This countrified soup is often served in late March for Nowruz, the Persian new year. With beans, vegetables, noodles, and yogurt, it is a meal in itself.

1/2 cup chickpeas, soaked overnight in water to cover
1/4 cup kidney beans, soaked overnight in water to cover
1/2 cup dried fava beans, soaked overnight in water to cover, or 1 1/2 cups frozen lima beans
3 yellow onions
7 tablespoons olive oil
5 cloves garlic, minced
1 teaspoon ground turmeric
1/4 cup dried lentils
14 cups vegetable or chicken stock
Salt
1 large handful fresh mint leaves, torn into pieces
6 ounces thin egg noodles or linguine, broken into thirds
1 bunch leafy greens, stemmed, and coarsely chopped
1/4 cup fresh dill leaves, minced
1/2 cup fresh cilantro, minced
1/2 cup fresh flat-leaf parsley, minced
2 cups plain yogurt

Steps:

  • Dice 1 of the onions. Heat a large pot over medium-high heat and add 4 tablespoons of the olive oil. Add the onion and sauté until lightly browned, about 5 minutes. Drain and rinse the chickpeas, kidney beans, and fava beans, and add them to the onion along with 4 of the minced cloves of garlic, the turmeric, and lentils. Sauté for 1 minute, then add the stock and bring to a boil. Boil the beans, covered, for 1 hour. Tilt the lid so the pot is partially covered and simmer, stirring occasionally, for 1 1/2 hours. Season with salt. Slice the remaining 2 onions into thin half moons. Heat a sauté pan over high heat and add the remaining 3 tablespoons olive oil. Add the onions and fry, stirring frequently, until the onions are brown and caramelized. Add the remaining garlic and the mint and sauté for 1 minute. Season with salt and set aside.
  • Add the noodles to the soup and cook until tender, 6 to 8 minutes. When the noodles are almost done, add the leafy greens and the fresh herbs and cook for 2 minutes. Serve with a large dollop of yogurt and a few tablespoons of the sautéed onion mixture.

1 pound dry black-eyed peas
3 (10.5 ounce) cans beef broth
1 (1 ounce) package dry onion soup mix
1 pound smoked sausage, sliced
1 cup uncooked long grain white rice
1 (4 ounce) can diced green chilies, drained
ground black pepper to taste

Steps:

  • In a large saucepan with enough water to cover, soak the black-eyed peas 8 hours, or overnight.
  • Drain and rinse the soaked black-eyed peas, and return to the saucepan. Mix in the beef broth, dry onion soup mix, sausage, rice, and green chilies. Season with pepper. Bring to a boil, reduce heat, and simmer 1 hour and 30 minutes, or until the beans are tender. Add water as necessary to keep the ingredients covered with liquid.

1 tablespoon extra-virgin olive oil
2 cloves garlic, crushed
1 small onion, chopped
2 carrots, peeled and sliced
3 leaves collard greens, coarsely chopped
1 (14.5 ounce) can vegetable broth
1 (15 ounce) can black-eyed peas, rinsed and drained
½ cup quinoa
1 cup water
1 tablespoon cider vinegar, or to taste
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a soup pot over medium heat; cook and stir garlic until it begins to brown, about 3 minutes. Add onion and carrots. Cook and stir until carrots begin to brown and onion becomes translucent, 7 to 8 minutes. Cook and stir collard greens into onion mixture until wilted, about 5 minutes.
  • Pour vegetable broth and black-eyed peas into vegetables, bring to a boil, and reduce heat to low. Cover and simmer soup until vegetables are softened, 20 to 25 minutes.
  • While soup is simmering, mix quinoa and water in a saucepan, bring to a boil, and reduce heat to low. Cover and simmer until the water has absorbed into the quinoa, about 10 minutes. Stir cooked quinoa into soup and simmer until collard greens are tender, about 10 more minutes. Stir cider vinegar into soup to taste and season with salt and black pepper.

