The richness of the avocado makes this dish absolutely delicious. This is the healthy kind of recipe that I like to throw together in the morning when I'm getting ready for work. Buy egg whites in the carton to make it easier and less expensive. It's great for on-the-go as well. Enjoy!

3 eggs or 1 egg and 6 egg white
2 tablespoons low-fat milk
1/4 teaspoon baking powder
salt and pepper
2 (12 inch) soft tortillas
1/2 avocado, pitted, peeled and sliced

Steps:

  • Spray nonstick frying pan and heat over low-medium heat. Meanwhile, mix eggs, milk and baking powder in a bowl and beat very well. Pour into frying pan and stir occasionally until just barely cooked. Salt and pepper to taste.
  • Scoop half the eggs on each burrito. Top with avocado. Fold a couple of inches of bottom of burrito up and then roll.

6 eggs
⅓ cup milk
¼ cup shredded Cheddar cheese
salt to taste
2 avocados - peeled, pitted, and mashed
4 (10 inch) flour tortillas, warmed
⅔ cup dry curd cottage cheese
¼ cup ketchup

Steps:

  • In a bowl, beat together the eggs, milk, and cheese. Season with salt. Pour into a skillet over medium heat. Cook and stir until scrambled.
  • Season mashed avocados with salt. Place tortillas one at a time in a separate skillet over medium heat, and cook just until warm. Spread equal amounts of the avocado mixture on one side of each warmed tortilla. Layer with equal amounts cottage cheese and scrambled eggs. Roll into burritos and serve with ketchup.

When I was growing up in Houston, there was a wonderful restaurant in our neighborhood called Ninfa's. Our favorite sauce was the Avocado Sauce that they put on the table.

1 ripe avocado
1/4 cup sour cream
1/4 cup milk
1 teaspoon minced onion
1 garlic clove, mashed to a pulp with 1/4 teaspoon of salt
1 tablespoon of minced fresh cilantro (or 1/4 teaspoon of dry)
1/2 teaspoon hot pepper sauce
6 tablespoons lemon juice

Steps:

  • Peel the Avocado and smash to a smooth pulp. Add the remaining ingredients and blend with a wire whip. Let stand for at least an hour before serving.
  • Increase to taste garlic, cilantro or pepper sauce.
