flax seed meal
6 tablespoons water
1/3 cup applesauce
1/2 cup unsweetened apple juice concentrate
1 tablespoon water
1 teaspoon water
2 cups oat flour (or grind rolled oats in blender)
3/4 teaspoon cinnamon
2 teaspoons baking soda

Steps:

  • Preheat oven to 350 degrees.
  • Prepare 12 standard sized muffin cups with paper liners.
  • Combine flax seed and 6 tablespoons water in small bowl and let sit about ten minutes.
  • In a large bowl, stir together banana, apple sauce, concentrate, and 1 tablespoons plus 1 teaspoons water.
  • Add flax water combination (this acts as the egg in the recipe).
  • Stir in the baking soda quickly, then mix 28 to 30 beats. Immediately spoon batter into prepared muffin cups.
  • Bake about 18 minutes or until toothpick inserted into muffin comes out clean.

4 pureed bananas, over-ripened

Steps:

3/4 cup old-fashioned oats
1/2 cup all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1 egg
1/3 cup milk
1 tablespoon vegetable oil
1/2 cup grated peeled tart apple
1/4 cup mashed ripe banana

Steps:

  • In a small bowl, combine the first seven ingredients. In another bowl, beat the egg, milk and oil. Stir into dry ingredients just until moistened. Fold in apple and banana., Fill greased muffin cups about three-fourths full. Bake at 375° for 25-30 minutes or until a toothpick comes out clean.
