A cool and creamy no-bake dessert made with a graham cracker crust and layers of sweetened cream cheese, lemon pudding, and Cool Whip.

10 tablespoons butter, melted
2 cups crushed graham crackers (about 14 large graham crackers)
1/3 cup sugar
1 (8 oz) package cream cheese, softened
1 cup powdered sugar
2 tbsp lemon juice
1 tub (16 oz) Cool Whip, thawed and divided
2 (3.4 oz) box instant lemon pudding
3 cups milk

Steps:

  • In a medium bowl, mix to combine butter, graham cracker crumbs, and sugar. Press evenly into the bottom of a 9 x 13 dish. Chill in the refrigerator for 30 minutes.
  • Using a hand mixer, beat to combine cream cheese, powdered sugar, lemon juice, and 1/2 of the tub of Cool Whip. Spread evenly over crust.
  • In a large bowl, whisk to combine lemon pudding mix and milk until the pudding thickens (3- 5 minutes). Spread evenly over the cream cheese layer.
  • Top with remaining Cool Whip. Chill for at least 1 hour before serving.

1/2 cup sliced fresh mushrooms
1/4 cup chopped onion
1 teaspoon canola oil
3/4 cup spaghetti sauce
1/2 cup chopped fresh tomato
1/4 teaspoon dried basil
1/8 teaspoon pepper
4 lasagna noodles
1/2 cup shredded part-skim mozzarella cheese
Shredded Parmesan cheese

Steps:

  • In a large skillet, saute mushrooms and onion in oil until tender. Add the spaghetti sauce, tomato, basil and pepper. Bring to a simmer. Reduce heat; cover and simmer for 10 minutes, stirring occasionally. Meanwhile, cook lasagna noodles according to package directions., Add mozzarella cheese to the sauce; cook on low until cheese is melted. Drain noodles; cut into thirds. For each serving, on a plate, layer 2 tablespoons of sauce and two noodle pieces. Repeat layers twice. Top with 2 tablespoons sauce. Sprinkle with Parmesan cheese.

This is a delicious and refreshing no bake dessert that is easy to make and always a hit.

1 pkg lemon sandwich cookies (large pkg)
1/2 c butter or magarine, melted
16 oz cream cheese, softened
1 c powdered sugar
1 Tbsp milk
16 oz cool whip
3 c milk
2 pkg lemon instant puddng (3.9 oz each)

Steps:

  • 1. Separate sandwich cookies. In 9x13 pan place the half of the cookies that have the most crème on the bottom of pan, crème side up
  • 2. In medium to large bowl add melted butter or margarine, softened cream cheese, 2 tablespoons milk and powdered sugar. Blend with mixer until smooth. Then fold in half of the cool whip. Spread mixture on top of cookie halves. place remaining cookie halves on top of cream cheese layer.
  • 3. In another bowl whisk together the 2 pkgs lemon pudding and 3 cups of milk. When blended and starting to firm spread over cookies.
  • 4. Place in refrigerator for 5 mins so lemon layer can set. Then remove and spread other half of cool whip over the lemon layer.
  • 5. if desired garnish top of dessert with some of the crushed cookies (if any are left), or some grated lemon rind. Serve cold and enjoy.

1/2 cup ricotta
3 tablespoons grated Parmesan
3 tablespoons plus 2 teaspoons extra-virgin olive oil
Coarse salt and ground pepper
8 lasagna noodles, broken in half crosswise
1 small garlic clove, minced
2 pints grape tomatoes, halved
2 zucchini (about 1 pound total), halved if large and thinly sliced
1 tablespoon torn fresh basil leaves, plus more for serving

Steps:

  • In a small bowl, combine ricotta, Parmesan, and 2 teaspoons oil; season with salt and pepper. In a large pot of boiling salted water, cook noodles according to package instructions; drain.
  • Meanwhile, in a large skillet, heat 2 tablespoons oil over medium-high. Add garlic and tomatoes; season with salt and pepper. Cook, stirring, until slightly broken down, about 3 minutes. Transfer tomatoes to a bowl. Add 1 tablespoon oil and zucchini to skillet; season with salt and pepper. Cook, stirring, until zucchini are tender, about 5 minutes. Transfer to another bowl and stir in basil.
  • Place some tomatoes on four plates; top with a noodle and small spoonfuls ricotta, zucchini, and more tomatoes. Repeat layering twice, then top with remaining noodles and tomatoes. Garnish with basil.
