I found this recipe years ago, and have not made any other since. This dough freezes very well.

2 ½ cups all-purpose flour
1 cup shortening
¼ teaspoon salt
1 egg
¼ cup cold water
1 tablespoon distilled white vinegar

Steps:

  • Combine flour and salt in a large bowl. Cut in shortening until it resembles coarse crumbs.
  • Mix egg, water, and vinegar together in a separate bowl. Pour into flour all at once and blend with a fork until dough forms into a ball. Divide into 3 equal-sized rounds.
  • Wrap with plastic and chill in a refrigerator until ready to prepare.

This is a recipe I tweaked from cdkitchen.com. It originally called for lard, but I don't care for it, so I subbed half butter, half shortening. I made this for a Colonial Apple Pie, and it was delicious! The 7-Up sounds strange, but you don't taste it at all. It just makes the crust flakey.

Number Of Ingredients 5

2 3/4 cups all-purpose flour
3/4 teaspoon salt
1/4 lb shortening (Stash it in the freezer for a few minutes.)
1/4 lb cold unsalted butter, cubed (Stash it in the freezer for a few minutes.)
3/4 cup carbonated lemon lime beverage such as 7-up

Steps:

  • In a bowl, combine salt and flour.
  • Cut in shortening and butter using a pastry cutter until you see pea-sized globs.
  • Slowly pour in the 7-UP, and stir to combine.
  • Split dough in half, form into rounds, and wrap in plastic wrap.
  • Chill in the fridge 30 minutes to an hour before using.
  • Use in recipes that call for a single-crust pie.

4 cups all purpose flour (or Pastry flour)
1 tsp salt
3/4 cup cold salted butter
3/4 cup cold vegetable shortening
3/4 cup cold 7 Up

Steps:

  • In a medium-size mixing bowl, use a whisk to sift together flour and salt.
  • Use a pastry cutter, 2 knives or a food processor to cut butter and shortening into flour until it resembles peas.
  • Add 7 Up mixing until the dough comes together.
  • Turn out onto a lightly floured non-stick surface. Divide in half or into thirds, then form into disks. (You may yield Two 10 inch pie crusts or three 8-9 inch pie crusts, divide according to how you plan on using it.)
  • Chill for at least 30 minutes or until firm.
  • To use: On a lightly floured non-stick surface, roll chilled dough into desired size. Press into pie plate. Flute edges using thumb and forefinger method or press with the tines of a fork.

My mom's perfect pie crust receipe. It is easy to roll out, is tender and flaky, and freezes quite well.

Number Of Ingredients 8

5 cups flour (or slightly more)
1 teaspoon baking powder
1 teaspoon salt
1 tablespoon brown sugar
1 lb shortening or 1 lb pure lard
1 egg
1 tablespoon vinegar
cold water

Steps:

  • Place a large sieve in a large mixing bowl.
  • Into the sieve place the flour, baking powder, salt, and brown sugar.
  • Sift into bowl.
  • With a pastry blender, cut in the shortening until crumbly and no large bits or shortening remain.
  • In a measuring cup, beat the egg, add the vinegar, and enough cold water to make one cup.
  • Pour over flour mixture, a little at a time, stirring with a fork until the dough begins to stick together.
  • Add more flour, if necessary, and knead a few times right in the bowl until you have a large, smooth ball.
  • Pat firmly into the bowl and lightly mark off six equal portions.
  • With a knife, cut through each portion.
  • Pat into round balls and place in separate plastic bags.
  • Dough will keep in the refrigerator for two weeks, or in the freezer for two months.
