1 tablespoon butter, softened, for buttering the dish
4 pounds nectarines, sliced
1 quart blueberries
1/2 cup granulated sugar
2 heaping tablespoons cornstarch
Pinch kosher salt
1 orange, zested and juiced (reserve the zest for the topping)
1 cup all-purpose flour
1 cup oats
1/2 cup granulated sugar
1/2 cup brown sugar
Pinch kosher salt
2 sticks cold salted butter
1/2 cup chopped pecans
1 pint heavy cream
1 tablespoon granulated sugar

Steps:

  • For the filling: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
  • In a large bowl, combine the nectarines and blueberries. Add the granulated sugar, cornstarch, salt and orange juice and mix gently. Pour the fruit mixture into the prepared baking dish.
  • For the topping: In a large bowl, add the flour, oats, granulated sugar, brown sugar and salt and mix to combine. Cut 1 1/2 sticks of the butter into cubes, then cut the butter cubes into the flour mixture using a pastry cutter or 2 knives. Stir in the pecans and the reserved orange zest.
  • Spread the topping over the fruit. Cut the remaining 1/2 stick butter into cubes and dot the top of the crisp with it. Cover with foil and bake for 30 minutes. Uncover and continue cooking until the top is browned and the fruit is bubbling, 25 to 30 minutes. Let cool a bit before serving.
  • For the whipped cream: Mix the cream and granulated sugar in a bowl and whip to the desired consistency.
  • Plate the crisp into individual bowls and top with the whipped cream.

1/2 cup old-fashioned rolled oats
1/2 cup firmly packed light brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt

4 cups nectarines, pitted and cut into 1/2-inch slices (about 3-4 large nectarines)
1/4 cup granulated sugar

  • Place a 2-quart baking dish or six 8-ounce ramekins on a baking sheet to catch any drips. Position rack in center of oven and heat to 375 degrees. In a food processor, pulse flour, oats, brown sugar, cinnamon and salt once or twice to mix. Cut butter into small chunks, add to flour mixture and pulse a few more times, until mixture just comes together into small crumbly clumps. Reserve.
  • In a large bowl, combine nectarines, granulated sugar, cornstarch, and vanilla. Pour nectarines into baking dish or ramekins, scatter blackberries on top and sprinkle with the topping. Bake until the fruit is bubbling and the topping is golden, 45-60 minutes. Serve warm with vanilla ice cream.

2 large ripe nectarines, pitted and cut into thick slices
1/2 Meyer lemon, zested and juiced
2 tablespoons cornstarch
1/4 cup tightly packed brown sugar
2 tablespoons sugar
1/2 teaspoon vanilla extract
Pinch kosher salt
1 1/4 cups all-purpose flour
1/2 cup rolled oats
1/2 cup brown sugar
1/2 cup sugar
1 1/4 stick cold unsalted butter, cut into pea-sized pieces
1/2 cup sliced almonds
Pinch kosher salt
1 to 2 tablespoons cold water
1 cup mascarpone cheese
1 tablespoon sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • For the filling: Toss the blueberries and nectarines in a large bowl with the lemon zest and juice. Add the rest of the ingredients and stir to combine. Divide the filling evenly among 4 (6-ounce) ramekins.
  • For the topping: Combine all of the ingredients in a food processor except the water. Pulse until combined, this will take about 30 seconds. Add the water, 1 tablespoon at a time, until the mixture is clumpy but crumbly.
  • Top each ramekin with the topping. Be sure to loosely sprinkle the topping and not pack it down. The idea is to look very crumbly and craggy.
  • Place the ramekins on a sheet tray and bake in the oven until the filling is hot and bubbly and the topping is brown and crispy, 20 to 25 minutes.
  • Sweeten the mascarpone with the sugar. Onto a small sheet pan or plate, neatly spoon 4 small portions of sweetened mascarpone and chill until ready to serve.

