2 Tbsp unsalted butter
1 medium onion, finely chopped
2 clove garlic minced
6 medium plun tomatoes coarsely chopped
1/4 c ketchup
2 Tbsp dijon mustard
2 Tbsp dark brown sugar
1 Tbsp honey
1 tsp cayenne pepper
1 tsp ancho chile powder or one ancho chile
1 tsp chile powder
1 Tbsp paprika
1 Tbsp worcestershire sauce

Steps:

  • 1. In a Large saucepan over medium heat ,heat the butter and sweat the onion and garlic until translucent.
  • 2. Add the tomatoes and simmer for 15 minutes add remaining ingredients and simmer for 20 minutes.
  • 3. Puree the mixture in the food processor pour into a bowl and let cool at room temperature.

16 ounces barbecue sauce
3 ounces Mexican chocolate, coarsely chopped

Steps:

  • Heat the barbecue sauce in a 2 quart saucepan over medium-low heat until warm. Add the Mexican chocolate and stir until the chocolate melts completely. Serve immediately or cool and store in an airtight container in the refrigerator.

1 ½ cups uncooked white rice
2 cups chicken broth
1 cup chunky salsa

Steps:

  • Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
  • Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.