8 mochi rice cakes
4 cups water
⅜ ounce dashi-no-moto (broth seasoning)
¼ pound skinless, boneless chicken breasts, cut into small pieces
1 dash soy sauce, or to taste

12 shrimp, peeled and deveined
2 cups coarsely chopped spinach (packed)
2 carrots, peeled and cut into matchstick-size pieces
1 (2-inch piece) daikon radish, peeled and sliced into rounds
¼ cup sliced bamboo shoots
1 (2-inch piece) kamaboko (fish paste cake), thinly sliced

Steps:

  • Place mushrooms in a bowl and cover with warm water; let soak, about 15 minutes. Drain and squeeze out water from mushrooms; slice.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler on high. Place mochi on a baking sheet.
  • Broil mochi, turning frequently, until inflated, crisp, and slightly browned, about 5 minutes. Cut into 1-inch strips.
  • Combine water and dashi-no-moto in a large saucepan; bring to a boil. Reduce heat and simmer until dashi is dissolved, 2 to 3 minutes. Add chicken, soy sauce, and salt; simmer until chicken is no longer pink in the center, about 15 minutes.
  • Mix shrimp, mushrooms, spinach, carrots, daikon radish, and bamboo shoots into chicken mixture; simmer until vegetables are tender and shrimp is cooked through, about 10 minutes.

This is a traditional New Year's soup in the Italian tradition (though it hits the spot on any cold winter's night!). Eat it at midnight along with some grilled Italian sausages and have GOOD LUCK the rest of the year! ;) This recipe can also be made totally vegetarian by omitting the pancetta/ham.

2 -3 tablespoons olive oil
3 tablespoons pancetta, chopped (or ham)
1 large onion, chopped
2 stalks celery, chopped
2 carrots, diced
5 garlic cloves, finely chopped
1 (16 ounce) bag lentils
1/2 teaspoon thyme
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
14 ounces diced tomatoes
1 -2 teaspoon salt & freshly ground black pepper
0.5 (16 ounce) box ditalini shaped pasta
1 -2 teaspoon parmesean cheese, grated
1 loaf crusty bread

Steps:

  • Sautee pancetta (or ham) in olive oil over medium heat for a few minutes till it browns lightly.
  • Add onion, celery and carrots, salt and pepper, and sautee till softened. Add garlic. Stir & continue cooking for a minute or two.
  • Add lentils, herbs & salt and pepper, stir, and add about 6 cups of water. Bring to a boil and partially cover, then lower heat to the lowest simmer possible. Allow to simmer quietly & peacefully for 40-50 minutes, stirring occasionally.
  • Meanwhile, in a separate pot, cook ditalini according to box directions until al dente. Drain.
  • Add diced tomatoes to soup, stir and continue cooking for about 10 minutes.
  • Stir in cooked pasta to soup.
  • Ladel soup into bowls, drizzle a little olive oil over the top, sprinkle some fresh cracked black pepper, and parmesean cheese. Eat it up with some crusty bread!

DDEOK GOOK (KOREAN NEW YEAR RICE CAKE SOUP)



Ddeok Gook (Korean New Year Rice Cake Soup) image

This is a traditional Lunar New Year dish in Korea. I have seen many different recipes - the only really standard ingredient seems to be the rice cakes -- but I really liked the savoriness of this one. The rice cakes in this soup are not the crispy American kind, but a firm Asian kind used in soups and other dishes. They are like Korean mochi, if that means anything to you. You could use beef broth instead of the anchovy broth if you prefer, although I don't think the anchovy broth really tastes fishy - it's more savory, in the way that Worcestershire sauce and Caesar salad dressing, both of which contain anchovy, are savory. Be careful eating the rice cake: it is so slippery it almost slides down your throat, but gooey enough that you really need to chew it. This is from koreankitchen.com, but I had to do a really specific search to find it, so I thought I'd post it to give it wider exposure, because it was good, and a new treat for me.

