RAREBIT SAUCE

16 ounces proper beer or any brand English golden ale
24 ounces whole milk
4 tablespoons unsalted butter, cut into cubes
1/4 cup bacon fat
1 medium yellow onion, small diced
1 cup all-purpose flour
2 tablespoons whole-grain mustard
1 teaspoon Worcestershire sauce
1 tablespoon white wine vinegar
2 tablespoons thyme leaves, roughly chopped
1 cup grated Irish Cheddar
1 1/2 cups crumbled blue cheese
1 teaspoon kosher salt

Steps:

  • In a large sauce pot, bring the beer and milk to a simmer (180 degrees F).
  • While you are bringing the milk and beer to a simmer, in a separate sauce pot, melt the butter and bacon fat. Once melted, add the onions and sweat until translucent. Add the flour to make the roux, making sure you stir continually so it gets nice and toasty, but doesn't burn to the bottom of the pot. De-glaze the pan with the mustard, Worcestershire sauce, white wine vinegar and thyme. By this time, the milk and beer should be ready to add to the roux. Add slowly, continually stirring to break up chunks and emulsify the mixture. Bring the mixture up to 185 degrees F and remove from the heat. Add the Irish Cheddar, blue cheese and salt and blend with an immersion blender (if you don't have an immersion blender, add the cheese while the mixture is still hot and whisk vigorously with a whisk to fully incorporate).

Stilton and Walnut Welsh Rarebit - Blue Cheese on Toast image

A very easy & tasty recipe which I first devised for using up the Post-Christmas Stilton Cheese, but now I will actually buy Stilton, when I can, or any other good quality blue cheese in order to make this supper dish! The only requirements are: good blue cheese and good "Country" style bread or home-made bread. I have used Walnut bread, Multi-grain Granary bread, French Baguette & Ciabatta bread in the past for this dish. There are numerous options and additions too - tomatoes go well on top as does a finely sliced spring onion. This recipe is great for a light supper dish with a crispy salad on the side & a good glass of Red wine too. I have also used this recipe for pre-dinner nibbles - you need to stamp out small rounds of bread if you wish to serve them that way.

8 ounces Stilton cheese or 8 ounces blue cheese
3 tablespoons cream or 3 tablespoons creme fraiche
1 teaspoon Worcestershire sauce
1/2 teaspoon English mustard or 1/2 teaspoon Dijon mustard
2 ounces walnut pieces
8 slices bread
2 ounces butter
1 teaspoon cayenne pepper
black pepper
salt (optional)

Steps:

  • Pre-heat the grill the the highest setting and line a grill pan with kitchen foil.
  • Put the cheese into a mixing bowl and mash with a fork.
  • Add the cream or creme fraiche, Worcestershire sauce, mustard, black pepper, salt, (optional as the cheese is already quite salty) & the walnut pieces.
  • Mix well & set aside.
  • Place all the slices of bread on to the lined grill pan and toast until just golden brown.
  • Take out and spread the UNTOASTED side with butter.
  • Spread the cheese mixture over the top ensuring it is spread to the edges, otherwise they will burn!
  • Sprinkle with the Cayenne pepper.
  • Place under the grill and grill for about 2-4 minutes until the cheese is melted, bubbling & tinged with brown.
  • Serve 2 slices per person with a crisp seasonal salad and a good glass or two of Red wine!
  • The ultimate supper dish!
  • If you wish to serve these as aperitif nibbles, stamp out rounds from the slices of bread and continue to assemble & grill as above. Serves about 8 people that way.

2 cups shredded CRACKER BARREL Sharp Cheddar Cheese
1/2 cup beer
2 tsp. butter or margarine
1/2 tsp. paprika
1/4 tsp. dry mustard
1 egg
6 slices white bread, toasted, halved diagonally

Steps:

  • Place cheese, beer, butter and seasonings in saucepan; cook on low heat until cheese is completely melted, stirring occasionally.
  • Beat egg lightly with fork in small bowl. Remove small amount of cheese sauce from saucepan. Add to egg; mix until well blended. Add to remaining cheese sauce in saucepan; stir until well blended. Cook until thickened, stirring frequently.
  • Place 2 toast triangles on each serving plate. Top evenly with cheese sauce just before serving.

A classic version of this dish was shared with me years ago. This is is my adaptation to more local ingredients. If you don't like beer, you can replace it with milk and it will still taste great. Serve over toasted bread or English muffins.

¼ cup butter
¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon dry mustard
¼ teaspoon Worcestershire sauce
2 drops hot pepper sauce (such as Tabasco®)
1 cup whole milk
½ cup beer
½ pound Cheddar cheese, shredded

Steps:

  • Melt the butter in a saucepan over low heat; blend in the flour, salt, pepper, mustard, Worcestershire sauce, and hot pepper sauce; continue cooking and stirring until the mixture is smooth and bubbly, about 5 minutes. Remove from heat; gradually stir in the milk; return to heat and stir continually until the mixture comes to a boil. Slowly pour in the beer; cook 1 minute more while still stirring. Melt the Cheddar cheese into the mixture in small portions until completely incorporated. Remove from heat.

A twist on the classic rarebit, this one is made with blue cheese and served with bacon and a nice tangy chutney! Great for a lunchtime snack or as a supper with a green salad.

1/3 cup milk
11 1/2 ounces blue cheese
1/4 cup beer
1 1/4 ounces plain flour
2 egg yolks
1 ounce breadcrumbs
1/2 teaspoon mustard powder (to taste)
1 dash Tabasco sauce
salt and pepper
2 slices white bread, toasted
4 slices smoked bacon, grilled
ready-made chutney

Steps:

  • Warm the milk in a saucepan but do not boil.
  • Crumble the cheese into the milk and stir until it has melted.
  • Add the beer, mustard, Tabasco, flour and the breadcrumbs.
  • Stir until combined, remove from the heat and cool.
  • Add the egg yolks and season with the salt and freshly ground black pepper.
  • Toast the bread on both sides and place into a dish. Top with the grilled bacon followed by the rarebit mixture and place under the broiler to brown for a few minutes.
  • Serve with a spoonful of chutney.
