New England Soup Factory's Spicy Chickpea and Butternut Soup image

When we lived in Boston, we loved to get soup from the New England Soup Factory, known for their hearty and unusual combinations. This is one of their recipes. Although it's a 'cream' soup, since the base is coconut milk it remains vegan. The coconut is perhaps not what you're used to seeing with chickpeas and butternut but it really adds a sweet richness and fullness.

3 tablespoons olive oil
1 tablespoon chopped fresh garlic
2 cups finely chopped onions (I use much less!)
1 cup celery (minced or diced)
2 cups carrots, sliced
6 cups butternut squash, peeled and cut into chunks
2 cups canned tomatoes, diced
4 quarts well-flavored vegetable stock
2 cups tomato juice
1/2 cup soy sauce
1/4 cup fresh lime juice
2 cups canned chick-peas
1 tablespoon ginger
1 tablespoon ground coriander
1 teaspoon minced scotch bonnet pepper
1 (14 ounce) can coconut milk
1 cup flaked coconut
1 tablespoon fresh cilantro, chopped
1 teaspoon coconut extract

Steps:

  • Heat olive oil and garlic in a large heavy stockpot.
  • Sauté 1-2 minutes.
  • Add onions, carrots and celery.
  • Sauté 10-15 minutes.
  • Add squash, canned tomatoes, stock, tomato juice, soy sauce, lime juice, chickpeas, ginger and coriander; bring to a boil.
  • Cook until all the vegetables are tender, approx 30 minutes. Add coconut milk, flaked coconut, coconut extract and cilantro, warm through.

This recipe is so simple, and yet is the tastiest butternut soup ever! I am quite sure that the chilli pepper has a great deal to do with its success, it really is just a hint of a burn, but brings out the rich, nutty flavour of the squash perfectly. For this recipe to be truly wonderful, a home-made chicken stock is the ideal choice, so the little time it takes to boil up some chicken carcasses and herbs is well worth the trouble, there are loads of simple recipes for chicken and other stocks in almost every cookbook and on most cooking websites. If you don't want to take the time to make your own stock though, then make one from a stock cube or powder. I do not honestly know what can be used as a substitute for the butternut squash, if it is not available in your country, because pumpkin does not work well, although it does look similar to a butternut in colour. The texture of a butternut is much smoother and finer than pumpkin, and it is a lot sweeter. Perhaps it is rather more like a sweet potato in both texture and colour than a pumpkin.

1 1/2 kg butternut squash
2 large brown onions, finely chopped
3 small garlic cloves, finely chopped or 1 elephant garlic clove
500 ml chicken stock
1 teaspoon lemon juice
250 ml water
3 small strong green chilies or 1 large jalapeno, no pips, finely chopped
1 tablespoon melted butter
250 ml fresh pouring cream

Steps:

  • Peel and pip the butternuts, and cut it into about 5cm square chunks.
  • Peel and chop the onions quite finely.
  • Chop the garlic very finely, or push through a garlic press.
  • Halve the Jalapeno pepper or green chillies and scrape out all the pips. Chop the green flesh very finely.
  • Put the onions, garlic and chillies into the melted butter in a saucepan on a moderate heat and cook until the onions are soft and transparent. Add the lemon juice and chicken stock and stir until well mixed.
  • Add the water and the cubes of butternut, and simmer until the soup is thick and all the ingredients are well blended together, about 1 hour.
  • Liquidise with a Bamix or a food processer.
  • Serve hot.
  • Swirl a tablespoon or two of fresh cream into the centre of each bowl of soup just before serving.

