Jalapeño Pimento Cheese - a quick and easy low-carb snack! Serve in a bowl with crackers and vegetables, on toasted bread, or stuffed into celery. This is a favorite at our house! White cheddar cheese, pimentos, jalapeños, pecans, mayonnaise, hot sauce, onion, and Worcestershire sauce. Can make in advance and refrigerate until ready to serve.

1 pound sharp white Cheddar cheese, (shredded)
1 (4-oz) jar diced pimentos, (drained)
1 tsp onion powder
1 Tbsp finely chopped garlic
2 jalapeños, (seeded and finely chopped)
½ cup chopped pecans
½ cup mayonnaise
1 Tbsp Worcestershire sauce
3 dashes hot sauce, (optional)
salt and pepper, (to taste)

Steps:

  • Stir together cheese, pimentos, onion, garlic, jalapeños, and pecans in a medium bowl until well combined.
  • Fold in mayonnaise, Worcestershire sauce, and, hot sauce. Stir until well combined. Season with salt and pepper to taste.
  • Refrigerate 2 to 12 hours to let the flavors come together.

Steps:

  • Beat 4 ounces softened cream cheese, 1/2 cup mayonnaise, 1 tablespoon each dijon mustard and adobo sauce (from canned chipotle peppers) and 1/2 teaspoon pepper with a mixer until totally combined. Add 8 ounces each grated sharp cheddar and Monterey jack and gently mix until combined. Stir in one 4-ounce jar sliced pimientos (drained) and 2 tablespoons chopped dill with a rubber spatula. Refrigerate at least 2 hours before serving.

4 ounces cream cheese, softened
1/2 cup mayonnaise
2 tablespoons adobo sauce from canned chipotles
1 tablespoon Dijon mustard
1/2 teaspoon freshly ground black pepper
Pinch of cayenne or dash of hot sauce
Pinch kosher salt
2 cups grated sharp Cheddar
2 cups grated smoked Gouda
4 ounces sliced pimentos
1/2 cup jarred sliced jalapenos, finely chopped
2 teaspoons chopped fresh dill
Crackers, for serving
1 cup Castelvetrano olives, for serving

Steps:

  • Combine the cream cheese, mayonnaise, adobo sauce, Dijon mustard, black pepper, cayenne or hot sauce and salt in the bowl of a food processor. Process until combined. Add almost all of the Cheddar and Gouda, reserving about 2 tablespoons of each in a bowl, and pulse until well combined again. Add the contents of the blender to the reserved cheese and stir to combine. Fold in the pimentos, jalapenos and dill, then chill before serving.
  • Serve as a dip with crackers and olives.

Number Of Ingredients 8

2 (8 ounce) blocks extra-sharp cheddar cheese, shredded
1 (8 ounce) package cream cheese, softened
2 (7 ounce) jars diced pimentos, drained (see note)
1 (12 ounce) jar roasted red peppers, drained (chopped if whole)
1/2 cup pickled jalapeno pepper, slices drained
1/4 cup mayonnaise
2 tablespoons Worcestershire sauce
assorted crackers or bread, slices

Steps:

  • Process first 2 ingredients, in batches in food processor for 45 seconds or until well blended.
  • Add pimento and next 4 ingredients and pulse 5 to 6 times or to desired consistency.
  • Cover and chill up to1 day.
  • Serve with crackers or bread slices.
  • Note: You may want to start with just one jar and see if you feel you need to add the second one.

8 ounces extra-sharp cheddar cheese, grated with a food processor or hand grater (not pre-grated)
1/4 cup softened cream cheese (2 ounces), pulled into several pieces
Scant 1/2 cup jarred pimento or other roasted red peppers (from a 7-ounce jar), finely diced
3 tablespoons Duke's, Hellmann's or other high-quality store-bought mayonnaise
1/2 teaspoon dried red chile flakes
Salt and freshly ground black pepper to taste

Steps:

  • In a large mixing bowl, place the cheddar cheese in an even layer. Scatter the cream cheese, pimentos, mayonnaise and chile flakes over the cheddar cheese. Using a spatula, mix the pimento cheese until it is smooth and spreadable, about 1 1/2 minutes.
  • Transfer the pimento cheese to a plastic container or bowl, cover tightly, and store in the refrigerator. Pimento cheese keeps in the refrigerator for 1 week.
