This super easy Nectarine Galette is the perfect summer dessert. Try it with peaches, apricots, or plums!

160g flour
120g cold cubed butter
~60g ice water
Pinch of salt
5-8 medium nectarines
1 egg
Raw sugar
Optional: Honey or jam to glaze

Steps:

  • In a food processor, mix together flour, salt, and cubed butter until a sandy consistency. Pulse while slowly streaming in ice water. Wrap dough in plastic wrap and refrigerate for at least one hour.
  • Preheat oven to 400F or 200C. On a piece of parchment, roll dough out into 15inch diameter rough circle. Optional: use something round or a bowl to trim the dough into a clean circle.
  • Pit and slice the nectarines. Place sliced fruit onto the dough in a decorative pattern in the centre leaving a ~2inch border. Fold excess dough inwards. Brush the edges with beaten egg and sprinkle with raw sugar.
  • Transfer the galette to a baking sheet by lifting the parchment paper. Bake for 50min or until edges are beautifully golden brown.
  • Allow to cool to room temperature or enjoy warm with a scoop of ice cream. Optional: melt honey or jam and brush over the fruit to add extra sweetness and shine.

GRILLED HONEY-NECTARINE RICOTTA TOAST

This sweet and creamy ricotta toast makes the perfect brunch or mid-day snack. Grilling the fruit adds a lovely caramelized flavor, topped with the sweetness from the honey, crunch from the almonds and brightness from the hint of fresh mint. Use a thick-cut crusty bread like sourdough so it can stand up to the toppings.

1 teaspoon olive oil
1 large nectarine, pitted and cut into 8 wedges
2 thick slices crusty bread
2 tablespoons olive oil
ΒΌ cup whole-milk ricotta cheese
1 tablespoon crushed sliced almonds
2 leaves fresh mint, minced
2 teaspoons honey, or to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil grate.
  • Drizzle 1 teaspoon olive oil onto a small plate. Place nectarine wedges on the plate and cover all sides with oil. Brush both sides of bread with 2 tablespoons olive oil.
  • Place nectarines onto the hot grate and grill 1 to 2 minutes per side; remove to a plate. When nectarine wedges have cooled slightly, cut each wedge in 1/2 lengthwise so you now have 16 pieces.
  • Place bread slices onto the hot grate and cook until grill marks appear and bread is toasted, about 1 minute per side; remove to a plate.
  • Spread ricotta cheese onto each slice of toast. Arrange 8 nectarine slices onto each toast and top with almonds. Sprinkle with mint and drizzle with honey. Cut each toast in half and serve.

Treat this spoonable dessert as a vehicle for piles of your favorite peak-season fruit. Swap out nectarines for plums, peaches, cherries, or blackberries. Using a food processor makes the ricotta ultra smooth and airy.

1 envelope unflavored powdered gelatin (about 2 1/2 tsp.)
Extra-virgin olive oil (for pan and drizzling)
2 cups whole-milk fresh ricotta
1/3 cup powdered sugar
1/2 tsp. vanilla extract
1/2 tsp. kosher salt
1 1/2 cups half-and-half, divided
2 large or 3 medium nectarines, cut into 1/2"-thick wedges
Honey (for drizzling)

Steps:

  • Pour 1/4 cup cold water into a small saucepan and sprinkle gelatin evenly over; let sit 10 minutes to soften.
  • Meanwhile, coat a 9"-diameter pie or cake pan with a thin film of oil; set aside. Combine ricotta, powdered sugar, vanilla, salt, and 1 cup half-and-half in a food processor.
  • When gelatin is softened, add remaining 1/2 cup half-and-half to saucepan and set over low heat. Cook, stirring with a heatproof spatula, until gelatin is completely dissolved (do not let mixture boil). Scrape mixture into food processor and process until completely smooth, about 30 seconds. Pour into prepared pan and chill until set, at least 4 hours (cover loosely with plastic wrap after 1 hour).
  • Run a butter knife or small offset spatula around sides of panna cotta to loosen the edge and break the suction.
  • Fill a baking dish or similar vessel with hot water. Lower bottom of mold into water 5 seconds, then lift it back out.
  • Press a serving plate firmly over top. Quickly invert in one motion; set plate down. Use knife or spatula to gently lift up mold.
  • Top with nectarines; drizzle with honey and oil.
  • Panna cotta (without nectarines, honey, and oil) can be made 2 days ahead. Keep chilled.