1 cup light brown sugar
2 tablespoons cornstarch
3 pounds ripe nectarines, pitted and cut in eighths

  • Preheat oven to 350 degrees. Grease a shallow five- to six-cup baking dish with a little butter.
  • Lightly mix half a teaspoon of the cinnamon, half a cup of the brown sugar and the cornstarch together. Toss the nectarines with the lemon juice, fold in the sugar mixture and spread in the baking dish.
  • With a fork or a pastry blender, or by pulsing in a food processor, combine the flour, remaining sugar and cinnamon with the remaining butter until crumbly. Spread over the nectarines.

1 1/2 pounds nectarines (about 5), cut into 1/2-inch wedges
6 ounces raspberries (1 1/3 cups)
2/3 cup granulated sugar
1 tablespoon cornstarch
1/4 teaspoon coarse salt
1 stick unsalted butter, room temperature
1/2 cup packed light-brown sugar
3/4 cup all-purpose flour
1/2 cup fine yellow cornmeal
1/2 teaspoon coarse salt

Steps:

  • Filling: Preheat oven to 375 degrees. Combine fruit, granulated sugar, cornstarch, and salt. Transfer to a 9-inch square or other 1 1/2-quart baking dish.
  • Topping: In a large bowl, beat butter with brown sugar on medium speed until light and fluffy. Work flour, cornmeal, and salt in with your hands until large clumps form. Scatter over filling.
  • Bake until center is bubbling, 40 to 50 minutes. Let crisp cool slightly before serving.

LOWER CARB RHUBARB-PEACH OR NECTARINE CRISP

This feeds a crowd. Adjust as necessary. We like a lot of tart/sweet fruit and a little bit of crisp. I use CarbQuik low carb mix and oats to keep the carb count down in the crust, and sweeten the fruit with Splenda. I get the CarbQuik online through netrition.com. The carb count on the mix isn't figured into this recipe, but an average biscuit nets about 2 carbs and there's less than the equivalent of one biscuit's worth of mix in each serving. Most of your carbs are from the nectarines or peaches and the oats.

7 stalks rhubarb
7 nectarines or 7 peaches
3 tablespoons dry tapioca
1 cup Splenda granular, sugar substitute
1 lemon, juice of
1/2 teaspoon salt
1/2 cup butter or 1/2 cup margarine
2 tablespoons canola oil
1 cup oats
1 cup Carbquik baking mix or 1 cup low-carbohydrate baking mix, of choice
1 cup Splenda granular, sugar substitute
1/2 teaspoon salt

Steps:

  • Cut the rhubarb into one inch pieces.
  • Roughly chop the fruit; peel the peaches, if you use those instead of nectarines.
  • Mix the rhubarb and stone fruit with the Splenda, tapioca, lemon juice and salt, and let stand for one - three hours at room temperature.
  • Mix the margarine, oats, CarbQuik or other mix of choice, salt and splenda.
  • Turn the fruit into a greased 9x13x2 inch pan and crumble the topping over it.
  • Bake 375 degrees for about 70 minutes until fruit bubbles in the center and top nicely browned.
  • Top with sugar-free ice cream or whipped cream.
  • Note: this just fits in my baking pan; stick some foil under the pan if it looks like this will bubble over.

3/4 cup all-purpose flour
3/4 cup quick-cooking oats
1/4 cup sugar
1/4 cup packed dark brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground cardamom
6 tablespoons unsalted butter, melted and cooled slightly
5 cups nectarines, pitted and cut into 3/4 inch thick slices
1 cup fresh raspberry
1/4 cup sugar
2 tablespoons cornstarch
vanilla ice cream

Steps:

  • Mix flour, oats, sugar, brown sugar, cinnamon, salt and cardamom in medium bowl. Add melted butter and rub in with fingertips until mixture comes together in small clumps. This topping can be made 1 day ahead--just cover and refrigerate.
  • Position rack in center of oven and preheat to 375 degrees. Butter a 11x7x2 inch glass baking dish. Combine nectarines, raspberries, 1/4 cup sugar and cornstarch in large bowl; toss to blend. Transfer mixture to baking pan. Sprinkle topping evenly over fruit. Bake until fruit mixture is bubbling thickly and topping is golden brown, about 50 minutes. Cool 20 minutes. Serve warm with vanilla ice cream.
