The Best Cheese Quesadillas take minutes to prepare and turn out creamy and delicious on the stovetop! Made with flour tortillas and shredded cheese, they're a great snack or easy dinner.

2 medium flour tortillas
2/3 cup shredded cheese ((Oaxaca, Chihuahua, Mozzarella, or Monterey Jack are best))
salt, (to taste)
sour cream (or Mexican crema)
guacamole
pico de gallo (or your favorite chunky salsa)

Steps:

  • Heat a large nonstick skillet or comal over low-medium heat. Heat the tortillas slightly, flipping them over every 10 seconds, until they're easily foldable and pliable.
  • Evenly divide the cheese and sprinkle it onto one half of each tortilla. Generously season with salt.
  • Fold the tortillas over the cheese to create a half-moon shape.
  • Cook the quesadillas for 1-2 minutes, or until one side of the quesadilla is golden-brown. You may have to press down lightly on the tops of the quesadillas with a spatula to prevent the tortillas from opening up.
  • Flip over and cook for another 1-2 minutes, until golden-brown and the cheese has fully melted.
  • Serve immediately as is, or cut them in half and serve with sour cream, pico and your favorite salsa.

4 flour tortillas (8 inches), warmed
1-1/2 cups shredded Mexican cheese blend
1/2 cup salsa

Steps:

  • Place the tortillas on a greased baking sheet. Combine the cheese and salsa; spread over half of each tortilla. Fold over. , Broil 4 in. from the heat for 3 minutes on each side or until golden brown. Cut into wedges.

This straightforward quesadilla has an unexpected twist: a border of salty, crispy cheese surrounding the tortilla. Achieving it couldn't be easier; just press down on the folded tortilla as it heats up in the pan so the cheese spills out and turns golden. A nonstick pan is key here, otherwise the melted cheese will glue itself onto the cooking surface. Medium heat is just the right temperature for a quesadilla: It's hot enough to crisp up the cheese but low enough to prevent the cheese from burning.

2 teaspoons oil (such as olive, grapeseed or sunflower oil)
1 (8-inch) flour tortilla
2/3 cup shredded cheese (such as Cheddar, Monterey Jack or Mexican cheese blend)

Steps:

  • Place a medium nonstick skillet over medium heat, then add the oil. Let oil heat up for 20 seconds, swirling the pan around so the oil coats the bottom.
  • Place the tortilla in the skillet and sprinkle the cheese evenly over the top. Once the cheese begins to melt, 30 seconds to 1 minute, use a spatula to fold the tortilla in half. Using the spatula, press down firmly on the top of the tortilla until some of the cheese runs out into the pan. Let the quesadilla cook until the cheese that's leaked out solidifies and turns brown, 2 to 3 minutes.
  • Flip the quesadilla over and let cook on the other side for another 1 to 2 minutes, until the cheese is crisp and golden. Slide quesadilla onto a plate and serve immediately.

I wanted to whip up a nice breakfast for us this morning and this is what happened! The instructions are very easy - I was just being specific. Enjoy!

1 cup cooked ham, diced
1 egg
1 cup egg substitute or 4 eggs
salt and pepper
1 cup low-fat cheddar cheese, grated
1 cup part-skim mozzarella cheese, grated
4 whole wheat tortillas or 4 soft flour tortillas

Steps:

  • Over medium-low heat, heat ham in a nonstick frying pan sprayed with nontick spray. While ham is warming, whisk together the egg and egg substitute. Add to ham and stir until eggs are just barely cooked. Salt and pepper to taste.
  • Place one tortilla in another frying pan, over medium heat. Sprinkle with half of the cheddar and half the ham and egg mixture. Top with half of the mozzarella. Place second tortilla on top.
  • Gently lift the tortilla to see when it is lightly browned. When it is, slide quesadilla onto a plate. Place pan on top of plate and flip so that the uncooked side is now on the bottom. Cook until lightly browned. Slide onto a cutting board and cut into 6 slices.
  • Repeat to make another quesadilla.

My 4-year-old loves these quick and easy cheese snacks. Just 2 ingredients and a microwave are needed! Cut crosswise into pizza shape slices. You can use any kind of cheese you want to and even any size flour tortilla. Serve with a little dish of ketchup to dip pieces into.

NIF'S VERY BASIC CHEESE QUESADILLAS



Nif's Very Basic Cheese Quesadillas image

Only 3 ingredients but my youngest DS loves it! Like the name says, it is very basic and is also very low maintenance. I would saute meat and/or veggies and have nonfat sour cream, salsa or guacamole to dip it in, but this is the basic-est version of the quesadilla. You can also use this as an appetizer and cut into thinner wedges. My DS can eat the whole thing now for dinner, but I thought I would list 2 servings. Enjoy!

1 1/2 cups low-fat cheddar cheese, grated
2 (10 inch) flour tortillas, soft (I use whole wheat)
low-sodium taco seasoning, to taste

Steps:

  • Place one tortilla in a nonstick pan and set on stove with the burner off. Sprinkle with cheddar cheese and taco seasoning.
  • Turn heat to medium and place other tortilla on top. After about 5 minutes, gently lift edge of quesadilla to see if bottom tortilla is starting to brown. It should take a little longer, but keep a close eye on it. When it is a light golden colour, slide quesadilla on to a plate.
  • Flip quesadilla into the pan and brown other side, checking frequently. Slide on to a cutting board. Let sit for a couple of minutes and then cut into quarters.
