NO BAKE CHOCOLATE & OATMEAL COOKIE BARS

No Bake chocolate & oatmeal cookie bars image

I picked up this recipe on the internet and wanted to try this one as it is suppose to be healthy? Well, I will try it even if you have to twist my arm to add the chocolate chips. Time 10m

Number Of Ingredients 6

1 c chunky or creamy peanut butter
2/3 c honey (your local honey is the best)
1/2 c coconut oil (no substitutes, this is what makes it creamy)
2 c oats, oldfashion, do not use instant
1 1/4 c chocolate chips
3/4 c rice crispy cereal (can substitute dried cranberries, fruit or raisins)

Steps:

  • 1. Combine peanut butter, honey, coconut oil into a medium sauce pan and stir together over medium heat until melted.
  • 2. Add dry ingredients to large bowl: oats, chocolate chips and rice crispy cereal. Mix together
  • 3. Pour melted peanut butter mixture over the dry ingredients in the bowl. Mix well and pour the combined ingredients into a 9 x 13 baking dish. This is fairly thick, so you could use a larger dish. I would suggest lining your baking dish with parchment paper as I had to let set out on the counter to soften a bit before I could cut and remove from baking dish. Keep refrigerated. I covered my cut cookie bars with saran wrap to keep them fresher.