NECTARINE-ROSEMARY SODA

3/4 cup raw sugar, such as Sugar in the Raw, or pure cane sugar
3 sprigs rosemary
One 3-inch piece orange zest
1 very ripe nectarine, peeled, pitted and mashed to a puree
Club soda or sparkling water, cold
4 orange slices or half-moons, for garnish

Steps:

  • Combine the sugar and 1 cup water in a saucepan over high heat. Bring to a boil and cook until the sugar dissolves. Remove from the heat and add the rosemary and orange zest; let cool to room temperature. Transfer to a lidded container and refrigerate for at least 2 and up to 24 hours. (The longer it sits, the stronger the flavor.)
  • Remove the rosemary and orange zest from the syrup, and discard. Fill four 8-ounce glasses with ice; add to each 2 tablespoons of the nectarine puree and 2 tablespoons of the rosemary syrup. Fill to the top with club soda or sparkling water and garnish with an orange slice. (Save any remaining syrup for another use.)

1 cup nonhydrogenated vegetable shortening
1/4 cup melted coconut oil
1 cup granulated sugar
1/8 teaspoon salt
1 large egg
1/2 teaspoon vanilla extract
2 1/2 cups all-purpose flour, plus extra bench flour
2 tablespoons plus 1 teaspoon tapioca flour
2 tablespoons granulated sugar
1/2 teaspoon ground cardamom
1/8 teaspoon kosher salt
1 1/2 pounds ripe nectarines, sliced 1/3-inch thick
1 tablespoon fresh lemon juice
1 tablespoon peach brandy
1/2 teaspoon vanilla bean paste
1 egg, lightly beaten
1 tablespoon milk
2 tablespoons turbinado sugar
1 can coconut cream, chilled
1 tablespoon powdered sugar
1/2 teaspoon almond extract
1/4 cup sliced almonds, toasted, for garnish

Steps:

  • For the pastry: In a stand mixer fitted with the paddle attachment, beat together the shortening, coconut oil, sugar and salt on medium speed until fluffy, about 5 minutes. Add the egg and vanilla extract and mix until combined. Add the flour and mix on low until the dough comes together in a ball, about 2 minutes. Divide the dough into two even pieces, form into discs and wrap in plastic. Refrigerate for at least 30 minutes.
  • For the filling: In a large bowl, whisk together the tapioca flour, sugar, cardamom and salt. Add the nectarines, lemon juice, brandy and vanilla paste. Toss gently to combine.
  • To assemble: Position a rack in the center of the oven; preheat the oven to 400 degrees F. Remove one disk of dough from the refrigerator and leave to soften until pliable, 10 to 15 minutes; reserve the other disk for another use.
  • Roll the softened dough between two sheets of lightly floured parchment paper into a 14-inch round. While still between the parchment, transfer the dough to a large, rimmed baking sheet. Gently peel away the top sheet of parchment.
  • Spoon the filling into the center of the pastry and spread it toward the edges, leaving a 2- to 2 1/2-inch margin all the way around. Gently lift the edges of the parchment to help fold the dough up and over the edges of the filling--allow the dough to fold over itself, creating a blanket effect, with crimps and ruffles. Peel away the parchment to leave a border of pastry around the exposed center of the filling.
  • Whisk together the egg and milk, and brush the mixture over the crust. Sprinkle with the turbinado sugar.
  • Bake the galette, rotating the baking sheet halfway through, until the crust is golden brown, 40 to 50 minutes. Let cool.
  • For the coconut whipped cream: Open the can of coconut cream and spoon out the thick, hardened cream into a medium bowl; reserve the watery liquid for another purpose. Add the powdered sugar and almond extract to the coconut cream and beat, using an electric mixer on medium-high speed, until fluffy like whipped cream, 2 to 3 minutes.
  • To serve, spoon a dollop of the whipped cream onto a slice of the galette and garnish with a pinch or two of the toasted sliced almonds.
