This cobbler took Chef Vivian Howard years to perfect-but it was time well spent. Ripe, macerated strawberries are topped with a sugar cookie crust that's enriched with cornmeal for extra crunch. (The strawberries can be easily swapped for peaches, blueberries, or apples!)

2 pounds strawberries, stems removed, may substitute blueberries, peaches, apples, or cranberries
1 pinch kosher salt
3/4 cup granulated sugar
2 lemons
1 cup all-purpose flour
1 cup cornmeal
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
1 cup unsalted butter (2 sticks), cubed, plus more to butter the baking dish
1 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
Vanilla ice cream (optional)

Steps:

  • Strawberry Filling: To macerate the strawberries (a technique to release a fruit's juices by mixing with sugar and resting), take half the strawberries and roughly slice them. Combine with remaining whole strawberries in a large mixing bowl. Add salt, sugar, and the zest and juice of two lemons. Stir to combine and set aside, at least 2 hours and up to overnight.
  • Fit a strainer over a saucepan. Pour the strawberry liquid through the strainer and into the saucepan, reserving the strawberries. Over medium heat, bring liquid to a simmer. Continue simmering, stirring often, until liquid is reduced to a thin syrup that coats the back of a spoon, 5-10 minutes. Let rest while making crust. (Note: Syrup will continue to thicken as it cools.)
  • Sugar-Cookie Crust: In a mixing bowl, stir together flour, cornmeal, salt, and baking powder. Set aside. In the bowl of a stand mixer, cream the butter and sugar on medium speed, 30 seconds. Turn off mixer, lift paddle, and scrape down the sides of the bowl. Increase speed to high and continue creaming the butter-sugar mixture until it's pale and fluffy, 2 more minutes. Turn mixer to low and slowly add dry ingredients, turning the mixer off to scrape the sides of the bowl halfway through. Crack the egg into a small bowl, to make sure no shell gets into the mixture; then add vanilla and egg to the mixer. Mix on medium speed until just combined. Chill 30 minutes. (Note: Crust can be made several days in advance, wrapped in plastic and chilled; bring to room temperature before using.)
  • Preheat oven to 350 degrees F. Butter a baking dish. Spread strawberries in the dish in an even layer, then pour in syrup. Spread the crust over the strawberries in an even layer. Bake for 1 hour, or until crust is golden and fruit is bubbling. (Note: Depending on the size and shape of the baking dish, there might be leftover dough. For every 1½ inch of filling, there should be a ½-inch of topping. Use extra dough for a mini-cobbler or bake into sugar cookies.)
  • Remove cobbler from oven. The crust will look like a cookie, with the filling bubbling up through the craggy cracks. Serve warm with a scoop of vanilla ice cream, if desired.

1 1/2 cups graham cracker crumbs
6 tablespoons melted butter
3 -4 cups sliced strawberries (depending on taste)
3 cups whole milk
3/4 cup white sugar
1/3 cup flour
1/4 teaspoon salt
3 egg yolks, slightly beaten
2 tablespoons melted butter
1 teaspoon vanilla
1 pint whipping cream
1/3 cup confectioners' sugar
1 -2 teaspoon vanilla (I like a lot)
1/2-1 cup crushed strawberry (again, depending on taste)
sliced strawberry (to garnish)

Steps:

  • FOR CRUST: mix crumbs and butter till evenly coated.
  • press into 9" pie plate and bake at 350 degrees about 7 minutes or until just brown.
  • set aside to cool.
  • FOR FILLING: scald milk over medium-low heat in saucepan.
  • (till bubbles start forming around the edges) BE CAREFUL NOT TO OVERCOOK!
  • this will lead to a burnt aftertaste.
  • In another saucepan, combine the sugar, flour, and salt.
  • slowly pour in and mix the scalded milk.
  • cook over medium heat stirring constantly until the custard thickens.
  • when it thickens up a bit, cover and cook for two minutes longer stirring occasionally.
  • take custard and pour small amount into yolks mixing thoroughly, then slowly mix in the rest of the custard.
  • stir in the butter and vanilla and return to the saucepan on medium for a minute or two longer stirring constantly.
  • take off heat and let cool to room temperature.
  • When all is cool, take sliced strawberries and scatter into crust as thickly as looks delicious to you.
  • pour the custard over the berries and refrigerate covered at least several hours till set.
  • FOR TOPPING: combine cream, sugar and vanilla in bowl, beat till slightly stiff.
  • stir in crushed berries and beat until stiff.
  • spread evenly over top of the the pie and place back in the refrigerator covered for another hour optimally.
  • Remove from fridge and arrange sliced strawberries in a circular pattern on top and serve.

The best strawberries have a heady scent - they should smell like candy - and likely won't need sweetening. But strawberry sweetness varies greatly, so taste one and toss them all with a little sugar as needed.

6 ounces/170 grams chocolate wafer cookies (about 35 cookies)
1 tablespoon granulated sugar
1/4 teaspoon kosher salt (Diamond Crystal)
6 tablespoons/85 grams unsalted butter, melted and cooled
1 1/2 teaspoons unflavored powdered gelatin (from 1 packet)
1 3/4 cups/420 milliliters sour cream
1 teaspoon vanilla bean paste or pure vanilla extract
1/2 cup/120 milliliters heavy cream
1/4 cup/50 grams granulated sugar, plus more if needed
1/4 teaspoon kosher salt (Diamond Crystal)
1 pound/454 grams strawberries, halved, quartered if large

Steps:

  • Make the crust: Heat oven to 350 degrees with a rack in the middle position. Place cookies, sugar and salt in a food processor and process until finely ground. (You should have about 1 1/2 cups). Add butter and pulse until the mixture looks like wet sand.
  • Transfer mixture to a standard 9-inch pie plate. Using the bottom of a flat-bottomed measuring cup, press the mixture up the sides and into the bottom of the pie plate. Bake on the middle rack until dry and set, 20 to 25 minutes. (If the crust slumps or puffs while it bakes, gently press it back into place while still warm with the measuring cup and proceed.) Let cool completely.
  • Make the filling: Place 3 tablespoons cold water in a small bowl. Sprinkle gelatin over top and let stand until softened, about 5 minutes. In a large bowl, whisk together sour cream and vanilla until smooth. Combine cream, sugar and 1/4 teaspoon salt in a small pot and bring to a simmer over medium heat. Whisk in gelatin mixture until completely dissolved, then whisk cream mixture into sour cream. Pour filling into cooled crust and refrigerate until set, at least 2 hours and up to 2 days. (If making ahead, wrap tightly once set).
  • Toss strawberries with sugar, if needed, and let sit for 10 minutes. Pile strawberries and any accumulated juices on top of pie just before serving.
