Sharon's No Cheese Pizza image

I tried Amy's No Cheese Pizza recipe recently and wanted to make it at home. After searching and not finding a recipe for it, I came up with this. Amy's crust has wheat germ, wheat bran in it so if you are making your own crust, you could add that in(or sprinkle over storebought crust). I hope you enjoy it as much as I did.

Number Of Ingredients 16

1/8 cup olive oil for frying onion, divided (more or less to taste)
3 cups thinly sliced onions (approximately 3 pounds)
6 garlic cloves
3 tablespoons fresh thyme (or 1 Tbs. dried)
1 tablespoon fresh oregano, chopped (or 1 1/2 tsp. dried)
1/3 cup tomato paste (I have subbed half tomato sauce and half catsup with good results)
1 tablespoon lemon juice
2 teaspoons agave syrup
salt & pepper
1 tablespoon oil, for drizzling on top of pizza (optional)
1/2 cup marinated artichoke hearts, coarsely chopped
1/2 cup sliced shiitake mushroom
1/2 cup roasted red pepper, sliced
1 teaspoon olive oil
1 tablespoon balsamic vinegar
1 prepared 12-inch thin pizza crust (or thick if you like)

Steps:

  • Preheat oven to 450*F.
  • Heat the olive oil, saving out 1 tbls. and add the onions, garlic, thyme and oregano. Cook, stirring occassionally, until most of the moisture has evaporated and the onion mixture is very soft, almost smooth, and caramelized, about 30 minutes.
  • Put the onion mixture along with tomato paste, lemon juice and agave syrup in a blender and pulse until slightly pureed(a few chunks here and there are fine).
  • Season with salt and pepper.
  • In the same frying pan, heat 1 tbls. of oil and saute the shitake mushrooms for about 3-5 minutes.
  • Cover the crust with the onion/tomato mixture, sprinkle evenly with the artichokes, mushroom, and bell peppers.
  • Drizzle with olive oil and balsamic vinegar. Sprinkle over a little freshly ground black pepper if desired.
  • Bake for 10-12 minutes or until golden brown. The baking time will vary depending on whether you bake on a stone, on the oven rack, or on a pizza pan. Be sure that your oven is well pre-heated before putting pizza inches.

300 g self-raising flour
1 teaspoon yeast
1 teaspoon sugar
1/2 cup warm water (75ml)
130 ml water
400 g tomatoes, chopped
3 tablespoons tomato puree
100 g oyster mushrooms
1 medium aubergine
5 -6 pitted black olives
150 g fresh pineapple
1 medium red onion
2 tablespoons olive oil
1 tablespoon black bean sauce
dried basil
salt and pepper

Steps:

  • Add the sugar and warm water to the yeast in a cup. Stir until the yeast and sugar is completely dissolved.
  • Leave to stand for 5 minutes or until the yeast rises.
  • Add the yeast to the flour in a mixing bowl.
  • Add the water and knead until a dough is formed. (Be careful while adding the water and check the consistency of the dough before adding more. It will be difficult to handle a watery dough.).
  • Dust a board with flour and roll the dough flat just slightly larger than the size of the pizza tray.
  • Sprinkle some flour on a 30 cm pizza tray.
  • Loosely wrap the dough around the rolling pin to transfer it to the tray.
  • Cover with a cloth and leave to stand in a warm place for about 20 minutes.
  • Preheat over at 180 degrees Celsius.
  • In the meantime, slice the aubergine about 5 mm thick.
  • Add the black bean sauce to the sliced aubergines. Mix well.
  • In a frying pan add 2 tablespoons of olive oil.
  • Add the aubergines and stir to coat them in the oil. Cover and allow to cook on medium heat until half cooked, turning occasionally. Be careful not to burn them, they can scorch quite easily!
  • Remove from the pan; set aside.
  • In the same pan, add the chopped tomatoes. Allow to reduce a little bit for 2-3 minutes, mashing the tomatoes slightly to a semi-puree. Add salt.
  • By this time the dough would have risen.
  • Place the dough in the oven to pre-cook for 12 minutes.
  • In the meantime, cut the mushrooms and pineapples into small pieces (how small or big depends on how you prefer them to be!).
  • Slice the onion into rings.
  • Cut the pitted olives in half.
  • Remove pizza dough from the oven and lay on a stand.
  • Start by spreading a layer of the tomato sauce on the dough.
  • Sprinkle with some dried basil.
  • Arrange the aubergines.
  • Arrange the mushrooms, olives, pineapple and red onion.
  • Sprinkle a few spoonfuls of tomato puree on top.
  • Add some cracked pepper.
  • Put in the oven for 20 minutes.
  • Remove, slice and serve.

