2 cups celery, chopped
1 cup onion, chopped
1/2 cup butter
1 pound ground beef
2 pound pork breakfast sausage
5 quarts hamburger buns, broken into pieces (1bun=approx 1 cup)
2 teaspoons poultry seasoning
1 tsp salt
1/4 teaspoon pepper
3 eggs, beaten
2 cups chicken broth, plus extra

Steps:

  • Sauté celery and onion in butter until soft, set aside. Brown meat and drain. (you can do these two steps the day before and refrigerate) Mix all ingredients together in a large bowl. Add more broth as needed if the mixture appears too dry; it should be moist. Place in buttered casserole dish and bake at 350°F for about 30-45 minutes. If it has been refrigerated bring out of frig a half hour before putting in the oven.

This is my aunt's recipe for my grandmother's fabulous dressing. It has a spicy Louisiana kick.

2 teaspoons salt
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon ground dried thyme
1 teaspoon ground white pepper
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
½ teaspoon onion powder
1 pound ground pork
½ cup extra-virgin olive oil
¾ cup finely chopped onion
¾ cup finely chopped green bell pepper
½ cup finely chopped celery
1 tablespoon minced garlic
1 cup reduced sodium chicken broth
2 large bay leaves
5 cups crumbled cornbread
1 tablespoon chopped fresh thyme, or more to taste
1 tablespoon chopped fresh oregano, or more to taste

Steps:

  • Stir together salt, dried basil, oregano, thyme, white pepper, black pepper, cayenne pepper, and onion powder in a small bowl for seasoning mix.
  • Cook pork in a 5- to 6-quart pot over medium-high heat, stirring to break up meat, until browned, 8 to 10 minutes. Transfer to paper towels; discard grease.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
  • Add oil to the same pot and heat over medium-high heat. Add onion, bell pepper, celery, and garlic. Cook, stirring, until softened, about 5 minutes. Stir in seasoning mix. Add cooked pork, broth, and bay leaves; bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Remove and discard bay leaves. Mix in cornbread.
  • Transfer dressing mixture to the prepared baking dish. Cover with foil.
  • Bake in the preheated oven for 25 minutes. Uncover; bake until lightly browned, about 10 minutes more. Garnish with fresh thyme and oregano.

The question has dogged Thanksgiving cooks practically since Norman Rockwell painted "Freedom From Want" in 1942 and transformed the harvest feast into an American ideal: Is it stuffing or dressing? Grandmother knows: it is stuffing only if it is cooked inside the bird. Otherwise it is dressing. This classic version, made with bread, celery, onions, apples, chestnuts, thyme and sage, is relatively simple to execute. It would do well at almost any time of the year as an accompaniment to roast chicken or pork. Crucial is the copious use of turkey broth, or a good chicken broth, to help meld the flavors together. Also necessary is an understanding that the cooking should last long enough to crisp the exterior without burning it, while not going on so long as to dry out the dish. When in doubt, add a splash more broth.

5 tablespoons unsalted butter
1 large Spanish onion, peeled and diced
2 ribs celery, cleaned and diced
2 apples, preferably tart, like Granny Smith or Cortland, peeled, cored and diced
1 cup peeled chestnuts, roughly chopped
Kosher salt and black pepper to taste
3 sprigs fresh thyme, stems removed and leaves chopped
1 dozen fresh sage leaves, stems removed and leaves chopped
2 teaspoons Worcestershire sauce
1 dash hot-pepper sauce, or to taste
1 loaf decent-quality bread, a day or two old, torn into small pieces
2 eggs, beaten
1/2 cup chopped parsley
1 to 2 cups turkey or chicken stock (see recipe); if using store-bought broth, use low-sodium variety

Steps:

  • Heat oven to 375 degrees. Melt 4 tablespoons of butter in a large skillet over medium heat. Add onions, celery, apples, chestnuts, salt, pepper, thyme, sage, Worcestershire and hot-pepper sauce. Cook, stirring, until vegetables have softened and herbs wilted, approximately 5 minutes.
  • Transfer mixture to a large bowl. Add the bread, beaten eggs, parsley and enough broth so the dressing is well moistened. Blend well and check for seasoning.
  • Grease a baking dish with the remaining 1 tablespoon butter and put dressing in it. Bake, uncovered, for 30 minutes or until the top is beginning to brown. Check to make sure interior is moist. If not, add some more broth and return to oven for 5 to 10 minutes longer.

This is my great grandma's dressing that she's made for years. Her seeing isn't what it used to be, so I got the recipe and get to make this every year for thanksgiving. It's so good, wouldn't be thanksgiving at our house without it.

1 recipe cornbread (recipe follows)
2/3 loaf sandwich bread, cubed
salt and pepper
1 tablespoon poultry seasoning
1 tablespoon rubbed sage (More to taste)
3 eggs, beaten
1 cup finely chopped onion
1 cup celery (4-5 sticks)
1 tablespoon margarine, melted
2 (15 ounce) cans chicken broth
1 cup cornmeal
1 cup flour
1/4 cup sugar
1/2 teaspoon salt
4 teaspoons baking powder
1 egg
1 cup milk
1/4 cup oil

Steps:

  • Mix dry ingredients for cornbread then add the wet ingredients and mix well. bake in an 8 inch greased pan at 425 degrees for 20-25 minutes.
  • For dressing:In bowl add corn bread, sandwich bread, salt and pepper, seasonings. Mix. Pour the eggs over mixture and add onion and celery. Mix. Add butter and enough broth until mixture is thick like gravy. Add more seasoning, if needed. Pour into casserole dish and cover with foil and partially with lid. Cook for one hour, remove foil, cook for one more hour. 350 degrees.
