I finally got around to making this fudge for a "Graze-feast" at the office today. I was a bit skeptical at first, but it has indeed lived up to the promises of its goodness. And so easy to make!

1/2 lb Velveeta Cheese
3/4 c butter
2 lb powdered sugar
1 Tbsp vanilla
1 c peanut butter

Steps:

  • 1. melt cheese and butter together (in microwave or on stovetop), stirring until combined
  • 2. add powdered sugar, vanilla and peanut butter and knead until you can no longer see powdered sugar
  • 3. spread in greased pan and put in refrigerator until set
  • 4. cut and enjoy!

3/4 lb. (12 oz.) VELVEETA, cut into 1/2-inch cubes
1 cup butter or margarine
1-1/2 pkg. (4 oz. each) BAKER'S Unsweetened Chocolate (6 oz.), broken into pieces
2 Tbsp. light corn syrup
2 pkg. (16 oz. each) powdered sugar (about 8 cups)
1-1/2 cups chopped pecans
1 tsp. vanilla

Steps:

  • Microwave VELVEETA, butter, chocolate and corn syrup in microwaveable bowl on HIGH 3 min. or until blended, stirring after 2 min.
  • Add chocolate mixture, in batches, to sugar in large bowl, beating with mixer on medium speed until blended after each addition. Stir in nuts and vanilla.
  • Pour into 13x9-inch pan sprayed with cooking spray. Smooth top with spatula. Refrigerate several hours or until firm before cutting into 1-inch squares.

1 cup (2 sticks) unsalted butter, softened
8 ounces pasteurized process cheese (like Kraft Velveeta)
2 pounds confectioners' sugar
1/2 cup unsweetened cocoa
2 teaspoons vanilla extract
1 to 1 1/2 cups pecans , or walnuts, coarsely chopped

Steps:

  • Gather the ingredients.
  • Butter a 9-inch-square pan. It's best to avoid cooking spray since this recipe produces a heavy, dense end result.
  • Cut the Velveeta cheese into small cubes. They don't have to be symmetrical, but smaller pieces will be easier to work with than a large chunk.
  • In a large nonstick saucepan over medium heat, combine the butter and cheese cubes. Cook, stirring frequently, until melted and smooth.
  • Remove from heat, but don't allow to cool. If it thickens, add a teaspoon of hot water to reduce the stickiness.
  • Combine the confectioners' sugar and cocoa and whisk to blend (or sift them together). Add the sugar and cocoa mixture to the cheese mixture, mixing well. Add the vanilla and nuts and blend well. The mixture will be thicker than you might expect, but that's OK.
  • Press the mixture into the prepared pan; chill in the refrigerator (not the freezer) for about 2 hours or until firm. Cut into squares.

Vegetable oil, cooking spray
2 cups sugar
1 teaspoon salt
6 tablespoons unsalted butter
1 cup heavy cream
3 1/2 cups mini marshmallows
3 cups semisweet or white chocolate chips
1 teaspoon pure vanilla extract
1/2 cup crushed peppermint candy

Steps:

  • Line a 9-by-13-inch baking pan with two sheets of waxed or parchment paper in a crisscross manner (one lengthwise, one crosswise) so ends overhang sides of pan; coat evenly with cooking spray.
  • In a heavy-bottomed saucepan over medium heat, cook sugar, salt, butter, cream, and marshmallows, stirring, until butter and marshmallows are almostmelted, 5 to 6 minutes.
  • Bring mixture to a boil; cook, stirring occasionally,5 minutes. Remove from heat. Add chips and vanilla; stir until chips are melted. Pour mixture into lined pan.
  • Let fudge cool in the pan at room temperature,3 hours. Use edges of paper to lift out fudge; place on cutting board, and remove paper. Cut out shapes with cookie cutters, or cut fudge into bars. Sprinkle evenly with crushed candy.

1 pkg (6 oz.) chocolate, peanut butter, butterscotch or flavor of choice chips
1 1/2 tsp vanilla
1-2 cups nuts (optional)
2 lb or 2 boxes confectioner's sugar

Steps:

  • Melt cheese, butter, and chips in microwave 4 minutes or until melted. Stir and mix well.
  • Add vanilla, nuts and confectioner's sugar. Mix and blend well and even. Dough gets stiff.
  • Press into 9 x 13 pan. Set aside to firm. Cut and enjoy.

1 teaspoon plus 1/2 cup butter, softened, divided
3-1/2 cups confectioners' sugar
1/2 cup baking cocoa
1/4 teaspoon salt
1/4 cup milk
1 teaspoon vanilla extract
1 cup M&M's minis

Steps:

  • Line an 8-in. square pan with foil and greased the foil with 1 teaspoon butter; set aside. In a large bowl, combine the confectioners' sugar, cocoa and salt. Melt remaining butter; add milk and vanilla. Stir into sugar mixture until blended; whisk until smooth. Stir in M&M's. Immediately spread into prepared pan. Refrigerate until firm, about 2 hours., Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator.