This is from my dad, who developed some vegan recipes after my sister became a vegan. This doesn't have any cheese, and you don't miss it.

1 (1/4 ounce) package active dry yeast
1 teaspoon sugar
1 cup warm water (110-120 deg. F)
2 1/2 cups white flour
1 ounce fresh basil
4 tablespoons olive oil
3 garlic cloves, crushed
3 tablespoons ketchup
2 tablespoons pine nuts
1 tablespoon lemon juice
3 Italian plum tomatoes, sliced
2 cups mushrooms, thick sliced
1 medium onion, cut in half and sliced

Steps:

  • Mix water, yeast and sugar and let stand 10 minutes to start bubbling.
  • Add flour to yeast mix and blend well.
  • Place in a greased or oiled bowl, and cover with a warm damp cloth.
  • Allow to rise in a warm place until double in bulk, around 1 hour.
  • Punch down dough and pat out onto an oiled (or cornmeal dusted) pizza pan to form the crust.
  • Bake in a preheated 450° F oven for 7 minutes. Crust may be refrigerated or frozen at this point. If using right away, turn oven down to 350°F.
  • Place olive oil, basil, garlic, ketchup, pine nuts, and lemon juice in blender and process until smooth.
  • Spread mixture onto baked pizza crust evenly.
  • Add tomatoes, mushrooms and onions (or whatever you like, really) and bake at 350° for 10 minutes.

This is Allen Schubert's adaptation of a Dean Ornish recipe. I am not a fan of pizza, but this has converted me. The secret here is roasting the onion and eggplant. Feel free to use a store-bought crust, and add whatever toppings you like. Enjoy this nearly fat-free pizza, perfect for vegans (check ingredients on premade crust if you are vegan and opt to use a store-bought one) and vegetarians.

1 cup tomato puree
1 teaspoon dried thyme
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh parsley
1 teaspoon dried oregano
1 teaspoon minced garlic
1 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon sugar
1 commercially prepared pizza crust
1 eggplant, oven roasted
1 zucchini, sliced 1/4 inch thick and blanched
1 yellow squash, sliced 1/4 inch thick and blanched
2 plum tomatoes, sliced 1/4 inch thick
1 teaspoon chopped fresh basil

Steps:

  • Preheat the oven to 450 degrees. In a large bowl, combine the onions, tomato puree, thyme, basil, parsley, oregano, garlic, pepper, salt, and sugar and stir to combine.
  • Spread the mixture over the crust.
  • Chop the flesh of the roasted eggplant and spread over the sauce.
  • Layer the zucchini, yellow squash, plum tomatoes and basil over the eggplant.
  • Bake the pizza for 20 to 25 minutes or until the crust is golden brown.

2 tbsp olive oil , plus extra for drizzling
2 garlic cloves , sliced
400g can chopped tomatoes
400g frozen spinach , defrosted
toppings of your choice- anchovies, olives, capers, pepperoni, artichoke hearts, grilled peppers
2 eggs
small handful basil leaves
2 handfuls rocket
juice ½ lemon
350g strong white flour
7g sachet fast-action dried yeast
1 tbsp coarse or fine semolina

Steps:

  • To make the base, tip the flour into the bowl of a table-top mixer (or food processor with a dough attachment). Add 1 tsp salt to one side of the bowl and the yeast to the other. Add 275ml lukewarm water and mix on slow until a sticky dough forms. Turn up the mixer for 5-6 mins until an indent pushed into the dough pops out quickly. Put the dough in a lightly oiled bowl, then cover and leave in a warm place to prove until doubled in size.
  • Meanwhile, heat the oil in a frying pan and sizzle the garlic for a few secs, then tip in the tomatoes, season and simmer for 5 mins until the sauce has thickened.
  • Heat oven to 220C/200C fan/gas 7. Knead the dough for a few mins, then halve and roll each half as thinly as possible. Lay each base on a baking sheet dusted with the semolina. Divide the tomato sauce between the pizzas, spreading almost to the edge. Dot over the spinach, add your toppings and drizzle with a little oil. Cook for 5 mins, then crack an egg onto each pizza. Swap the baking sheets, then cook for 10 mins more or until bases are cooked through. Drizzle the basil and rocket with a drop of oil and the lemon juice. Scatter over the pizza before eating.
