An easy New Mexican Pork and Green Chili Stew recipe

Yield Makes about 14 cups, serving 6 to 8

Number Of Ingredients 8

2 medium onions, chopped
8 garlic cloves
3 tablespoons vegetable oil
4 1/2 pounds boneless pork shoulder, trimmed of excess fat and cut into 1-inch pieces
5 pounds frozen roasted New Mexican green chilies*, thawed, peeled if necessary, seeded, and chopped (wear rubber gloves)
7 cups water
2 teaspoons salt
1 1/2 pounds boiling potatoes

Steps:

  • In a large heavy kettle cook the onions and 6 of the garlic cloves, minced, in the oil over moderate heat, stirring, until the onions are softened, add the pork, the chilies, the water, and the salt, and simmer the mixture, uncovered, adding more water if necessary to keep the pork barely covered, for 1 1/2 hours. Stir in the potatoes, peeled and cut into 1-inch pieces, making sure they are covered by the cooking liquid, and simmer the mixture, stirring occasionally, for 30 minutes, or until the pork and the potatoes are tender. Stir in the remaining 2 garlic cloves, minced, and salt to taste and simmer the stew for 5 minutes. The stew may be frozen or made 3 days in advance, cooled, uncovered, and kept covered and chilled.

1 lb of ground meat of your choice
2 Tbl New Mexican red chili powder
1 Tbl flour (all-purpose or whole wheat)
1 cup hot water
2-3 cloves of garlic, minced
Salt to taste

Steps:

  • Fry meat until beginning to brown Add chili and mix into meat until chili begins to toast (1-2mins) Add flour and mix into pan until it begins to brown (1-2mins) Add garlic and stir for about 2mins Add salt to taste

2 cans tuna in spring water
1 small onion, finely chopped
2 stalks celery, chopped
1 4-oz can diced green chili
1/2 cup pecans (gently roast if raw)
1/2 cup sour cream or mayonnaise
1 green apple peeled, quartered and diced
3 T. horseradish sauce

Steps:

  • Break up the tuna in a large bowl. Add the mayonnaise and horseradish, mix well. Add the rest of the ingredients.

3 large yellow onions, chopped
3 clove garlic, chopped
2 tsp powdered garlic
1 fresh, hot chile, chopped
2 tsp chipotle powder
2 tsp cayenne powder
2 Tbsp cumin
1 lb ground meat (turkey, chicken, beef, pork, etc.)
2 tsp mexican oregano
2 tsp sea salt
2 medium roma tomatoes, chopped
3 bay leaves
2 pkg dry red beans, soaked
1/2 tsp worcestershire sauce
1 can(s) tomato sauce
1 can(s) tomato paste w/ 1 can water
1 bottle your favorite beer
1/4 c olive oil, extra virgin

Steps:

  • 1. Soak beans overnight, drain and set aside
  • 2. Sautee onions, garlic, ½ of the garlic powder and ½ of the jalapeno (or chipotle or cayenne), salt and pepper in oil until onions are slightly browned.
  • 3. Add ground meat and cook until browned.
  • 4. Add the tomatoes, tomato sauce and tomato paste and ½ of seasonings and simmer for 20 minutes.
  • 5. Add beans and remaining ingredients and simmer for 1 hour 30 minutes.

1/4 cup chili powder
2 tablespoons vegetable oil
6 garlic cloves, minced
2 tablespoons tomato paste
1 tablespoon minced fresh oregano (or 1 t. dried)
2 cups low sodium chicken broth
1/2 cup brewed coffee
1/4 cup minute tapioca
1 tablespoon minced canned chipotle chile in adobo
1 tablespoon brown sugar
2 bay leaves
1 (4 lb) boneless pork butt, trimmed and cut into 1 1/2-inch chunks
salt
pepper
1/2 cup raisins
1/4 cup minced fresh cilantro
1 teaspoon grated lime zest
1 tablespoon fresh lime juice

Steps:

  • Microwave onions, chili powder, oil, garlic, tomato paste, and oregano in a bowl, stirring occasionally, until onions are softened, about 5 minutes; transfer to slow cooker.
  • Stir broth, coffee, tapioca, chipotles, sugar, and bay leaves into slow cooker.
  • Season pork with salt and pepper and nestle into slow cooker.
  • Cover and cook until pork is tender, 9-11 hours on LOW or 5-7 hours on HIGH.
  • Let chili settle for 5 minutes, then remove fat from surface using large spoon.
  • Discard bay leaves.
  • Stir in raisins and let sit until heated through, about 10 minutes.
  • Stir in cilantro, lime zest, and lime juice.
  • Season with salt, pepper, additional brown sugar, lime juice to taste and serve.

8 to 10 dried Ancho or Pasilla chilis (or equivilent amount of New Mexican chili powder)
2 onions, chopped
4 cloves garlic, minced
vegetable oil
1 tablespoon tomato paste
1 liter chicken broth
juice and zest of 1 orange
1 ounce baker's chocolate
800 grams pork, in 1 inch cubes
dash cinnamon

Steps:

  • Lightly brown onions in oil then add garlic and cook i minute. Add remaining ingredientes except port and bring to a boil. Lower heat and simmer 5 minutes then add pork and simmer for several hours on very low heat. Serve with tortillas, and rice if desired.
