Scrumptious- perfect on a chilly fall evening! I found this on a South Beach Diet Message Board, and I wish I knew who to credit for it- this is a favorite dish of my husband's.

Number Of Ingredients 8

2 (16 ounce) cans of large butter beans (or lima beans)
1 (8 ounce) can tomato sauce
4 carrots, peeled & shredded
0.5 (12 ounce) bag frozen spinach
1 small onion, peeled and diced
1/2 cup chopped fresh thyme (or dried equivalent)
1 tablespoon crushed garlic
9 ounces andouille sausages, sliced on an angle (I substitute turkey sausage to bring the fat down)

Steps:

  • In a med. stock pot, bring all ingredients to a boil. Season with salt & pepper to taste.
  • Reduce heat and simmer for 30 minute or until beans are tender and sausage has shrunk to small disks. Serve hot.

2 slices bacon
1 (15 ounce) can butter beans, rinsed and drained
1 tablespoon butter
1 tablespoon brown sugar
salt and ground black pepper to taste

Steps:

  • Arrange bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels and crumble.
  • Heat butter beans, bacon, butter, and brown sugar in a saucepan over medium heat until bubbling, about 5 minutes. Season with salt and pepper.

2 tablespoons extra-virgin olive oil
2 leeks, white and pale-green parts only, halved lengthwise, thinly sliced, and washed well (about 4 1/2 cups)
Pinch of red-pepper flakes
Coarse salt and freshly ground pepper
12 ounces andouille or other smoked sausage, cut on the bias into 1/4-inch-thick slices
3 sprigs thyme
5 cups chicken broth
3 cans (about 15 ounces each) beans, such as cannellini, roman, and black-eyed peas, drained and rinsed
2 stalks celery, thinly sliced (about 1 cup), plus celery leaves, for garnish

Steps:

  • Heat oil in a large pot over medium-high heat. Add leeks and red-pepper flakes; season with salt and pepper. Cook until leeks are softened, about 6 minutes. Add sausage and thyme; cook until sausage is golden brown in places, about 5 minutes more.
  • Add broth and beans; bring to a boil. Reduce heat and simmer, stirring occasionally, until beans are heated through and creamy, about 10 minutes. Add celery and cook until crisp-tender, about 2 minutes. Remove thyme; season with salt and pepper. Divide soup among 4 bowls and garnish with celery leaves.