1/2 cup thin sliced korean rice cake (ddeok gook ddeok)
1/4 cup dried anchovy (myeol chi - I think the Japanese word is naboshi)
6 cups water
2 green onions, chopped
4 ounces beef, cut into thin strips
1 egg, beaten
2 sheets nori (seasoned kim , dried laver seaweed)
1/4 teaspoon soy sauce
1/4 teaspoon sesame oil
1/8 teaspoon sugar
1/8 teaspoon pepper
1/8 teaspoon minced garlic

Steps:

  • Soak the rice cake in cold water for 30 minutes.
  • Marinate the beef in the soy sauce, sesame oil, pepper, sugar, and minced garlic.
  • Saute the beef in a skillet, then set aside.
  • Put the 6 cups of water and the dried anchovies in a pot.
  • Bring to a boil, then reduce to a simmer for 5 minutes.
  • Strain out the anchovies and return the broth to the pot.
  • Add the rice cakes to the broth.
  • Bring to a boil, then reduce the heat to medium.
  • Cook for 10-15 minutes, until tender.
  • Add the green onions.
  • Pour the egg in a little at a time.
  • Let it set a bit, then stir- if you stir right after adding the egg, the broth gets milky.
  • Put into bowls.
  • Garnish each bowl with some beef and some crumbled kim.

DR. OZ'S BELLY-BLASTING NEW YEAR'S SOUP

This recipe is based on one from a Dr. Oz December 2011 episode where he gave away many Vitamix blenders that cost about $500 each. Fortunately, the directions say you can make this in a blender, which I will have to do while I save up my money. I only use 1 tablespoon of chili powder as 2 tablespoons is too much heat for my tastes. Tip: if you like this and make a lot of it, I saw on another of his shows that it's much cheaper to soak dry chickpeas than to use canned chick peas, also known as garbanzo beans.

1 (15 ounce) can chickpeas
2 garlic cloves, chopped

1/4 cup lime juice
1/2 cup fresh cilantro, freshly chopped

Steps:

  • Add tomatoes, chick peas, garlic, broth and chili powder to either a blender or a Vitamix. Puree.
  • Transfer mix to a large pot and bring to the boil; lower the heat and simmer for about 10 minutes.
  • Alternatively, you may add the first 5 ingredients to a large pot and process the ingredients with an immersion blender. Bring to the boil and simmer for about 10 minutes.

SOUTHERN NEW YEAR'S DAY SOUP

This wonderfully healthy collards and black-eyed pea soup by Sarah Cooper is a natural for New Year's Day. It started as a Cuban-style collards soup that included bacon fat, short ribs, Cuban sausage and ham hocks. Eventually Ms. Cooper decided to "de-fat" and change some of the ingredients to typical southern ones. The results are both aromatic and hearty, perfect on a cold day. To shorten prep and cooking time, you can use canned black-eyed peas, drained, rinsed and added towards the end of cooking time. Note: the recipe does not include soaking time for the dried peas. 1 lb lean stewing beef, cut into bite-size pieces
3 bay leaves

frozen collard greens
1 tablespoon olive oil
1 medium onion, chopped
1 bell pepper, chopped
salsa (chow-chow is good, too)

Steps:

  • Wash and pick over the dried beans. Cover with 2 inches of water and allow the beans to soak overnight.
  • In a stock pot, combine 2 quarts water, ham, beef, bay leaves and salt. Bring to a boil, then cover and simmer for 30 minutes.
  • Rinse the soaked beans and add them to the pot. Cook, uncovered, until tender, about 1 hour. Add the potatoes and collards and boil for 10 minutes.
  • Meanwhile, in a sauté pan over medium heat, warm the olive oil. Add onion and bell pepper and sauté until the onion is translucent, about 8 minutes. Add the vegetables to the soup pot. Reduce the heat to a simmer, cover and cook for 1 hour. Salt to taste.
  • Optionally top each serving with a garnish of a spoonful of salsa or chow-chow.

My husband & I adapted a recipe we found on Epicurious - and really, it is totally different but just as good as their version (which had ham & collard greens), if not better!

1 medium onion
4 tablespoons garlic (minced)
1 lb sage sausage (pick a really good one, we use Jimmy Dean, don't skimp)
2 tablespoons olive oil
1 (14 ounce) can sauerkraut (drained)
2 cups chicken broth (16 fl.oz.)
2 cups water
1 (16 ounce) can black-eyed peas (about 1 1/2 cups)
1 (15 ounce) can diced tomatoes (drained)
hot sauce (to taste)
1/4 cup white wine (we used pinot grigio)
2 teaspoons dried sage (if using fresh, several leaves chopped)

Steps:

