I love chicken parm, especially when it's made with fresh mozzarella, which it almost never is in restaurants. Of course, at home we can use the real stuff, but it can be pricey. So I tried something new--a cheese spread using ricotta fortified with sharp Cheddar.

2 large skinless, boneless chicken breast halves
½ teaspoon kosher salt
1 pinch ground black pepper
½ cup flour
1 egg, beaten
¾ cup dry bread crumbs
½ cup light olive oil for frying, or as needed
½ cup ricotta cheese
½ cup shredded sharp white Cheddar cheese
salt and freshly ground black pepper to taste
½ teaspoon olive oil
2 tablespoons grated Parmigiano-Reggiano cheese for topping
1 cup marinara sauce, heated, or more as needed
1 tablespoon chopped fresh flat-leaf parsley

Steps:

  • Preheat oven to 500 degrees F (260 degrees C). Line a rimmed baking sheet with aluminum foil.
  • Gently pound chicken breasts between 2 layers of plastic until each breast is evenly thick. Place breasts on a plate and season 1 side with kosher salt and black pepper. Sprinkle with flour; press flour to coat the entire surface and help it adhere. Turn and repeat on second side with salt, pepper, and flour.
  • Brush excess flour from plate; place the chicken breasts back on the plate. Pour beaten egg over the breasts and coat each side. Cover bottom of a second plate with half the bread crumbs. Transfer chicken to the bread crumbs. Push crumbs up sides of chicken. Sprinkle on the remaining crumbs and thoroughly coat each side.
  • Heat 1/2 inch olive oil in a skillet over medium-high heat. Cook chicken until crispy and golden, 2 to 3 minutes per side. Transfer to prepared baking sheet.
  • Mix ricotta and Cheddar cheese together in a bowl. Stir in salt, black pepper, cayenne, and olive oil. Spread half the cheese mixture on each breast without extending all the way to the edges. Dust with Parmigiano-Reggiano cheese and drizzle with olive oil.
  • Bake on center rack of preheated oven until cheese is melted and chicken is no longer pink in the center and the juices run clear, 10 to 12 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • To serve, ladle the heated marinara sauce in a wide circle on warm plates. Place chicken in center and sprinkle with chopped parsley.

This is a really quick, healthy alternative to chicken fingers and french fries. We cook it a few times a month. You can vary the cheeses used or vary the oils to add variety.

parmesan cheese, grated not ground
4 chicken breasts
panko breadcrumbs
dried basil
garlic powder
salt
pepper
1/4 cup olive oil
2 eggs
1/2 cup large whole grain mustard
1/4 cup honey
4 new potatoes

Steps:

  • Preheat oven to 400°F.
  • Put skillet with coating of olive oil - medium heat on the stove.
  • Slice the potatoes and layer on a pregreased baking sheet.
  • Dust with garlic powder , salt and pepper to taste.
  • Bake while cooking chicken. Baking time depends on thickness of cut.
  • Start by rinsing chicken in cool water.
  • Dredge chicken through egg then coat in panko/cheese combined in a bowl.
  • Dip in egg again and again in panko mixture.
  • Place in hot oil and allow to fry until crispy and cooked through.
  • Place on paper towel to drain.
  • Mix honey and mustard over low heat in a sauce pan. You can modify the honey/mustard ratio to your liking. This way will be more mustardy than anything.

1/3 cup extra-virgin olive oil
2 large garlic cloves, pressed
1/2 teaspoon salt
1 12-ounce container grape tomatoes
1 1/2 teaspoons dried oregano
Large pinch of dried crushed red pepper
4 skinless boneless chicken breast halves (about 6 ounces each)
1 1/4 cups finely grated Parmesan cheese, divided
6 ounces fresh mozzarella cheese in water, drained, thinly sliced

Steps:

  • Preheat oven to 500° F. Whisk first 3 ingredients in large bowl. Place tomatoes in medium bowl; mix in 2 tablespoons garlic oil, then oregano and crushed red pepper. Add chicken to large bowl with remaining garlic oil and turn to coat.
  • Place 1 cup Parmesan in pie dish. Dip 1 side of each chicken piece into cheese to coat; arrange chicken, cheese side up, on 1 half of large rimmed baking sheet. Scatter tomatoes on other half of sheet.
  • Roast chicken until just cooked through and firm to touch, about 10 minutes. Arrange mozzarella slices atop chicken. Return to oven; roast until cheese melts, 1 to 2 minutes. Transfer chicken and tomatoes to 4 plates. Sprinkle with remaining 1/4 cup Parmesan cheese.

  • Combine ingredients for marinade and pour over chicken. Marinate in refrigerator for 2 to 3 hours or overnight. Grill 12 to 15 minutes, until chicken is done. Set aside. One of my favorite dishes at the Longhorn Steakhouse is their Parmesan Crusted Chicken. This recipe is on point and just as good! The only thing missing from this awesome stay at home recipe is the wonderful wait staff they have. :)
