GARLIC BREAD

6 large garlic cloves, chopped
1/4 cup chopped flat-leaf parsley
1/4 cup chopped fresh oregano leaves
1/2 teaspoon kosher salt
Freshly ground black pepper
1/2 cup good olive oil
1 loaf ciabatta bread
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the garlic in the bowl of a food processor and process until minced. Add the parsley, oregano, salt and pepper and pulse twice.
  • Heat the olive oil in a medium saute pan and add the garlic mixture. Remove the pan from the heat.
  • Slice the ciabatta bread in half horizontally, and spread the butter on 1 half. Spread the garlic mixture on the other half of the bread, and put the halves together. Wrap the bread in aluminum foil.
  • Place the bread in the oven and bake for 5 minutes. Open the foil, and continue baking for an additional 5 minutes.

1 French bread, cut in half lengthwise
1/2 cup low-fat mayonnaise
1/4 cup parmesan cheese, grated
4 garlic cloves, minced
1 tablespoon fresh basil (I always have loose frozen fresh basil and frozen basil cubes)
1 -2 teaspoon sriracha chili sauce (start with 1 and add more to taste)

Steps:

  • Preheat gas BBQ to low heat. You can just use one part of your grill for this and cook meat, etc. on the other part.
  • Mix together the mayo, parmesan cheese, garlic cloves, basil and chili sauce. Spread the mixture over each half of the loaf.
  • Set the bread halves on the grill, cut side up, over low heat. You want the topping to heat up and the bottom to brown up a bit and crisp. It takes about 10 - 15 minutes. If you want to, you can place the bread on a top rack while you cook everything else. Just make sure it doesn't dry out.

One 3- to 4-pound whole beef tenderloin, kept at room temperature for 1 to 2 hours
Kosher salt and freshly cracked black pepper
10 cloves garlic
3 tablespoons olive oil
2 tablespoons Dijon mustard
1 tablespoon honey
1 1/2 cups beef broth
1 tablespoon fresh Italian parsley, chopped

Steps:

  • Preheat the oven to 475 degrees F.
  • Place the beef in a roasting pan with a rack. Sprinkle with salt and pepper all over.
  • Add the garlic, oil, mustard and honey to a food processor. Pulse until the garlic is finely chopped. Rub the mixture evenly all over the beef. Pour the beef broth in the bottom of the roasting pan.
  • Bake until the internal temperature is 130 to 135 degrees F, 30 to 35 minutes.
  • Transfer the beef to a carving board and allow to rest for 30 minutes. Heat the roasting pan over medium heat and scrape up any browned bits. Pour any pan drippings onto a rimmed platter. Carve the beef into thick slices and transfer to the platter. Sprinkle with the parsley. Serve warm or at room temperature.

2 tablespoons minced chives
1 garlic clove, minced
1 loaf (1 pound) French bread, cut into 1-inch slices

  • In a small bowl, combine the butter, cheese, chives and garlic; spread on one side of each slice of bread. Wrap in a large piece of heavy-duty foil; seal tightly. Place on a baking sheet. Bake at 350° for 15-20 minutes or until heated through.

Adapted from a recipe on Bon Appetit, that basically said just add Sriracha sauce to butter and slather on bread. I've put in some measurements. Add or subtract to taste. I posted ingredients for about 6 slices of bread.

6 tablespoons butter, softened (I use Smart Balance margarine)
3 large garlic cloves, minced (or five to six small cloves)
2 -3 teaspoons sriracha sauce (more or less to taste)
6 thick slices French bread
parmesan cheese, grated (or shaved)

Steps:

  • Mix butter, minced garlic and Sriracha sauce together in a small bowl.
  • Spread over slices of French bread on both sides.
  • Place bread on foil lined cookie sheet. Sprinkle over 2 tbls. of the Parmesan cheese.
  • Broil 3 minutes on low. Turn slices over and sprinkle with the rest of the cheese and broil for another three minutes or so, until the cheese melts and the bread is golden brown around the edges. Keep an eye on them, they can go from golden brown to burnt quickly.
  • Enjoy!

NIF'S CHEESY FRESH HERB AND GARLIC BREAD

I came up with this because I had some fresh herbs on hand and wanted to make garlic bread. This is what I got! You can also use a teaspoon of each kind of dried herbs if you don't have fresh, but it won't be quite the same. Also, use whatever cheese you have on hand - this is just what I had. I hope you like it. Enjoy!

1 large loaf crusty bread
1/2 cup mayonnaise (I use half fat Hellmann's)
1/4 cup butter, room temperature
2 fresh garlic cloves, minced
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh basil, finely chopped
1 tablespoon fresh parsley, finely chopped
1 tablespoon green onion, thinly sliced
salt and pepper
1 cup low-fat cheddar cheese, grated
1/2 cup part-skim mozzarella cheese, grated
1/2 cup fresh parmesan cheese, grated

Steps:

  • Cut bread in half horizontally. Open loaf.
  • Mix mayo, butter, garlic, rosemary, basil,parsley, green onion, salt and pepper.
  • Mix cheeses together in a bowl. Put half of the cheese mixture in the mayo mixture and stir.
  • Spread half of the mayo mixture on each half of the loaf. Sprinkle remaining cheese on top.
  • I placed this over indirect heat in my BBQ for about 20 minutes, until heated through and the cheese was melted. I was cooking the steak on the other half of the BBQ so it was easy to keep an eye on it.
  • You could bake this in the oven at 350F, but I didn't want to list how long you would bake it for because I didn't make it that way. I would guess 15 minutes.