  • Chop onion and mince garlic. In a 3-quart saucepan or heavy iron skillet, brown sausage and drain off all excess fat, crumble and set aside, in the same saucepan or heavy iron skillet - heat olive oil & cook onion, garlic in oil over moderate heat, stirring occasionally, until onion is pale golden, about 2-3 minutes. Add broth, wine and water into the onion mixture. Also, add back the sausage and mix.
  • Rinse and drain black-eyed peas. In a bowl mash half of peas with a fork. Stir mashed and whole peas, diced tomatoes, & sauerkraut into soup, bring to slow boil then reduce heat and simmer for at least 30 minutes (however, you can let this soup slow cook all day, makes it that much better). Season soup with salt, pepper, sage and hot sauce ~ enjoy with a good crusty bread.
  • This recipe can be prepared in 45 minutes or less.
  • Although we call for canned black-eyed peas, you can use frozen peas or cook up a batch of dried ones. Note: if you use dried beans that you only let soak as package directs, you will need to use a food processor to mash 1/2 the beans and you will need to up the amount of fluids (i.e.; 3 1/2 cups of both broth and water). As well, cook time will need to increase to time reflected on dried beans package in order for beans to cook correctly.

NEW YEAR'S DAY 15 BEAN SOUP

20 ounces 15 Bean Mix (any flavor - throw away the flavor packet)
2 quarts Water
1/2 pound Bacon, diced
1 pound Smoked Sausage, sliced
1/2 cup celery, chopped
1 large onion, diced
8 cloves garlic, minced
2 teaspoons salt (to taste - better to undersalt at first)
1/2 cup cilantro, roughly chopped
1 Juice of 1 lemon
1 teaspoon ground cumin
1 can (14.5 oz) diced tomatoes
1 can (10 oz) diced tomatoes with green chilies (Ro-Tel)

Steps:

  • Place beans in a large kettle. Cover with water and soak overnight. OR - place kettle of beans on stove over high heat and bring to a rapid, rolling boil. Boil hard for two minutes. Turn off heat, cover kettle, and let stand 1 hour.
  • Drain beans and discard soaking water.
  • Add all remaining ingredients, except for the tomatoes. Cover, and bring to a boil. Reduce heat, and simmer 1 to 1.5 hours, or until beans are tender. Add both kinds of tomatoes, and simmer uncovered 30 minutes longer.
  • Serve with hot cornbread. Makes a huge batch!

DASHI OR CLEAR BROTH
2 quarts hot water
1/2 c dried shrimp
salt to taste
4 chicken bouillon cubes
1 1/2 c daikon, turnips, cut into julienne strips
MOCHI BALLS
2 c mochiko
1 c cooked ham, finely diced
1 tsp salt
pepper to taste
1 c chicken broth
PORK BALLS
2 c ground pork
1/4 c waterchestnuts, finely minced
1 tsp shoyu (soy sauce)
1 egg, slightly beaten
1 tsp oyster sauce
1 Tbsp cornstarch
salt and pepper to taste
GARNISHES:
fish cake, sliced
green onions, chopped fine
chinese parsley, chopped fine

Steps:

  • 1. In a medium pot combine water, shrimp, salt, bouillon and daikon. Boil until bouillon cubes are dissolved. Turn down to simmer.
  • 2. In a medium bowl, combine mochiko, ham, salt and pepper, mix together. Gradually add the chicken broth to make dough. Form 1/2 inch dough balls, use mochiko on your hands so the dough does not stick and make a mess.
  • 3. In a medium bowl, combine all the ingredients to make 1/2 inch pork ball. Slightly dampen your hands with water so the pork does not stick.
  • 4. Turn your soup stock heat back up and add all the mochi balls and pork balls. Cook for 4 to 6 minutes, and until the mochi balls start floating to the top.
  • 5. Variations and options: you can add vegetables, such as carrots, watercress, spinach, chinese cabbage, chinese squash, mustard cabbage, etc.
  • 6. Serve hot in soup bowls, garnish with fish cake, green onions, chinese parsley.