1 large Spanish onion, peeled and diced
1 cup diced celery
1 tablespoon salted butter
3 garlic cloves
1 lb shiitake mushroom
2 large portabella mushrooms
1/4 lb chanterelle mushroom
2 -3 large potatoes, peeled and quartered
6 -8 cups chicken stock
4 ounces light cream
kosher salt, to taste
fresh ground black pepper
2 teaspoons fresh thyme
2 tablespoons sherry wine
2 teaspoons Worcestershire sauce

Steps:

  • Melt butter in large stock pot and saute garlic, onions and celery for 5-8 minutes.
  • Slice all of the mushrooms together and set aside 1/2 cup for garnish.
  • Add the remaining mushrooms and potatoes to pot and continue to saute for an additional 5 minutes.
  • Add the stock; bring to a boil.
  • Simmer on medium-high heat until the potatoes are tender, approx 20 minutes. Remove from heat and add thyme.
  • Puree in blender, return to pot.
  • Add sherry, light cream, salt, pepper and worcestershire sauce, warm through.
  • Meanwhile, saute the reserved mushrooms in a little olive oil, and season them with salt and pepper.
  • Add the mushrooms to the soup and stir well.

4 tablespoons salted butter
1 1/2 cups onions, diced
1 1/2 cups celery, diced
1 small fennel bulb, thinly sliced
1 tablespoon chopped garlic
1 3/4 lbs zucchini, in large chunks
2 large potatoes, peeled and diced
6 cups vegetable stock or 6 cups chicken stock
1 lb firmly packed spinach leaves
1 cup heavy cream
1 nutmeg
salt and pepper
4 medium leeks, thinly sliced
2 tablespoons olive oil
salt and pepper

Steps:

  • Begin the roasted leeks:.
  • Preheat the oven to 450 degrees.
  • Combine leeks, oil, salt, and pepper in lg bowl; toss gently.
  • Spread in a roasting pan and roast for 20 minutes, stirring once or twice.
  • Meanwhile, melt the butter in a Dutch oven or large heavy pot over medium-high heat.
  • Add onion, celery, fennel, and garlic; saute 10-12 min or until onion is softened.
  • Add zucchini and potatoes; mix well.
  • Add the stock and bring to a boil; reduce the heat and simmer for 15 minutes, until the vegetables are tender.
  • Remove from the heat and add spinach in batches, mixing with a large spoon after each addition until the.
  • spinach wilts.
  • Puree in batches in a blender.
  • (To prevent splashing, the restaurant suggests removing the inner core of the blender cover and holding a kitchen towel over the top.).
  • Return the puree to the pot.
  • Add the cream, nutmeg, salt, pepper, and roasted leeks, and heat thoroughly.

20 garlic cloves, roasted
1 1/2 cups olive oil
1 whole chicken, about 4-5 lbs
3 celery ribs, diced
1 large Spanish onion, peeled & diced
6 carrots, peeled & thickly sliced
2 bay leaves
1 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
2 teaspoons dried mint
2 -3 slices fresh ginger (optional)
3/4 cup fresh lemon juice
1 tablespoon lemon zest
kosher salt
12 cups chicken stock (plus additional, if needed)
2 tablespoons fresh basil, chopped
3 cups rice, cooked (white or jasmine)

Steps:

  • Roast Garlic.
  • Preheat the oven to 375º - 400º.
  • Place garlic cloves in a small, oven-proof casserole dish. Pour the olive oil over the garlic to submerge the cloves.
  • Roast garlic for 35 minutes, until the garlic is soft, brown and caramelized. Strain the oil to use in other recipes. Mash the cloves and set aside.
  • Assemble Soup.
  • Place the chicken, onion, carrots, and celery in a large stockpot.
  • Add roasted garlic cloves, ginger (if using), lemon juice, lemon zest, salt, mint, cinnamon, cayenne pepper and bay leaves.
  • Pour in stock and bring to a boil. Reduce heat to medium-low and simmer for 3 hours, or until the chicken is very tender.
  • Remove the soup from the heat. If it looks too thick, add 1-2 cups of stock or water. Remove chicken to a plate to cool slightly. When the chicken is cool enough to handle, remove the skin and bones, and add the meat back to the soup.
  • Add basil, rice, and salt. Adjust seasoning if necessary. Remove bay leaves and serve.

  • Heat the olive oil in a large heavy stock pot.
  • Saute garlic, onions, celery and carrot for 8 minutes.
  • Add parsnips, barley, chicken and chicken stock.
  • Bring to a boil; simmer on medium-high heat for 30 minutes.
  • Add the sweet potatoes and cook an additional 30 minutes.
  • Add dill and season.