8oz. kale, tough stems removed, leaves cut into 2-inch pieces (4 cups)
115-oz. can diced tomatoes
1 15-oz. can diced tomatoes with green chiles
¾ cup dried black-eyed peas
1 qt. low-sodium vegetable broth
¾ cup farfalle pasta
Shaved Parmesan curls, for garnish

Steps:

  • 1. Heat oil in large pot or Dutch oven over medium heat. Add leek, and sauté 5 to 7 minutes, or until soft. Add garlic and poultry seasoning, and sauté 1 minute more. Stir in kale, and cook 5 to 7 minutes, or until leaves are wilted, tossing occasionally. 2. HE JIA TUAN YUAN (TOFU BALL SOUP FOR LUNAR CHINESE NEW YEAR)

On Lunar Chinese New Year, we usually like to have meatballs or sweet dumplings. Ball in Chinese is 'wan,' sweet dumpling in Chinese is 'tang yuan.' Their shapes are both round. So we use a meatball dish and/or sweet dumpling dish to emphasize the Chinese expression 'He Jia Tuan Yuan.' 'He Jia' means the whole family. 'Tuan Yuan' means 'all be together' ('yuan' also means circle, round as well, which connects with the shape of the meatballs and the sweet dumplings). This tofu ball dish is easy to make, and it is a great soup for your Lunar New Year meal.

1 (14 ounce) package soft tofu
7 ounces ground pork
6 tablespoons cornstarch
1 egg
1 teaspoon chicken bouillon granules
1 teaspoon salt
5 cups water
1 tablespoon vegetable oil
10 dried shrimp
1 cup fresh pea vine shoots, trimmed
1 teaspoon chicken bouillon granules
¼ teaspoon salt

Steps:

  • Place the tofu into a large bowl, and mash it into a paste with a large spoon. Stir in the pork, cornstarch, egg, 1 teaspoon chicken bouillon granules, and 1 teaspoon salt until the mixture is very well combined.
  • Heat the water and vegetable oil to a boil in a large saucepan, and reduce heat to an active simmer but not a full boil. Using gloved hands, pinch off about 1 tablespoon of the tofu mixture, roll it into a ball between your palms, and slide it carefully into the water so it doesn't break apart. Repeat with the rest of the tofu mixture. Without stirring the soup, let the tofu balls simmer until they rise to the top, about 30 minutes.
  • Turn off the heat, and stir in the dried shrimp, pea vine shoots, 1 teaspoon of chicken bouillon granules, and 1/4 teaspoon salt. Serve hot.

1 large onion, chopped
4 cloves garlic, minced
1 (10 ounce) package frozen bell pepper strips
black pepper to taste
1 cup sweet white corn
1 (16 ounce) jar medium-hot salsa
1 teaspoon chili powder
2 (15 ounce) cans no-salt-added black beans, drained
1 (15 ounce) can black-eyed peas, rinsed and drained
1 (10.5 ounce) can chicken stock
1 cube chicken bouillon
3 cups water
½ cup uncooked long grain rice

Steps:

  • Heat the olive oil in a deep pot over medium-high heat. Stir in the onion, garlic, and bell peppers; cook until onions are transparent and peppers are soft, about 10 minutes. Season to taste with black pepper. Stir in the corn, salsa, chili powder, black beans, black-eyed peas, chicken stock, chicken bouillon cube, water, and rice. Bring to a boil, then reduce heat to medium and simmer at least 30 minutes until the rice is tender.

1/2 lb collard greens, stems removed & chopped
1/2 lb cooked ham, diced
2 - 15 oz cans black eye peas
1 small onion, diced
1 large carrot, diced
5 chipotle chiles, chopped
1 can of Ro-tel
1 teaspoon thyme
4 cups chicken broth
2 teaspoon apple cider vinegar
pinch of salt
2 tablespoon bacon grease (olive oil or veggie oil, fine)
salt and pepper to taste

Steps:

  • In large pot, cook the onion and carrots in bacon grease on medium-high heat for 10 minutes, until onions turn golden. Add garlic and cook for three more minutes. Add to the pot the collard greens, vinegar, sugar, ham, chicken stock, chipotles, rotel tomatoes and thyme. Bring pot to a boil and then simmer for half and hour, stirring occasionally. Take on can of black-eye peas and roughly mash with a fork. Add these and other can of black eyes peas to the pot. Continue to simmer for another 45 minutes.
